MICHELLE'S TURKEY BURGERS WITH LEMON MAYONNAISE
Spike Mendelsohn serves this turkey burger with Swiss cheese at Good Stuff, and calls it the Michelle Melt.

- In a nonstick skillet, heat 1 tablespoon of the canola oil. Add the sliced onion and cook over moderate heat, stirring occasionally, until golden and softened, about 25 minutes. Transfer the onion to a bowl. Wipe out the skillet.
- Heat 1 tablespoon of the canola oil in the skillet. Add the celery, apple, and scallions and cook over moderate heat until softened, about 8 minutes. Transfer to a bowl and add the chipotle; let cool. Stir in the turkey, parsley, 1 teaspoon of the lemon zest, 2 teaspoons of salt, and 1/4 teaspoon of pepper. Shape the mixture into four 1/2-inch-thick patties.
- In the skillet, heat the remaining 1 tablespoon of canola oil. Add the burgers and cook over moderately high heat, turning once, until no longer pink inside, 10 minutes.
- Meanwhile, in a small bowl, mix the mayonnaise with the remaining 1 teaspoon of lemon zest, the lemon juice, and chopped thyme. Season with salt and pepper. Spread the lemon mayonnaise on the top halves of the buns; set the burgers on the bottom halves and top with the caramelized onions, lettuce, and tomato. Close the burgers and serve.
TURKEY BURGER WITH LEMON MAYONNAISE
A DC chef (Spike from Season 4 of Top Chef) made these burgers for the White House 2009 Easter Egg Roll and calls it the "Michelle Melt" at his restaurant. I found the recipe in Food and Wine magazine. These burgers were a total hit when I brought them to a party. They came out rather spicy! If you are not a fan of caramelized onions on your burgers, skip the first step.

- For the Meyer lemon-honey mustard: Whisk together in a small bowl the mustard, honey, orange juice, lemon zest, lemon juice and season with salt and pepper. Cover and refrigerate for at least 30 minutes and up to 24 hours to allow the flavors to meld.
- For the burgers: Preheat the grill to high. Form the meat into four 6-ounce burgers. If you are not going to cook right away, keep the burgers cold in the refrigerator. Sprinkle the burgers on both sides with salt and pepper. Grill until cooked through, 3 to 4 minutes on each side. During the last minutes of cooking, add 2 slices of cheese to each burger, cover the grill and let the cheese soften slightly, about 1 minute. Put the burgers on the buns, drizzle with some of the Meyer lemon-honey mustard and top with a few sprigs of watercress. Serve with extra mustard on the side.

- Preheat the grill to high.
- In a bowl add the mayonnaise, lemon juice, red pepper flakes, and roasted peppers. Season with salt and pepper, to taste, and set aside.
- In a large bowl, mix the ground turkey with ranch dressing mix, and salt and pepper, to taste. Form the meat into 4 patties and put on a platter lined with parchment paper. Season the burgers with salt and pepper, to taste, and drizzle both sides with olive oil .Grill the burgers for 4 to 5 minutes on each side. Top each burger with 2 slices of Cheddar and 1 slice of bacon. Grill for an additional minute or until the cheese melts. Remove from grill.
- Spread the sweet pepper mayonnaise on each side of rolls and add the burgers. Serve with pickled jalapenos and enjoy.

- Heat oven to 200C/180C fan/gas 6. Heat the oil in a small pan, add the onion, fry for a few mins until lightly browned and soft, then cool. Mix the turkey with the lemon zest, thyme, parsley, onion and seasoning until well combined.
- Shape the mixture into 4 burgers and wrap a rasher of bacon around each. Put in a roasting tin, bake for 20-25 mins, then pan-fry for a few mins on each side to crisp up the bacon. Serve in a bun with lettuce, sliced tomato, tomato sauce and vegetable chips (recipe below).
