Recipe video above. Super quick and easy classic plain scone recipe, fluffy inside with golden tops. Using a food processor is not only easier, it eliminates common pitfalls when it comes to making scones. Serve with copious amounts of jam and cream!

3 cups / 450g self raising flour ((Note 1))
80 g / 3 oz cold salted butter (, cut into 1 cm / 2/5" cubes (Note 2))
1 cup / 250 ml milk, fridge cold (Note 2)
Extra flour (, for dusting)
Extra milk (, for brushing)
Strawberry jam ((or other of choice))
250 ml / 1 cup whipping cream
1 tbsp white sugar
1/2 tsp vanilla extract ((optional))

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan / convection).
  • Place flour in food processor, then butter. Blitz on high for 8 seconds until it resembles breadcrumbs.
  • Pour milk all over the flour (don't pour in one place). Blitz for 6 to 8 seconds on high until the crumbs turn into ball(s).
  • Transfer dough onto work surface, scrape out residual bits in the food processor.
  • Knead lightly no more than 10 times just to bring the dough together into one smooth ball, then pat down into a 2 cm / 4/5" thick disc. Dust with extra flour if necessary (I don't need it).
  • Optional: Lightly roll across the top with a rolling pin to smooth the top.
  • Dip a 5 cm / 2" round cutter into Extra Flour.
  • Plunge cutter straight down and back out into dough - do not twist. Repeat all over disc.
  • Remove excess dough from around scones, then carefully transfer scones onto baking tray, taking care not to smear / press the cut sides. (Note 4)
  • Gather together dough scraps and repeat. I get 10 scones in total.
  • Brush tops lightly with milk. (Optional)
  • Bake for 10 to 12 minutes until the top is golden and it sounds hollow when tapped.
  • Remove from oven, then transfer onto dish towel and wrap loosely (makes top soft).
  • Once cooled to warm (10 - 15 minutes), serve warm.
  • Tradition is to split the scone with hands (no knife!), slather with jam and dollop on cream.

Steps:

  • In a large bowl, combine the flour, 2 tablespoons sugar, baking powder and salt. Cut in butter until the mixture resembles fine crumbs. Stir in dates. Combine eggs and milk; stir into crumb mixture just until blended (dough will be soft)., Turn onto a lightly floured surface. Gently knead dough 10 times. Pat into a 9-in. x 6-in. rectangle. Using a floured knife, cut into six 3-in. squares; cut each square diagonally in half., Place on a greased baking sheet. Combine the cinnamon and remaining sugar; sprinkle over scones. , Bake at 400° for 12-14 minutes or until lightly browned. Remove to a wire rack. Serve warm.

450g self-raising flour , plus extra for dusting
1 tsp ground ginger
100g unsalted butter , chilled, diced
75g caster sugar
250ml buttermilk
1 egg white , lightly beaten
1 tbsp granulated sugar

Steps:

  • Heat oven to 220C/200C fan/gas 7. Sieve the flour, ginger and a pinch of salt into a large mixing bowl. Add the butter and cut into the mixture using a round-ended knife. Then use your fingers to rub the butter into the flour until it resembles fine breadcrumbs. Add the caster sugar and mix to combine.
  • Make a well in the middle, add the buttermilk and stir in using the knife again. Once it comes together, use your hands to bring the dough into a ball. Tip out onto the work surface and very lightly knead for 30 secs until almost smooth.
  • Lightly dust the work surface with flour and roll or flatten the dough into a square roughly 2cm thick. Using a long knife, trim the edges, then cut the dough into 6-7cm squares. Arrange the squares on a baking sheet, brush the tops with the beaten egg white, sprinkle with granulated sugar and bake on the middle shelf of the oven for about 10 mins until well risen and golden brown. Serve warm with Rhubarb & ginger jam and clotted cream.

3 tablespoons white sugar
1 ½ teaspoons ground ginger
½ teaspoon ground cardamom

1 cup buttermilk
1 egg

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Whisk flour, sugar, ginger, cardamom, baking powder, baking soda, and salt together until thoroughly combined. Grate in frozen butter using a box grater. Toss until mixture resembles coarse crumbs. Mix in chopped ginger.
  • Whisk buttermilk, egg, and vanilla extract together in a small bowl or measuring cup until thoroughly combined. Add to dry ingredients and mix just until no dry clumps of flour remain; dough will be somewhat sticky.
  • Turn dough out onto the prepared baking sheet. Gently press dough together into an even 7-inch circle. Lightly flour your hands if dough is too sticky to shape. Cut dough into 8 triangles using a bench scraper. Space scones 1 inch apart on the baking sheet.
  • Whisk egg and water until combined. Gently brush the top of each scone with the egg wash. Sprinkle with coarse sugar.

