Two 12-ounce jars red-pepper relish, such as Fourth Creek Food Co.
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon plus 1 teaspoon extra-virgin olive oil, plus more for brushing
2 tablespoons low-sodium soy sauce
2 pounds ground dark turkey
4 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1 slice soft white bread, torn into pea-size pieces (1 cup)
Kosher salt and freshly ground black pepper
3 tablespoons chili sauce, plus more for brushing
1/2 cup mayonnaise
2 packed cups finely shredded kale
1/2 teaspoon balsamic vinegar
8 brioche rolls, split
4 tablespoons unsalted butter, melted

Steps:

  • Drain 1 jar relish in a sieve; discard liquid. Pulse 2/3 cup drained relish with onion and garlic in a food processor until finely chopped.
  • Heat 1 tablespoon oil in a skillet over medium-high heat; add relish mixture. Cook, stirring, until a thick paste forms, about 7 minutes. Stir in soy sauce. Transfer to a bowl; let cool 5 minutes. Stir in turkey, Worcestershire, mustard, bread, 1 1/2 teaspoons salt and pepper to taste. Form into 8 patties, each about 4 inches in diameter. Refrigerate, covered, at least 1 hour and up to 8 hours.
  • Preheat grill to medium. Brush both sides of burgers with oil, then brush grates. Grill 5 minutes. Flip; lightly brush tops with chili sauce and grill until a thermometer inserted into centers registers 165 degrees F, 5 to 6 minutes more.
  • Combine chili sauce and mayonnaise. Drizzle kale with vinegar and remaining teaspoon oil; season with salt and pepper. Brush cut sides of rolls with butter; grill until lightly toasted. Sandwich burgers in rolls with chili sauce mixture, remaining relish and kale.

1 tablespoon jerk seasoning, plus more for sprinkling
1 small green apple, peeled and grated
1/2 cup finely chopped scallions
1/4 cup panko (Japanese breadcrumbs)
Kosher salt and freshly ground pepper
1/4 cup mayonnaise, plus more for brushing
1/4 cup mango chutney, roughly chopped
3 cups shredded green cabbage
1 carrot, shredded
Canola oil, for the grill
4 hamburger buns or challah rolls, split

Steps:

  • Preheat a grill or grill pan to medium high. Mix the turkey, jerk seasoning, apple, 1/4 cup scallions and the panko in a bowl; season with salt and pepper. Form into four 1-inch-thick patties and make a small indentation in the middle of each with your thumb to prevent it from puffing up on the grill. Refrigerate.
  • Whisk the mayonnaise and chutney in a large bowl. Add the cabbage, carrot and the remaining 1/4 cup scallions, season with salt and pepper and toss to coat.
  • Brush the grill with canola oil. Grill the turkey patties until browned and cooked through, 4 to 5 minutes per side.
  • Brush the cut sides of the buns with mayonnaise and sprinkle with jerk seasoning; toast on the grill, about 30 seconds. Serve the burgers and slaw on the buns.

24 oz Uncooked ground turkey dark meat
0.5 medium Fresh apple(s) cored and roughly chopped
2 tbsp(s) Mango chutney
1 medium Uncooked scallion(s) white and green parts roughly chopped
2 clove(s), large Garlic clove(s) grated on a microplane
0.25 cup(s) Cilantro fresh leaves
1 tbsp(s) Soy sauce
0.5 tsp(s) Curry powder
0.5 tsp(s) Ground chipotle chili
1 tsp(s) Sea salt
4 spray(s) Olive oil cooking spray
1 tsp(s) Ground chipotle chili

Steps:

  • Place the turkey in a large bowl, cover with a dish towel, and let come to room temperature while you prep the rest of the ingredients.
  • In a food processor, combine the apple, mango chutney, scallion, garlic, cilantro, soy sauce, curry powder, chipotle , and salt and process until smooth. Add the mixture to the turkey and mix thoroughly to combine. Divide the mixture into four equal portions and form each into a loose ball. Pat lightly to flatten the meat into burgers about 3/4 inch thick.
  • Heat a large, heavy skillet, preferably cast-iron, over medium-high heat. Spray with a thin layer of oil and add the burgers. Cook until nicely browned on the bottom, 4 to 5 minutes, then flip the burgers, reduce the heat to medium-low, cover the pan, and cook for about 6 minutes, until browned on the bottom and cooked through. Remove from the pan and serve.
  • While the burgers are cooking, place the split pretzel buns on the grill cut side down to toast them (or toast them in a toaster). Remove the buns from the grill, sandwich the burgers into the buns, and add your choice of condiments.
  • Serving size: 1 burger

