this recipe was in AARP adapted from Sara Moulton's Weeknight Meals. We tried it and found it delicious!! In fact so much so, we had a 32lb hen turkey in the freezer, cut her up and ground the meat so we can use for this recipe and others. It's an easy recipe to make and very good for you. They smell so good while mixing up, you can hardly wait. Yuuuuummmmm gooood!!!

1 1/2 lbs ground turkey
1 medium red bell pepper, finely chopped
1/4 small napa cabbage, shredded
4 scallions, finely chopped
1 large egg white, lightly beaten
3 tablespoons cilantro, finely chopped
2 tablespoons light soy sauce
1 tablespoon fresh ginger, finely grated
1/2 teaspoon sesame oil
1/2 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
2 -3 tablespoons vegetable oil, divided
6 tablespoons light mayonnaise
1/2 teaspoon sesame oil
1 teaspoon light soy sauce
2 teaspoons wasabi paste
6 whole wheat hamburger buns, toasted

Steps:

  • mix together turkey, scallions, bell pepper (I used a small), egg white (I used 2 whole eggs), cilantro, 2 T soy sauce, ginger, 1/2 t sesame oil, salt and pepper. Shape into 6 patties about 1/2 inch thick.
  • Heat 2 T veg. oil in skillet until hot, reduce heat to medium; add turkey burgers and cook 5 min on each side or until cooked thru, adding more oil as needed.
  • Meanwhile, stir together the mayo., prepared wasabi, remaining teaspoon soy sauce, and 1/2 t sesame oil.
  • Put a burger in each bun and top with about 1 T of the mayo sauce.

ROCK SHRIMP BURGERS WITH WASABI MAYO



Rock Shrimp Burgers with Wasabi Mayo image

1 cup mayonnaise
1/4 cup prepared wasabi (available in the Asian section of your supermarket)
1 teaspoon freshly grated ginger
2 tablespoons soy sauce
1 teaspoon sugar
Pinch salt
1 pound rock shrimp
1 egg
1/4 cup finely chopped parsley leaves
1/2 cup panko bread crumbs
Kosher salt
Freshly ground black pepper
Hamburger buns, for serving
Tomato slices, or cherry tomato slices, for mini-burgers, for serving

Steps:

  • Heat your grill.
  • For the Wasabi Mayo: Mix all the ingredients together. Taste and adjust the seasoning. Cover and refrigerate until ready to use.
  • For the Rock Shrimp Burgers: process half the shrimp with the egg. Coarsely chop the remaining shrimp and put it into a bowl. Add the processed shrimp and the parsley, bread crumbs, and salt and pepper to taste. Divide the mixture into 4 portions and form them into patties. Grill them on medium heat until cooked through, about 3 to 4 minutes per side. (You can also fry them in a skillet with a little oil.)
  • To serve: place a burger onto a bun. Top with a slice of tomato and some Wasabi Mayo. Cover with the bun top and serve.
  • For mini-burgers: Prepare the buns by cutting out smaller buns with a 1 1/2-inch diameter ring mold or biscuit cutter. Take a heaping tablespoon of the burger mixture and form it into a small patty. Continue with the remaining mixture until all the burgers are formed. Grill them over medium heat until browned and cooked through, about 3 to 4 minutes per side. Place a shrimp burger onto a mini-bun. Top with a slice of cherry tomato and some Wasabi Mayo. Cover with the bun top and secure them with a toothpick.

Who needs butter? A slather of mayonnaise on your turkey pulls double duty by standing in as a flavorful rub as well as adding moisture and fat to often dry meat. And what's particularly great is that it browns the skin beautifully without the constant basting that most birds need.

