2 teaspoons olive oil
1/2 teaspoon dried rosemary, crushed
1/4 teaspoon crushed red pepper flakes
1 can (28 ounces) whole tomatoes in puree, cut up
1 can (14-1/2 ounces) reduced-sodium chicken broth
2 cups shredded carrots
2 cans (15 ounces each) cannellini beans, rinsed and drained
1 package (6 ounces) fresh baby spinach, chopped
1-1/2 cups cubed cooked turkey breast
Shredded Parmesan cheese, optional

Steps:

  • In a large saucepan over medium heat, cook garlic in oil for 1 minute. Add rosemary and pepper flakes; cook 1 minute longer. , Stir in the tomatoes, broth and carrots. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Stir in the beans, spinach and turkey; return to a boil. Reduce heat; cover and simmer 10 minutes longer. Serve with cheese if desired.

1 pound extra lean ground turkey
1 medium yellow onion, diced
1 clove garlic, minced
pinch of red pepper flakes
1/4 teaspoon black pepper

1/2 teaspoon dried basil
1 (14.5 ounce) can diced tomatoes
1 (15.8 ounce) can great northern beans, drained and rinsed
8 ounces baby spinach
3 cups low-sodium chicken broth
1/2 cup grated Parmesan cheese, plus extra for garnish

Steps:

  • Heat the oil in a large pot over medium-high heat. Brown the turkey with the onions, garlic, red pepper flakes,and pepper until the turkey is cooked through and then onions are translucent (about 7 minutes).
  • Add the oregano, basil, tomatoes (with liquid), and beans. Stir to combine.
  • Reduce heat to medium-low, add spinach and cover for about 2 minutes or until spinach is wilted. Stir to combine.
  • Add broth, stir, and increase heat to medium. Continue to cook until heated through - about 5 minutes.
  • Remove from heat, stir in Parmesan and serve.

1 leftover turkey carcass (from a 12-pound turkey)
9 cups water
2 celery ribs, cut into 1/2-inch pieces
1 medium onion, cut into chunks
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
3 tablespoons chopped onion
2 teaspoons chicken bouillon granules
1 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place turkey carcass in a stockpot; add water, celery and onion. Slowly bring to a boil. Reduce heat; simmer, covered, 2 hours. , Remove carcass and cool. Strain broth through a cheesecloth-lined colander; discard vegetables. Skim fat. Remove meat from bones and cut into bite-sized pieces; discard bones. Return broth and meat to pot., Add beans, spinach, chopped onion, bouillon, salt and pepper. Bring to a boil. Reduce heat; simmer, covered, 10 minutes.

This is an adaptation of a white chicken chili recipe I read but didn't have the ingredients for. It's become something totally different, and my husband really loves it. Serving number based on a hungry husband. If using dried beans, soak overnight and pre-cook. Best served with warm, crusty bread. Mmmmm...

1 lb ground turkey
1 onion, diced
2 tablespoons vegetable oil
1 (9 ounce) bag Baby Spinach (or as much as you want, that's just what my store carries)
2 (15 ounce) cans white beans, any kind, drained and rinsed
3 tablespoons flour
1 quart chicken broth
1 tablespoon cumin
1 -2 teaspoon dried basil
garlic powder, to taste
red pepper flakes, to taste
salt and pepper

Steps:

  • Saute onions in oil in a cast iron dutch oven, or any other pot, over medium heat until soft, about 5 minutes.
  • Add turkey and cook, stirring and breaking up clumps, until browned.
  • Add salt, pepper, cumin, garlic, basil (or whatever other dried herbs you have on hand), and red pepper flakes (I like it spicy, with plenty of garlic, but how much is totally up to you), and stir. Then, add flour and mix in thoroughly.
  • Add chicken broth and stir, scraping up and bits that might've gotten stuck to the bottom of the pan.
  • Add beans and spinach. The spinach won't fit at first (as it needs to cook down a bit), but just keep mixing it in to the rest of the hot ingredients until it's wilted.
  • Once everything is thoroughly mixed, bring to a boil, then turn it down to simmer for about 30-45 minutes, stirring occasionally.
  • Remove from heat and serve hot, with grated cheese for sprinkling and crusty bread, if you have some around. Yum!

