TUNA WALDORF SALAD
Use this filling for sandwiches or to make tuna puffs. Fancy enough for company and special occasions. Easy enough for everyday. Canned chicken also works well in this recipe also.

Steps:
- Sprinkle Lemon juice over apples right after chopping.
- Mix together rest of ingredients.
- Use more mayonnaise if you want a creamier filling.
- Use as a filling for sandwiches or puffs.
- Note: For sandwiches I like to use the courser grained breads.
- For puffs use shells as for cream puffs.
- Serve either at room temperature or chilled.

TUNA SALAD
Steps:
- Brush the tuna steaks with olive oil, and sprinkle with salt and pepper. Place the tuna steaks in a very hot saute pan and cook for only 1 minute on each side. Set aside on a platter.
- Meanwhile, in a small bowl, combine the olive oil, salt, pepper, lime zest, wasabi, lime juice, soy sauce and hot sauce. Add the avocados to the vinaigrette.
- Cut the tuna in chunks and place it in a large bowl. Add the scallions and red onion and mix well. Pour the vinaigrette mixture over the tuna and carefully mix.

- In a large bowl, toss together apples and lemon juice. Add clery, raisins, walnuts and tuna; toss gently. In a medium bowl, combine mayonnaise, milk and cinnamon; blend well. (For a sweeter dressing add sugar.) Pour dressing over apple-tuna mixture; toss gently to coat.;
