GARLIC, LEMON, AND HERB RUBBED LEGS
Steps:
- In a medium bowl stir together all ingredients except the chicken. Reserve 2 tablespoons of the mixture for the grilled flat bread. Add the chicken to the bowl, and toss with herb mixture so that all pieces are well coated. Cover and place in refrigerator for at least 2 hours and as long as overnight.
- Heat a grill or grill pan over medium heat. Be sure to oil grate when ready to start cooking. Let chicken stand at room temperature for 20 to 30 minutes before grilling.
- Place chicken on hot, oiled grill and cook for a total of 18 to 20 minutes giving it a quarter turn every 4 to 5 minutes. Transfer chicken to a platter and let rest for 5 minutes before serving.
MEDIEVAL ROASTED CHICKEN
Steps:
- Preheat the oven to 325 degrees F. Combine all ingredients together to prepare the marinade. Dip the whole chicken in the marinade. Cover chicken completely with marinade. Let sit for 4 to 5 minutes. Place chicken on a sheet pan. Cook for 50 minutes uncovered, or until the chicken is cooked through and the juices run clear.
CHICKEN AND TURKEY MARINADE
A 24 hour marinade, guaranteed to please every time. Chicken or turkey is always moist, and tender. Use half of a recipe for a chicken, or the full recipe for a turkey of up to 25 pounds. Everyone will clamor for this recipe!!! Use the drippings from the pan to make gravy as usual. It is not necessary to strain drippings first.

Steps:
- In a small bowl, whisk together the olive oil, soy sauce, lemon juice, and mustard. Stir in chives, sage, oregano, parsley, thyme, garlic, paprika, and herb seasoning. Cover, and refrigerate for 30 minutes to allow flavors to blend before marinating your favorite meat.
- Place turkey or chicken in a 30 gallon plastic kitchen bag. Pour marinade over the bird. Grasp the bag a few inches above the poultry, and press air from the bag. Seal with a twist tie. Rotate bag to coat turkey with the marinade. Marinate in the refrigerator 24 hours, repositioning the bag every 4 hours, or so. Remove poultry from bag before roasting, and transfer marinade to a saucepan. Boil marinade for a few minutes, then use to baste the turkey every 30 minutes, or so, while roasting. Discard any remaining marinade when turkey is done.

- Divide drumsticks between 2 large bowls or shallow dishes. In a smaller bowl, whisk remaining ingredients until blended. Add 3/4 cup marinade to drumsticks, dividing evenly between the bowls. Turn to coat. Cover and refrigerate 8 hours or overnight. Cover and refrigerate remaining marinade., Preheat oven to 375°. - Mix the first 6 ingredients. Reserve 1-1/3 cups for basting; cover and refrigerate. Pour remaining marinade into a large baking dish. Add drumsticks and turn to coat. Cover and refrigerate 8 hours or overnight., Drain turkey, discarding marinade. Place turkey on greased grill rack. Grill, covered, over indirect medium heat, 40-45 minutes or until a thermometer reads 175°,. Turn drumsticks occasionally throughout cooking. Baste often with reserved marinade during the last 10 minutes. Let stand 15 minutes; garnish with green onions.

RENAISSANCE FESTIVAL TURKEY LEGS
The title says it all. You can use any chicken seasoning, like McCormick Montreal Chicken Spice Grill Mates. I use a chicken barbecue spice rub that is local here. You can also replace the barbecue sauce with a grilling sauce like McCormick Mesquite Grilling Sauce Grill Mates. I just happen to prefer to use what I already have around. One more thing, it is probably best to finish the legs off in a smoker, but of course must of us only have a grill. You can always add wood chips to the grill and get the same effect. Either will do fine!

Steps:
- Pat turkey legs dry with a paper towel. You can also remove the skin to cut back on the cholesterol and fat.
- Mix 3 tbsp barbecue chicken spice blend, 1/2 cup vinegar, and 3 cups water in a pan or bag and marinate legs for 6 hours, turning once.
- Drain off 1/2 liquid, and salt lightly with more barbecue chicken spice blend (about 1 tablespoons.).
- Cover pan with aluminum foil and bake for 40 minutes at 350°F Turn legs over at 20 minutes.
- Heat grill and and transfer turkey legs when bake time is done.
- Brush on the barbecue sauce during the last 7 minutes of the grilling process; turn over legs and brush on the other side.
- Cook until a desirable brown.