1 (14 ounce) turkey kielbasa, cut into 2 inch pieces on angle
1 sweet onion, finely chopped

1 cup dried white beans
water to cover
3 tablespoons olive oil
1 onion, chopped
2 carrots, cut into matchsticks
½ pound fresh spinach
5 cups chicken broth
2 teaspoons minced garlic
1 bay leaf
3 tablespoons chopped fresh parsley
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Place white beans into a large container and cover with water; let soak 8 hours to overnight.
  • Drain beans, reserving 2 cups soaking water.
  • Heat oil in a large pot over medium heat. Add onion and carrots; cook and stir until tender, about 6 minutes. Stir in spinach; cook until wilted, about 2 minutes. Add beans, reserved soaking water, broth, garlic, and bay leaf. Simmer, covered, until beans are tender, about 1 hour.

3 tablespoons olive oil
1 large onion, diced
1 large carrot, diced
1 bunch sturdy greens, such as kale, broccoli rabe, mustard greens or collard greens
1 tablespoon tomato paste
3/4 teaspoon ground cumin, plus more to taste
1/8 teaspoon red-pepper flakes, plus more to taste
1/2 pound ground turkey
3 garlic cloves, minced
1 tablespoon finely grated fresh ginger
1 teaspoon kosher salt, plus more to taste
1 quart chicken stock
2 (15-ounce) cans white beans, drained and rinsed
1 cup chopped fresh, soft herbs, such as parsley, mint, dill, basil, tarragon, chives or a combination
Fresh lemon juice, to taste

Steps:

  • Heat a large pot over medium-high for a minute or so to warm it up. Add the oil and heat until it thins out, about 30 seconds. Add onion and carrot, and sauté until very soft and brown at the edges, 7 to 10 minutes.
  • Meanwhile, rinse the greens and pull the leaves off the stems. Tear or chop into bite-size pieces and set aside.
  • When the onion is golden, add tomato paste, 3/4 teaspoon cumin and 1/8 teaspoon red-pepper flakes to the pot, and sauté until paste darkens, about 1 minute. Add turkey, garlic, ginger and 1 teaspoon salt, and sauté, breaking up the meat with your spoon, until turkey is browned in spots, 4 to 7 minutes.
  • Add stock and beans, and bring to a simmer. Let simmer until the soup is thick and flavorful, adding more salt if needed, 15 to 25 minutes. If you like a thicker broth, you can smash some of the beans with the back of the spoon to release their starch. Or leave the beans whole for a brothier soup.
  • Add the greens to the pot and simmer until they are very soft. This will take 5 to 10 minutes for most greens, but tough collard greens might take 15 minutes. (Add a little water if the broth gets too reduced.)
  • Stir herbs and lemon juice into the pot, taste and add more salt, cumin and lemon until the broth is lively and bright-tasting. Serve topped with a drizzle of olive oil and more red-pepper flakes, if desired.

9 cups canned low-salt chicken broth

1 28-ounce can diced tomatoes in juice

1 cup chopped celery
1 cup orzo (rice-shaped pasta)
2 15-ounce cans cannellini (white kidney beans), drained, rinsed
1/2 cup thinly sliced fresh basil

Steps:

  • Heat oil in heavy large pot over medium heat. Add onions and garlic; sauté until translucent. Add turkey wings, chicken broth and oregano. Cover; simmer over medium-low heat 1 hour.
  • Using tongs, transfer wings to work surface; cool. Remove meat from bones; discard skin and bones. Mix meat into soup. Bring to simmer. Add tomatoes with juices, carrots and celery.
