2 English muffins, split, or 4 slices sourdough, rye, or whole wheat bread
2 tablespoons prepared mayonnaise (optional)
1 recipe Tuna Salad, recipe follows
1 cup shredded sharp farmhouse Cheddar cheese
Two 6-ounce cans white meat tuna packed in water, drained
2 tablespoons minced celery
2 tablespoons minced red onion, soaked in cold water for 5 minutes and drained
1 teaspoon minced flat-leaf parsley
1/3 cup prepared mayonnaise
1 tablespoon whole grain mustard
Freshly ground black pepper,
Freshly squeezed lemon juice, to taste (optional)

Steps:

  • Preheat the broiler and set the rack about 4 to 5 inches from the heat source.
  • Spread the bread out on a baking sheet and toast. Spread the toasted muffins or bread with the mayonnaise, if using. Top with the Tuna Salad and then the shredded cheese. Place the baking sheet under the broiler and heat for 3 to 5 minutes, until the cheese has melted. Serve immediately.
  • In a small mixing bowl break up the tuna with a fork. Toss with the celery, onion, and parsley. Add the mayonnaise, mustard, and season with pepper to taste. Stir to combine. Add lemon juice, if using.

2 cans low sodium tuna in water, drained and flaked
1/2 cup 125 mL shredded light old Cheddar cheese

Steps:

  • Cook broccoli,mushrooms and garlic in heated oil in a large non-stick skillet at medium-high heat for 3 minutes,stirring often. Remove vegetables and set aside.
  • Add broth to skillet and heat to a boil. Add rotini,reduce heat and cook at gentle boil until tender - about 15 minutes - stirring often. Do not drain.
  • Stir in soup,milk and pepper. Gently stir in tuna and reserved vegetables. Heat just to a boil,stirring occasionally. Sprinkle with cheese.

This is a recipe that I have been making for years. It's always a favorite. You can tweak the ingredients to your own tastes if you so choose. My brother likes to add minced onions to the saute. It's quick, it's easy & tastes great!

8 ounces angel hair pasta
1/2 lb bacon
1 (6 1/2 ounce) packet tuna in water, may use canned tuna drained
1 tablespoon garlic, minced
black pepper
parmesan cheese

Steps:

  • Fry the bacon in a pan. When bacon is done, drain on papertowels.
  • Keep the bacon grease in the pan. (Note: You can reduce the amount of bacon grease you use if you so choose, just keep enough so it doesn't get dry).
  • Put the tuna and garlic in the pan with the bacon grease and heat over medium heat - stirring occasionally. Do this for approximately 5 minutes.
  • Season with black pepper (optional).
  • Crumble the bacon strips and place back in the pan with the tuna & garlic.
  • Heat for another minute or two.
  • Boil your angel hair pasta.
  • When pasta is done put into a large bowl.
  • Transfer your bacon & tuna mixture from the pan into the bowl of pasta.
  • Toss all ingredients to incorporate all the flavors.
  • Sprinkle with parmesan cheese and serve.

We may never know if this story is true, but there's no doubt that the tuna melt has become a classic American diner food. This recipe adds chopped cornichons and whole-grain mustard for a satisfying crunch and vinegary element. Extra-sharp Cheddar is a must, and as with grilled cheese, the key to achieving perfectly melted cheese and golden bread is to toast the sandwich over medium-low heat. If you prefer an open-face tuna melt, skip the top piece of bread and place the sandwich on a sheet pan under the broiler until the cheese melts.

8 slices rye or sourdough bread, cut 1/2-inch thick
8 sandwich slices extra-sharp Cheddar (or 6 ounces shredded)

Steps:

  • Place the tuna in a medium bowl and flake with a fork. Add the mayonnaise, cornichons, red onion, lemon juice, dill (if using), mustard, salt and pepper. Mix well.
  • Depending on the size of your bread, spoon 1/3 to 1/2 cup tuna salad on each of four slices of bread, heaping it in the middle slightly. Divide the cheese among the sandwiches, tearing and arranging the cheese to fit neatly. Place a piece of bread on top of each and generously spread the top piece of each sandwich with about 1/2 tablespoon butter.

  • Meanwhile, spread the top of the each sandwich with another 1/2 tablespoon butter. Carefully flip the sandwiches, turn the heat to low, and cook for 3 to 4 more minutes, until the bottoms are browned and the cheese is melted. Repeat with the remaining two sandwiches and serve immediately.

3 cups corkscrew macaroni, uncooked
6 cups chicken broth
1 (10 ounce) can cream of mushroom soup, can use lowfat version
1 cup milk, any type
1 (6 ounce) can tuna, drained
1 stalk celery, minced
1 small onion, minced
2 teaspoons butter
1/4 cup frozen peas
6 ounces sharp cheddar cheese, shredded
2 cups potato chips, crushed

Steps:

  • Preheat oven to 350°.
  • Cook pasta in broth according to pasta package directions, less 2 minutes. Do not over cook. Drain. HINT: Drain cooked noodles over frozen peas to defrost.
  • While pasta is cooking:
  • 1) Melt butter over medium heat. Sauté celery & onions in butter until tender.
  • 2) In a bowl, combine soup, milk, tuna; stir to combine;
  • 3) Stir in cheese, add to noodles. Stir in peas.
  • Put in an 8x8 casserole.
  • Bake in a 350° oven until bubbly. Approximately 45 minutes. Cook longer if the sauce is not medium thick in consistency or desired consistency.
  • Top with crushed potato chips, bake for 5 more minutes.
