1/2 cup orange juice
3 tablespoons red wine vinegar
3 tablespoons sesame oil
2 tablespoons minced fresh chives
1/4 teaspoon salt
1/4 teaspoon coarsely ground pepper
SALAD:
4 cups cubed cooked turkey
4 teaspoons curry powder
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
1 large apple, chopped
1 cup green grapes, halved
3 cups fresh arugula or baby spinach
1 can (11 ounces) mandarin oranges, drained
1/2 cup chopped walnuts
1/2 cup pomegranate seeds

Steps:

  • For dressing, whisk together first 6 ingredients., Place turkey in a large bowl; sprinkle with seasonings and toss to combine. Stir in apple and grapes. Add arugula and mandarin oranges. Drizzle with dressing; toss lightly to combine., Sprinkle with walnuts and pomegranate seeds. Serve immediately.

2 tablespoons cider vinegar
1 tablespoon Dijon mustard
1/2 teaspoon lemon-pepper seasoning
SALAD:
6 to 8 cups watercress or torn romaine
1 medium carrot, julienned
10 cherry tomatoes, halved
8 ounces sliced deli smoked turkey, cut into strips
4 medium apples, sliced
1/3 cup chopped walnuts, toasted

Steps:

  • Whisk together first four ingredients. , Place watercress on a platter; top with carrot, tomatoes, turkey and apples. Drizzle with dressing; top with walnuts. Serve immediately.

1-1/2 teaspoons curry powder, divided
1/4 teaspoon salt
1/2 pound turkey breast tenderloins, cut into 1/2-inch pieces
1 teaspoon olive oil
1/4 cup unsweetened apple juice
1/4 cup sour cream
1/4 cup mayonnaise
1/4 teaspoon ground cinnamon
1 cup diced peeled tart apple
1/4 cup raisins
2 flour tortillas (8 inches), room temperature
2 lettuce leaves

Steps:

  • In a large resealable plastic bag, combine 1 teaspoon curry and salt. Add turkey, a few pieces at a time, and shake to coat. In a small skillet, cook turkey in oil over medium heat until no longer pink. Cool slightly., In a blender, combine the apple juice, sour cream, mayonnaise, cinnamon, turkey and remaining curry; cover and process until blended. Stir in apple and raisins. Spread over tortillas; top with lettuce. Roll up tightly.

1 cup diced cooked turkey
3/4 cup chopped unpeeled apple
1/2 cup sliced celery
2 tablespoons raisins
1/3 cup Italian salad dressing
1 tablespoon brown sugar
salt and pepper
shredded lettuce or cabbage

Steps:

  • In a bowl, mix together the first 4 ingredients; set aside.
  • In a small bowl, stir together the salad dressing and brown sugar; pour over the turkey mixture and gently toss.
  • Season with salt and pepper to taste.
  • Cover and chill for at least 2 hours.
  • Serve on a bed of shredded lettuce or cabbage or use to make sandwiches.

1 teaspoons sugar
0.25 teaspoons salt
0.125 teaspoons black pepper
0.5 cups olive oil
16 ounces turkey cutlets
12 cups salad greens
2 units apples
0.333333333333 cups walnuts

Steps:

  • Heat grill or broiler. In a small bowl, whisk vinegar, mustard, sugar, salt, and pepper. Slowly whisk in olive oil until smooth. Set aside 1/2 cup of the dressing.
  • Brush the turkey with 1/4 cup of the dressing. Grill or broil 3 minutes per side until cooked through. Set aside.
  • In a large bowl, toss together the salad greens, apples, walnuts, and the reserved dressing. Divide salad among 4 plates. Slice cutlets into 1/2 inch wide strips and divide among plates.

2 apples, cored and diced
2 cups celery, thinly sliced
3 tablespoons fresh parsley, finely minced
1/4 cup dried tart cherries or 1/4 cup dried cranberries
2 cups watercress, washed and dried thoroughly
3 tablespoons olive oil or 3 tablespoons grapeseed oil
2 tablespoons fresh lime juice
salt, to taste
cracked black pepper, to taste
lime wedge
toasted slivered almonds (optional)

Steps:

  • In a large bowl combine the turkey, apples, celery, parsley and dried fruit.
  • Arrange the watercress on a large serving platter.
  • Whisk together the dressing ingredients and pour over the turkey/apple mixture.
