THE BEST TURKEY MEATBALLS
These juicy meatballs with a tender, light texture are packed with flavorful herbs. The meat mixture is softer than you might expect, thanks to the addition of ricotta, but sacrificing a perfectly round shape is worth it. You'll make these turkey meatballs so often you just might forget about your beef meatball recipe.

Steps:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and drizzle the olive oil and canola oil in an even layer over the paper.
- Pour the breadcrumbs into a large mixing bowl, pour the milk over top and stir to fully moisten the breadcrumbs. Add the remaining ingredients to the mixing bowl and mix with your hands just until combined.
- Scoop 1/4-cupfuls of meatball mixture and place them evenly spaced on the prepared baking sheet; you should have 12 meatballs. Gently roll them into balls. Bake until bottoms are golden brown, about 15 minutes. Reduce the oven temperature to 325 degrees F and continue to bake for 15 to 20 minutes more until the meatballs are cooked through.
TURKEY MEATBALLS AND RICOTTA BAKE WITH PENNE
This is like a mini meatball lasagna, I use my recipe#136292 for this but you can use your own favorite tomato sauce, you will need about 7-8 cups of sauce for this recipe but you can use more sauce then stated when layering if desired, this is a great way to use up any leftover sauce that you have --- I have also made this recipe using my recipe#69173 this recipe can be doubled and baked in a larger baking dish to feed a crowd, prep time includes preparing meatballs and cooking the pasta :)

Steps:
- For the meatballs, mix all meatball ingredients together adding in enough bread crumbs to bind the mixture together.
- Form into about 1-inch size balls.
- In a large skillet heat oil and cook the meatballs, shaking the skillet until browned and cooked through (about 6-7 minutes) transfer the meatballs to paper towels to drain.
- Cook the penne in a large pot of boiling salted water until JUST firm-tender; drain.
- Set oven to 375 degrees.
- Grease a 4-quart baking dish.
- In a small bowl mix together shredded mozzarella and Parmesan cheese.
- Spoon about 1-1/2 cups sauce in the bottom of the baking dish, then spread half of the meatballs on top of sauce.
- Then spoon HALF of the pasta on top.
- Spread HALF of the remaining sauce and HALF of the cheese mixture over pasta.
- Top with remaining meatballs and then drop dollups of ricotta cheese over meatballs.
- Spread remaining pasta over the ricotta.
- Top with remaining sauce, and then sprinkle with remaining mozza/Parmesan mixture.
- Bake for about 35-40 minutes or until golden.
- Let stand for 15 minutes before serving.
PENNE WITH TURKEY MEATBALLS

- In a large bowl, add bread crumbs, eggs, milk, 1/2 cup Romano, parsley, salt and pepper and mix well. Add turkey and gently combine, being careful not to overwork the meat. Shape into golf-size balls.
- In a large skillet heat the oil over medium high heat. When almost smoking, add meatballs and without moving or turning the meat, allow it to brown for about 3 minutes. Turn meatballs and brown other side. Continue to cook until all sides are golden brown, about 8 minutes total. Add tomato sauce and bring to a boil. Lower heat and allow meatballs to simmer for 5 minutes. Turn off heat and keep warm on stove. Be careful not to over handle the meatballs since they are soft and fragile.
- In a large pot, bring to a boil 6 quarts of salted water. Add pasta and cook until al dente, about 8 minutes. Drain pasta in a colander. Do not rinse pasta with water since you want to retain the pasta's natural starches so that the sauce will cling to the penne.
- Remove meatballs from sauce and place in serving bowl. Pour some tomato sauce over meatballs, but leave about 2/3 cup of sauce in skillet. Place the cooked penne into the skillet with the remaining sauce and toss well. Pour sauced pasta in a large serving bowl. Serve alongside the meatballs. Sprinkle remaining Romano on top.

- Add the onion, garlic, egg, bread crumbs, ketchup, parsley, Parmesan, Pecorino, salt and pepper to a large bowl and blend. Mix in the turkey. Shape the turkey mixture into 1 1/4-inch-diameter meatballs. Place on a large plate or baking sheet.
- Heat the oil in a heavy large frying pan over medium-high heat. Add the meatballs and saute until browned on all sides, about 5 minutes. Turn off heat.
- Transfer the meatballs to a plate. Pour off any excess oil. Add the marinara sauce, about 3 cups. Return all the meatballs to the pan. TURKEY MEATBALL PASTA BAKE
From one of my many cooking magazines. The sauce can be made ahead and reheated before serving and can be frozen up to a month. The pasta dish can be made a day ahead of baking. It can also be made and frozen for up to a month. Thaw in the refrigerator. To cut time use pasta sauce from a jar and add fresh/dried herbs for more flavor. You can also use premade turkey meatballs. Baking time includes time to bake meatballs and also the completed dish.

- In a large suacepan, heat oil over medium heat. Add onion and garlic; cook for 5-6 minutes or until onion is tender. Stir in crushed tomatoes, tomato sauce, tomato paste, parsley, Italian seasoning, sugar and salt. Bring to a boil; reduce heat and simmer for 15 minutes. Remove from heat. Set aside.
- Preheat oven to 350. Line a rimmed baking sheet with aluminim foil. Place a cooling rack over pan. Spray rack with nonstick cooking spray.

Spon half of Zesty Tomato Sauce over meatballs. Sprinkled evenly with mozarella cheese. Repeat procedure with remaining noodles, meatballs and sauce. Sprinkly evenly with Parmesan cheese. Bake for 35-40 minutes or until hot and bubbly. Garnish with fresh parsley if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Coat a baking sheet and a 1-quart baking dish with cooking spray.
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
- Meanwhile, combine bread crumbs, 2 tablespoons Parmesan cheese, egg substitute, Italian seasoning, onion powder, salt, and garlic powder in a bowl. Crumble turkey on top and mix well. Shape mixture into 1/2-inch balls and place on the prepared baking sheet.