Scones that are crisp on the outside, and buttery and flaky on the inside, studded with bits of caramelized dates. Delicious and easy step by step recipe!

2 cups flour (250 g)
1 tbsp baking powder
3 tbsp white sugar (40 g)
1/2 tsp salt
1/4 tsp cinnamon powder
1 stick frozen butter, grated on the large side of a box grater (115 grams)
1 egg, cold
1/2 cup heavy cream, cold
1 1/2 tsp vanilla extract
1 cup pitted, chopped dates (150 grams)

Steps:

  • In a large bowl, whisk together flour, baking powder, sugar, salt, cinnamon.
  • Add the grated frozen butter into the flour mixture, and work it in with your fingertips until it resembles wet sand, see post above for visuals. You can also use a pastry cutter, but I find hands easier!
  • In a separate bowl mix together heavy cream, egg and vanilla. Add the wet ingredients and the chopped dates to the flour, and mix together until combined with a spatula or fork. You can give the dough a couple kneads with your hands, but don't overwork.
  • Turn the dough out onto a lightly floured surface, and pat it into an 8 inch circle. Cut the circle into 8 wedges, and place onto a parchment paper lined baking sheet. Place the sheet with the dough on it into the fridge to rest for 15 minutes.
  • While dough is resting, heat oven to 400 F (200C). Take scones out of the fridge, and brush the top of each with a little heavy cream, and optionally sprinkle with some coarse sugar. Bake for 20-25 minutes, until edges and top are a light golden brown.
  • Serve warm, either plain or with some clotted cream and/or jam.

1 cup cake flour
1 tablespoon sugar
1/2 teaspoon dried ginger

  • Preheat the oven to 450 degrees F.
  • You can mix by hand or with a food processor or mixer, but be careful not to over blend the dry ingredients. If you over-blend, your scones will be tough and chewy. Put the 7 dry ingredients in a bowl and add the cubes of butter. With your fingers, or with 2 knives, blend the butter into the dry ingredients until it resembles a course cornmeal. Some large pieces of butter should remain, this will make your scones light and fluffy. If you are using a processor, pulse briefly. Stir in the ginger bits. Add the milk and work quickly with a fork to incorporate. The dough should be soft and lightly moist. Again, don't over-mix. Turn the dough out onto a floured work surface and gently pat down until it stands about 1/2-inch thick. Cut into 12 triangles with a dough cutter or a knife and put onto an ungreased baking sheet. Brush the tops of the scones with the egg wash and sprinkle with some sugar. Bake for 12 minutes until golden. Let cool briefly.

2 1/4 cups unbleached pastry flour or unbleached all-purpose flour
1/3 cup granulated sugar
1 tablespoon baking powder
1 teaspoon finely chopped lemon zest (about 1/2 lemon)
1 1/2 sticks (6 ounces) unsalted butter, cut into 1-inch cubes and frozen
4 1/2 ounces candied ginger, finely chopped into 1/4-inch pieces to equal 2/3 cup
3/4 cup heavy cream, plus extra for brushing the tops of the scones

Steps:

  • Adjust the oven rack to the middle position and preheat the oven to 400&Deg; F.
  • In the bowl of a food processor fitted with the steel blade or in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, sugar, and baking powder, and pulse or mix on low to incorporate. Add the lemon zest and butter, and pulse on and off, or mix on low, untl the mixture is pale yellow and the consistency of fine meal.
  • Transfer the mixture to a large bowl and stir in the ginger. Make a well in the center and pour in the cream. Using one hand, draw in the dry ingredients, mixing until just combined.
  • Wash and dry your hands and dust them with flour. Turn the dough out onto a lightly floured work surface and gently knead a few times to gather it into a ball. Roll or pat the dough into a circle about 3/4 inch thick. Cut out the circles, cutting as closely together as possible and keeping the trimmings intact.
  • Gather the scraps, pat and press the pieces back together, and cut out the remaining dough. Place the scones 1 inch apart on a parchment-lined baking sheet.
  • Brush the tops with the remaining cream.
  • Bake for 12 to 16 minutes, until the surface cracks and they are slightly browned.
