- Combine rice, meat and beans with spices and grill seasoning. Form 4 big patties from the meat and bean mixture then heat 1 tablespoon oil, a turn of the pan, in a large skillet over medium-high heat. Cook patties 7 to 8 minutes on each side.
- While burgers cook, combine avocado with garlic, lime zest and juice, jalapeno and red onion. Mash to roughly combine, then stir in the sour cream.
- Place burgers on buns with lettuce and tomato and top with sour cream guacamole.

- Preheat the oven to 350° and have ready a baking sheet.
- Add the olive oil to a saucepan over medium heat and allow the oil to come to temperature. Add the pepper, onion, and carrots, and sauté for about 8 minutes, or until softened. Stir often.
- Add in the beans, cumin, garlic powder, salt, and pepper. Allow the mixture to come to a rapid simmer. Reduce the heat accordingly to maintain a simmer for about 10 minutes, or until slightly reduced. Stir often.
- Transfer the beans to a food processor fitted with a paddle attachment, and process until smooth. If you do not have a food processor, you could use a blender or the back of a wooden spoon.
- Stir in the cheddar cheese. Scoop a scant 1/4 cup of the mixture onto each tortilla and roll into a tight burrito.
- Mist both sides of each burrito with cooking spray, and transfer to the baking sheet. Do not overcrowd the sheet, and bake in batches if necessary.
- Bake for 10 minutes. Turn each burrito, and bake for 10 minutes more. Allow to cool slightly, serve, and enjoy.

- Preheat the oven to 275°F. Wrap the flour tortilla in foil and warm in the oven.
- Preheat a large skillet with the vegetable oil. Add the ground turkey and cook until the turkey is browned.
- Add the onions, garlic, bell peppers, salt, and pepper to the turkey. Continue to cook for approximately three minutes stirring often. Add the chicken broth, pinto beans, and 1 1/2 cups of the tomatillo salsa.
- Turn the heat to high and continue to cook for 5 to 6 minutes until the turkey mixture has thickened. Remove from heat and add the cilantro stirring to combine.
- Remove the flour tortillas from the oven and switch the broiler on.
- Scoop the turkey mixture into the center of each warm tortillas. Sprinkle each burrito with 1/4 cup of cheese, and roll them up burrito style.
- Line a baking dish with the burritos with the seams side down. Top each burrito with a little bit of the remaining Tomatillo salsa. Sprinkle with the remaining cheese and place the dish under the hot broiler. Broil until the cheese has melted and browned. Serve immediately.

- Brown turkey in a skillet over medium heat until no longer pink, 5 to 7 minutes. Season with salt and pepper; drain and discard any excess grease. Add black beans and diced tomatoes; cook until warm, about 5 minutes. Reduce heat to low.

- Add 2 tbsp grapeseed oil to the sauté pan and place over medium-high heat for 1 to 2 minutes. Add turkey, 1⁄2 tsp pepper, and Tabasco and brown the meat, stirring regularly until turkey is cooked through-about 6 to 7 minutes. Drain the fat from the pan, place cooked turkey on a paper towel, and set aside. Return the sauté pan to medium-high heat, add remaining oil and onions, and cook, stirring continuously, until onions are slightly translucent. - Add one cup of the shredded cheese.
- Mix well.

- In 12-inch skillet, heat oil on medium until hot. Add turkey and cook 7 minutes or until browned, stirring occasionally and breaking up meat.
- Add beans, pepper, onion, barbecue sauce, lime juice, chili powder, cumin, and salt; cook mixture 5-7 minutes or until turkey is cooked through.

TURKEY AND BLACK BEAN ENCHILADAS
Steps:
- In a medium saucepan, spray cooking spray and sauté garlic.
- Add chiles, chili powder, cumin, chicken broth, tomato sauce, salt and pepper.
- Bring to a boil.
- Reduce the heat to low and simmer for 5-10 minutes.
- Set aside until ready to use.
- In a large skillet brown the turkey and season with salt.
- When the turkey is browned, add onion, garlic, black beans, cilantro, green chiles, diced tomatoes, cumin and chili powder.
- Mix well and simmer on low, covered for 20 minutes.
- Remove lid and simmer an additional 5-10 minutes to reduce the liquid.
- Preheat oven to 400 degrees.
- Spray a 13 by 9-inch glass baking dish with non-stick spray.
- Put 1/2 cup turkey mixture into each tortilla and roll it.
- Place on baking dish seam side down.
- Top with enchilada sauce and cheese.
- Cover with aluminum foil and bake in the oven on the middle rack for 20-25 minutes.