6 slices whole-wheat sandwich bread
1 pound lean ground turkey (7 percent fat)
1/2 cup reduced-fat sour cream
4 tablespoons prepared mango chutney, preferably Major Grey's, finely chopped
2 tablespoons Dijon mustard
1 tablespoon chili powder
Coarse salt
1 cup mesclun lettuce mix
1 medium tomato, sliced

Steps:

  • In a medium bowl, tear 2 slices bread into small pieces. Add turkey, sour cream, 3 tablespoons chutney, 1 tablespoon mustard, chili powder, and 1 teaspoon coarse salt. Shape into 4 firmly packed 5-inch round patties.
  • Freeze on a baking sheet until firm, about 30 minutes, then wrap each burger in plastic; place all burgers in a resealable freezer bag, label, and date. Freeze up to 2 months.
  • To cook: Thaw burgers overnight in the refrigerator. Heat broiler with rack set 4 inches from heat. Place burgers on a rimmed baking sheet; broil until firm and cooked through, 4 to 5 minutes per side.

1 tablespoon Dijon mustard
2 teaspoons lime juice
1/4 cup minced fresh parsley
2 green onions, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground turkey
4 hamburger buns, split
Fresh arugula or baby spinach leaves
Thinly sliced red onion

Steps:

  • For sauce, mix 1/4 cup chutney, mustard and lime juice. In a large bowl, combine parsley, green onions, salt, pepper and remaining chutney. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties., Place burgers on a lightly oiled grill rack over medium heat or in a greased 15x10x1-in. pan. Due to my dietary requirements I am always on the lookout for healthy and low fat twists on the fatty meals I used to enjoy. We like burgers and we like curries and so that was the inspiration for this healthier turkey curry burger. I serve them on buns with a bit of crisp lettuce and an extra teaspoon of the chutney spread over the each burger.

14 ounces lean ground turkey
1 tablespoon dried onion
2 tablespoons curry powder, medium strength
2 tablespoons mango chutney

Steps:

  • Mix all the ingredients together in a bowl with your hands until well combined.
  • Put into the fridge for about 10 minutes to allow the mixture to firm up a bit.
  • Take out of the fridge and form into four equal sized patties.
  • Fry the burgers as you would any other burger for about 5 minutes each side or until cooked through. (I do mine on my Foreman Grill brushed very lightly with some canola oil to save me having to fry them and add extra fats).
  • Put on buns and top with your choice of toppings (I go simply with crisp lettuce and a bit of extra mango chutney) and serve.

4 large unpeeled garlic cloves
½ teaspoon salt
½ teaspoon black pepper
1 teaspoon ground coriander
¾ teaspoon ground cumin
¼ teaspoon ground cinnamon
⅛ teaspoon ground cloves
1 ¼ pounds ground turkey
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
2 tablespoons minced fresh ginger
1 jalapeno pepper, seeded and minced
½ large cucumber, sliced thin
1 tablespoon fresh lime juice
¼ cup Major Grey Chutney
4 small (4 inch) pita breads

Steps:

  • Set garlic in a small skillet over medium-high heat; toast until spotty brown, about 5 minutes. Peel, mince and set aside.
  • Mix salt, pepper, coriander, 1/2 tsp. cumin, cinnamon and cloves in a small bowl.
  • Break up turkey in a medium bowl; add garlic, spinach, spice mixture, ginger and jalapeno; stir lightly with a fork to combine. Divide turkey mixture into 4 portions. Toss meat back and forth between cupped hands to form a ball. Pat with fingertips to flatten to about 4 1/2 inches wide. Refrigerate.
  • Mix cucumber, lime juice, 1/4 tsp. cumin and salt to taste in a small bowl. Refrigerate until ready to serve.
  • For charcoal grill: Build a hot fire on one side of grill. Replace rack. When coals are covered with white ash, add burgers. Cover and cook, turning only once, until done, about 5 minutes per side.
  • Grill pitas until spotty brown and warm, a minute or so per side. Split crosswise. Place a burger on each of 4 pita halves. Top with cucumbers and chutney, then remaining pita halves.
