Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Process red onion in a food processor until finely minced. Scoop onion into a piece of cheesecloth and squeeze as much moisture from the onion as possible. Return onion to food processor; add garlic and process until the garlic is well integrated. Blend marjoram, rosemary, kosher salt, and black pepper into the onion mixture.
- Gradually blend ground beef and ground lamb with the onion and seasoning mixture by alternately adding small amounts of each meat to the mixture and processing until well incorporated before adding the next batch.
- Firmly pack the meat mixture into a loaf pan, assuring no air pockets are trapped in the meat.
- Bake in the preheated oven until no longer pink in the center, about 75 minutes. An instant-read thermometer inserted into the center should read at least 175 degrees F (80 degrees C). Drain grease and slice thinly to serve.

Steps:
- To a large bowl add, ground turkey, diced red onion, minced garlic, oregano, fresh spinach, salt, and pepper. Using your hands mix all the ingredients together until meat forms a ball and sticks together.
- Then using your hands, form the meat mixture into 1″ balls. (about 12 meatballs).
- Heat a large skillet to medium-high heat. Add avocado oil to the pan, and then add the meatballs. Cook each side for 3-4 minutes until they are browned on all sides and the internal temperature has reached 165°F. Remove from the pan and let rest.
- To a small bowl add greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to taste. Mix together until everything is combined.
- To a flatbread (I like to warm mine up so they are more pliable) add 3 meatballs, sliced red onion, tomato, and cucumber. Then top with Tzatziki sauce.

- Add the grated cucumber to a dishtowel, wrap the towel around the cucumber, and squeeze as hard as you can a few times to get all the moisture you can from the cucumber.
- Add the cucumber to a bowl with the rest of your tzatziki ingredients, season to taste, and stir to combine
- Wrap your pita bread in wet paper towels and microwave until the pita is very soft and very pliable. To assemble, add veggies, 3-4 meatballs (I find it easier to slice the meatballs in half and then add them), and lots of tzatziki!

GUILT-FREE GROUND TURKEY GYROS
I love Greek gyros sandwiches, but I don't like to eat lamb and it's not the healthiest food in the world. This recipe satisfies my craving. You can eat these on pita bread, but it's just as good on any other bread in place of deli meat. Serve it with tzatziki sauce, Greek yogurt, or sour cream.

Steps:
- Preheat the oven to 350°F.
- Put all of the ingredients in a bowl, and spend a few minutes kneading the resulting mixture with your hands so everything is combined well.
- Pour the mixture onto a lightly oiled 9x13 pan. Smash it down with your hands a bit until it looks like a very large hamburger patty.
- Bake it for 35 minutes.
- Remove, then cut the meat into thin slices and serve. If you want a crispier, more authentic gyros texture, lay the sliced meat down on the pan and place in the broiler for 5 more minutes.
TURKEY GYROS
Greek seasoning, feta cheese and dill-cucumber sauce give this gyro an authentic taste. It was my family's introduction to how really good pita bread can be. Instead of feta cheese, we'll sprinkle on cheddar or Monterey Jack if we have it. -Donna Garvin, Glens Falls, New York

- For patties, in a large bowl combine egg, turkey, onion, bread crumbs, garlic, coriander, cumin, salt, and pepper. Shape mixture into 12 patties, flattening each to about 1/2-inch thickness. Brush all sides of the patties with olive oil. Wrap pita bread rounds in foil.
- For a charcoal or gas grill, grill patties and foil-wrapped pita bread on the greased rack of a covered grill directly over medium heat about 6 minutes or until an instant-read thermometer inserted into each patty registers 165°F* and pitas are heated through, turning once halfway through grilling.
- Place three patties on each pita bread round. Top with cucumber slices, tomato, and parsley. Drizzle with Cucumber-Yogurt Sauce. Fold pitas around fillings; secure with toothpicks.

- Put the onions and garlic in the bowl of your food processor (see notes if you don't have a food processor for alternate directions). Pulse until finely chopped. Add the ground turkey, marjoram, rosemary, thyme, salt, and pepper to the bowl of the food processor. Process until completely combined and it forms a paste. You may have to scrape the bowl down a few times with a spatula so it's all evenly incorporated.
- Lay out a long piece of plastic wrap, and shape the turkey mixture into a log about 15 inches long on top of it. Roll the plastic wrap up around it and twist the ends. Roll it up again in a second layer of plastic wrap. Take both ends of the plastic, and flip the turkey log between your hands like a skipping rope. This tightens the ends, in turn tightening up the meat to make it firmer. Place it in the fridge over night. If you're really tight on time, you can place it in the freezer for 15 minutes, but the flavour will not be as good.
- When you're ready to cook, preheat your BBQ on high for 10 minutes. Remove the turkey meat from the plastic wrap, and place it onto your rotisserie spit (if you do no have a rotisserie see the notes section for alternate cooking instructions). I also use the rotisserie prongs to help hold the meat in place, and stop it from slipping.
- Put the meat onto your BBQ rotisserie, with a small foil tray underneath to catch the drippings. Put all of the burners, including the rotisserie burner, on high. Close the lid and leave for 15 minutes.