One 10- to 12-pound turkey
1 1/2 cup mayonnaise
1 tablespoon paprika
4 teaspoons dried parsley
2 teaspoons garlic powder
2 teaspoons dried parsley
2 teaspoon dried thyme
2 teaspoon ground sage
1 teaspoon hot sauce or a pinch of cayenne
Kosher salt and freshly ground black pepper
1 medium onion, quartered
1 head garlic, halved across the garlic cloves
Several sprigs fresh herbs, such as thyme, parsley, rosemary and sage
2 bay leaves

Steps:

  • Adjust a rack in the lowest position and preheat oven to 325 degrees F. Set a roasting rack in a large roasting pan.
  • Stir together the mayonnaise, paprika, dried parsley, garlic powder, dried thyme, ground sage, hot sauce, 2 tablespoons salt and 2 teaspoons black pepper in a medium bowl. Set aside.
  • Remove any turkey parts from the neck and breast cavities and reserve for other uses if desired. Dry the bird well with paper towels, inside and out. Rub the mayonnaise mixture all over the turkey, including the cavity, trying to make it as smooth as possible, especially on the breast so it browns evenly. Stuff the cavity with the onion, garlic, herb sprigs and bay leaves.
  • Set the bird breast-side up on the prepared roasting rack. Tent the bird with foil.
  • Roast the turkey for 2 hours. Remove the foil and increase the oven temperature to 425 degrees F. Add a cup of water to the bottom of the pan so that the drippings don't burn and continue to roast until an instant-read thermometer registers 165 degrees F in the thigh, 30 to 45 minutes. You can strain the pan drippings and serve them on the side or reserve and blend them into your gravy for extra flavor.
  • Remove the turkey from the oven and let rest about 20 minutes then carve and serve.

1/8 cup sugar

1/4 cup thinly sliced green onions
1 large egg

1 tablespoon peanut oil
4 sesame hamburger buns
1/2 cup homemade mayonnaise or store-bought
1 teaspoon wasabi powder
1/2 teaspoon minced ginger
1 teaspoon finely chopped lemon peel

Steps:

  • Cucumber salad: Toss cucumbers, onions, rice vinegar, sugar, and salt in a medium sized bowl. Let it marinate at room temperature for 1 hour.
  • Burger: Mix ground turkey, rice, panko, green onions, egg, sesame oil, soy sauce, Thai chile, and sugar very well. Make into 4 patties. Season with salt and pepper.
  • Heat peanut oil in a large skillet over medium-high heat. Saute burgers until cooked through, approximately 5 to 6 minutes per side (depending on how thick you make them).
  • Wasabi mayonnaise: While burgers are cooking, toast buns, and mix mayonnaise, with wasabi powder, ginger, and lemon peel in a small bowl.
  • Drain cucumber salad well.
  • Smear 1 tablespoon wasabi mayonnaise on toasted bun halves, spread with a layer of drained cucumber salad, then top with burger and cover with bun top.

Steps:

  • Combine all relish ingredients and refrigerate until ready to use.

  • Combine all burger ingredients in a large bowl and form into 4 patties, being careful not to overwork meat. Grill until cooked thoroughly, about 4 minutes per side. Once cooked, remove and set aside.
  • Place buns on grill cut side down and toast until lightly browned, being careful not to burn.
  • Spread mayo on top part of bun. Place burgers on bottom part of bun and top the burger with relish and a handful of bean sprouts.

2 garlic cloves, chopped

Steps:

  • Cube salmon in to bite-size pieces and place in a food processor; pulse to coarse-grind the salmon; it should take on the consistency of ground beef or ground turkey.
  • Transfer salmon to a bowl; add in garlic, ¾ of the ginger, tamari, scallions, red bell peppers, sesame oil, steak seasoning, and black pepper; mix to combine.
  • Form 4 large patties, 1 ½ inches thick; drizzle patties on both sides with oil.
  • Preheat a nonstick skillet over med-high heat; add the patties and cook for 5-6 minutes on each side for well done.
  • While burgers are cooking, combine the mayo, wasabi paste, lime juice, and remaining ginger; set aside.
  • To assemble: spread the ginger-wasabi mayo on the buns; top with a salmon patty and red leaf lettuce; set the bun tops in place.
