MEDITERRANEAN TURKEY BURGERS



Mediterranean Turkey Burgers image

Flavorful turkey burgers made with Mediterranean spices - tender and juicy, the opposite of bland. Kosher, Meat.

1 lbs ground turkey ((you may substitute ground chicken if you prefer - dark meat is best))
1/4 cup finely minced fresh basil ((you may substitute fresh cilantro or parsley))
2 tbsp very finely minced onion
1 egg
3/4 tsp smoked paprika
1/4 tsp cumin
1/4 tsp garlic powder ((or 1/4 tsp fresh garlic, very finely minced))
1/2 tsp salt ((more or less to taste))
1/4 tsp black pepper
1 1/2 tbsp applesauce
3 tbsp extra virgin olive oil, (divided)

Steps:

  • Place ground turkey in a medium mixing bowl along with the basil, onion, egg, smoked paprika, cumin, garlic powder, salt, pepper and applesauce. Stir ingredients with a fork and/or clean hands until the spices and herbs are well blended with the meat.
  • Divide the meat into 4 patties (or 6-7 patties if you are making slider-sized burgers). The patties may initially seem overly soft, but will firm up as they cook.
  • If cooking on stovetop in a nonstick skillet or grill pan, grease the pan with 2 tbsp olive oil, reserving 1 tbsp olive oil for basting. Heat the oil over medium until hot. Place the patties gently in the pan.
  • Cook over medium heat for 10-15 minutes, flipping every 3 or 4 minutes and basting with olive oil periodically.
  • You may need to adjust the heat a little lower once the burgers are browned to your liking, to avoid overcooking the outside of the patties. Use a meat thermometer to test for doneness (165 degrees F in the center of the thickest part of the patty). As soon as they reach 165 or higher, remove from heat to avoid overcooking - you don't want your burgers to turn out dry.If grilling, grease the preheated grill well before you start cooking. Grill over medium flame using the same instructions as above. Whether cooking on the stovetop or the grill, I like to baste the burgers with olive oil periodically to keep them nice and moist.
  • Serve these Mediterranean Turkey Burgers with or without buns. We usually enjoy these without bread, and serve them with side salads and mezze instead.

1/2 teaspoon garlic powder
½ teaspoon onion powder
1 1/2 Tablespoons ketchup
1 Tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
¾ teaspoon salt
½ teaspoon freshly ground pepper
1/3 cup bread crumbs
1 egg
4 buns
1 tablespoon canola oil (, or use pan spray)
Condiments: ketchup, mustard, mayonnaise, BBQ sauce
Toppings: lettuce, tomato, onion, pickles, avocado

Steps:

  • Mix together: To a mixing bowl add turkey, garlic powder, onion powder, ketchup, mustard, Worcestershire sauce, salt and pepper, egg and breadcrumbs. Using a fork, mix together-try not to mix it too much.
  • Shape into 4 patties about ½ inch thick- they will be really moist.
  • Use your thumb to make a depression in the center of each patty. If grilling, place the patties on a parchment lined plate and freeze for 20 minutes.

Extra-virgin olive oil, for coating the pan
1 onion, cut into 1/4-inch dice
Kosher salt
2 cloves garlic, smashed and finely chopped
1 1/2 pounds ground turkey
One 8-ounce can water chestnuts, coarsely chopped (not too fine--they add GREAT texture)
1/4 cup soy sauce, plus more if needed
1/2 bunch of fresh cilantro, leaves finely chopped
1-inch piece of fresh ginger, peeled and grated
2 tablespoons sambal oelek or Asian chili paste, optional (but recommended)
1/2 cup mayonnaise
2 teaspoons sambal oelek
4 burger buns (I like the seeded ones)
4 slices American of Cheddar cheese (American melts better)
4 slices beefsteak tomatoes
4 slices red onion
4 leaves butter lettuce

Steps:

  • For the turkey burgers: Coat a large saute pan with olive oil and toss in the onion. Season with salt and bring the pan to medium heat. Cook the onion until soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for another 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, water chestnuts, soy sauce, cilantro, ginger, sambal if using and the cooked onions and garlic. (NOTE: Save the onion pan to cook the burgers in later!) Add 1/4 to 1/2 cup water to the mix--this will keep the burgers really moist! Use your hands to squish the mixture until everything is really well combined.
  • Make, cook and eat a little tester patty to be sure the turkey is really delicious. If the seasoning isn't just right, add a little more soy or a sprinkey-dink of salt. When you're confident the burger mix is perfectly seasoned, form it into 4 equal patties.
  • With a paper towel, wipe out the saute pan you used to cook the onion, coat the pan with fresh olive oil and bring it to medium-high heat. Add the burgers, being sure not to crowd the pan--if you need to work in batches, knock yourself out. Cook the burgers for 5 to 6 minutes on each side. The burgers should be browned and cooked through when done. (If working in batches, keep the first batch warm in the oven at 200 degrees F while cooking the second batch.)
  • For the toppings: Mix together the mayo and sambal oelek in a small bowl. Toast the burger buns and top with the burgers. Garnish as desired with the cheese, tomato, red onion, lettuce and spicy mayo.

1/2 bunch fresh cilantro leaves, finely chopped
4 slices Cheddar
4 seeded burger buns
1/4 cup mayo mixed with 2 teaspoons sambal oelek
4 slices beefsteak tomatoes
4 slices raw red onion
Butter lettuce

Steps:

  • Preheat the oven to 200 degrees F to keep the first batch of burgers warm.
  • For the burgers: Coat a large saute pan with olive oil. Add the onions, season with salt and bring to a medium-high heat. Cook the onions until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes. Turn off the heat and let cool.
  • In a large mixing bowl, combine the turkey, soy sauce, sambal oelek, ginger, water chestnuts, cilantro and the cooked onions and garlic. (Reserve the onion pan to cook the burgers in later.) Add one-quarter to one-half cup water; this will help the burgers stay nice and moist. Using your hands, squish everything together until they are really well combined.
  • Make and cook a little tester patty to be sure that the turkey is really well seasoned. Re-season if needed. If the burger is missing salt add more soy or just give a little sprinkey dink of salt.
  • When the burger mix is seasoned appropriately, form the mix into 4 equal size patties.
  • Coat the saute pan with new olive oil and bring to a medium-high heat. Place the burgers in the pan. Be sure not to crowd the pan, if you need to work in batches go ahead! Cook the burgers for 5 to 6 minutes on each side. Place the cheese, if using, on the burger and cook for 1 more minute.
  • Toast the buns in a broiler or toaster. Schmear each side of the bun lightly with the sambaal mayo. Put a burger on each of the bottom buns and top each burger with tomato, onion and lettuce. Close up each burger, give each one a little squish and eat em' up!
