Make your own gyros meat to serve on pita bread or over basmati rice with lettuce, onions, tomatoes, tzatziki sauce, and feta.

¼ cup chopped red onion
1 tablespoon minced garlic
1 tablespoon dried marjoram
1 tablespoon ground dried rosemary
2 teaspoons kosher salt
½ teaspoon freshly ground black pepper
1 pound 93%-lean ground beef
1 pound ground lamb

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Process red onion in a food processor until finely minced. Scoop onion into a piece of cheesecloth and squeeze as much moisture from the onion as possible. Return onion to food processor; add garlic and process until the garlic is well integrated. Blend marjoram, rosemary, kosher salt, and black pepper into the onion mixture.
  • Gradually blend ground beef and ground lamb with the onion and seasoning mixture by alternately adding small amounts of each meat to the mixture and processing until well incorporated before adding the next batch.
  • Firmly pack the meat mixture into a loaf pan, assuring no air pockets are trapped in the meat.
  • Bake in the preheated oven until no longer pink in the center, about 75 minutes. An instant-read thermometer inserted into the center should read at least 175 degrees F (80 degrees C). Drain grease and slice thinly to serve.

1 lb. ground turkey
1/4 cup finely diced red onion
2 garlic cloves, minced
1 teaspoon oregano
1/3 cup chopped fresh spinach
salt & pepper to season
2 tablespoons avocado oil
5 oz. plain greek yogurt
1/4 cup grated cucumber (squeeze some of the moisture out)
2 tablespoons lemon juice
1/2 teaspoon dry dill
1/2 teaspoon garlic powder
salt to taste
1/2 cup thinly sliced red onion
1 cup diced tomato
1 cup diced cucumber
4 whole wheat flatbreads or pita

Steps:

  • To a large bowl add, ground turkey, diced red onion, minced garlic, oregano, fresh spinach, salt, and pepper. Using your hands mix all the ingredients together until meat forms a ball and sticks together.
  • Then using your hands, form the meat mixture into 1″ balls. (about 12 meatballs).
  • Heat a large skillet to medium-high heat. Add avocado oil to the pan, and then add the meatballs. Cook each side for 3-4 minutes until they are browned on all sides and the internal temperature has reached 165°F. Remove from the pan and let rest.
  • To a small bowl add greek yogurt, grated cucumber, lemon juice, dill, garlic powder, and salt to taste. Mix together until everything is combined.
  • To a flatbread (I like to warm mine up so they are more pliable) add 3 meatballs, sliced red onion, tomato, and cucumber. Then top with Tzatziki sauce.

1 egg
1 teaspoon oregano
1 teaspoon dried minced onion
1/4 teaspoon garlic powder
1/4 teaspoon dried dill
1/2 teaspoon red wine vinegar

2 cups non fat Greek yogurt
1 tablespoon lemon juice
1 hot house cucumber, peeled, halved, seeds scooped out, and grated with a cheese grater
1/2 teaspoon dried dill
2 cloves garlic, minced
6 pita rounds
cucumber, sliced
red onion, sliced
tomato, diced

Steps:

  • Preheat oven to 350 degrees
  • Combine all meatball ingredients together in a large bowl. Form meatballs with one heaping tablespoon of meat for each ball.
  • Place meatballs on a parchment paper lined baking sheet and bake for 10 minutes. Remove from the oven, flip, and bake for another 5 minutes
  • Add the grated cucumber to a dishtowel, wrap the towel around the cucumber, and squeeze as hard as you can a few times to get all the moisture you can from the cucumber.
  • Add the cucumber to a bowl with the rest of your tzatziki ingredients, season to taste, and stir to combine
  • Wrap your pita bread in wet paper towels and microwave until the pita is very soft and very pliable. To assemble, add veggies, 3-4 meatballs (I find it easier to slice the meatballs in half and then add them), and lots of tzatziki!

1/2 cup oatmeal
1 egg
1/2 teaspoon paprika

Steps:

  • Preheat the oven to 350°F.
  • Put all of the ingredients in a bowl, and spend a few minutes kneading the resulting mixture with your hands so everything is combined well.
  • Pour the mixture onto a lightly oiled 9x13 pan. Smash it down with your hands a bit until it looks like a very large hamburger patty.
  • Bake it for 35 minutes.
  • Remove, then cut the meat into thin slices and serve. If you want a crispier, more authentic gyros texture, lay the sliced meat down on the pan and place in the broiler for 5 more minutes.

1 tbsp olive oil
½ cup red onion (diced)
4 cloves garlic (minced)
1 lb ground turkey
1 tbsp fresh oregano (or 1 tsp dried oregano)
1 tsp black pepper
½ tsp kosher salt
½ cup sun dried tomatoes
6 pita breads
½ cup feta cheese crumbles
1 tbsp fresh mint (chopped)
1 lemon (sliced into 6 wedges)
½ cup tzatziki sauce
1 cup cherry tomatoes (quartered)
½ cup red onion (diced)
1 cup cucumber (diced)
1 tbsp olive oil
1 tbsp lemon juice
2 tbsp red wine vinegar
1 tsp fresh oregano (or ½ tsp dried oregano)
½ tsp black pepper
½ tsp kosher salt

Steps:

  • In a large bowl, combine the cherry tomatoes, red onion and cucumber.
  • In a small bowl whisk the olive oil, red wine vinegar, lemon juice, oregano, black pepper and kosher salt together.
  • Pour this mixture over the tomato cucumber salsa and toss to combine. Set aside.
  • Add the olive oil to a large skillet over medium-high heat.
  • Add the onions, saute for 4-5 minutes, add the garlic, saute 1 minute, then add the ground turkey.
  • Cook the turkey through, drain any grease, then add the oregano, black pepper, kosher salt and the sun dried tomatoes.
  • Simmer on low for 5 minutes.
  • Warm the pita bread in a dry skillet over medium heat for 30-60 seconds on each side.
  • Add the cooked ground turkey to the pita bread, top with the cucumber tomato salsa, feta cheese, fresh mint and tzatziki sauce.
  • Serve with lemon wedges on the side for squeezing over the tacos.

  • Lay out a long piece of plastic wrap, and shape the turkey mixture into a log about 15 inches long on top of it. Roll the plastic wrap up around it and twist the ends. Roll it up again in a second layer of plastic wrap. Take both ends of the plastic, and flip the turkey log between your hands like a skipping rope. This tightens the ends, in turn tightening up the meat to make it firmer. Place it in the fridge over night. If you're really tight on time, you can place it in the freezer for 15 minutes, but the flavour will not be as good.
  • When you're ready to cook, preheat your BBQ on high for 10 minutes. Remove the turkey meat from the plastic wrap, and place it onto your rotisserie spit (if you do no have a rotisserie see the notes section for alternate cooking instructions). I also use the rotisserie prongs to help hold the meat in place, and stop it from slipping.
  • Put the meat onto your BBQ rotisserie, with a small foil tray underneath to catch the drippings. Put all of the burners, including the rotisserie burner, on high. Close the lid and leave for 15 minutes.
