Stuffed Peppers With Tuna and Breadcrumbs image

These bell peppers are stuffed with a simple mixture of tuna and breadcrumbs. It's an easy baked stuffed pepper recipe with tuna.

4 green bell peppers
1 tablespoon onion (finely chopped)
1 cup bread crumbs (soft; divided)
1 egg (slightly beaten)
1/2 cup milk
Salt (to taste)
Black pepper (to taste)
1 teaspoon lemon juice (fresh)
1 (7 1/2-ounce) can tuna (flaked)
2 tablespoons butter (melted)
Optional: shredded cheddar, Swiss, or Parmesan cheese

Steps:

  • Gather the ingredients. Preheat the oven to 400 F.
  • Cut the bell peppers in half vertically and remove the stem, seeds, and white membrane.
  • Boil the pepper shells in salted water for 5 minutes. Drain well.
  • In a mixing bowl, combine the onion, 1/2 cup breadcrumbs, beaten egg, milk, salt and pepper, lemon juice, and tuna.
  • Fill the pepper shells with the breadcrumb mixture.
  • Mix the melted butter with the remaining 1/2 cup breadcrumbs; sprinkle over stuffed peppers. Place in a shallow baking dish and bake for 15 minutes. If desired, top with shredded cheese 5 minutes before the peppers are finished baking.
  • Serve and enjoy.

3 cups water
9 ounces piloncillo*
1 cup distilled white vinegar
1 2-inch piece canela** or cinnamon stick
1/4 teaspoon salt
6 large ancho chiles
1 pound red-skinned potatoes
1 pound 1-inch-thick ahi tuna steaks
1/2 cup olive oil
1/4 cup chopped white onion
3 tablespoons chopped fresh parsley
2 tablespoons whipping cream
2 tablespoons mayonnaise
1 tablespoon fresh lime juice
2 tablespoons apple cider vinegar
1 tablespoon chopped fresh cilantro
4 ounces mixed baby greens
1 large avocado, halved, pitted, peeled, cut into 12 slices

Steps:

  • Bring 3 cups water and piloncillo to boil in medium saucepan. Add white vinegar, canela, and salt; simmer until piloncillo has dissolved, stirring often, about 1 minute. Remove from heat. Add chiles and soak until softened, occasionally pressing to submerge, about 1 hour; drain. Pat chiles dry; slit lengthwise and remove seeds.
  • Cook red-skinned potatoes in pot of boiling salted water until skewer easily pierces centers, about 35 minutes. Drain. Cool, peel, and cut potatoes into 1-inch cubes.
  • Prepare barbecue (medium-high heat). Season tuna with salt. Grill until light brown at edges but pink in center, about 3 minutes per side. Cut tuna into 1-inch cubes. Whisk together 1/4 cup oil and next 5 ingredients in large bowl. Fold in potatoes and tuna. Season with salt. Fill chiles with tuna-potato mixture.
  • Whisk remaining 1/4 cup oil, apple cider vinegar, and cilantro in medium bowl. Season with salt. In large bowl, toss greens with 2 tablespoons vinaigrette to coat. Divide salad among plates. Top with chiles and avocado slices; drizzle with some of remaining vinaigrette.
  • *Mexican raw sugar shaped into hard cones. Smaller chunks are sometimes labeled panocha. If neither is available, substitute and equal weight of packed dark brown sugar.
  • **Mexican cinnamon sticks with a delicate, floral flavor.

8 Anaheim chiles, charred, stemmed and seeded, left whole for stuffing (see Cook's Note)
Two 6-ounce cans albacore tuna in water, drained
1 cup fresh peas (from 1 pound in the shell), or canned or thawed frozen peas
1/2 cup fresh corn kernels (from 1 ear), or canned or thawed frozen corn
3 tablespoons mayonnaise
Kosher salt and freshly ground black pepper
One 14.1-ounce can carrots in jalapeno pickling juice

Steps:

  • Put the chiles in a 9-by-13-inch glass baking dish and set aside for stuffing.
  • Combine the tuna, peas, corn and mayonnaise in a small bowl. Season with salt and pepper.
  • Stuff the peppers with the tuna mixture. Place back in the baking dish; they should fit snugly. Pour the pickled carrots and jalapeno juice over the stuffed chiles. Let come to room temperature, then cover and chill for 2 hours or overnight. Serve cold.

4 large green bell peppers
1 cup raw long grain rice, cooked according to package directions and seasoned to taste
1 (6 ounce) can chunk light tuna packed in oil, drained
1 small onion, finely chopped
1 (10 ounce) package frozen corn kernels, thawed
1/2 cup finely chopped fresh mushrooms
salt
pepper
paprika
1 ripe tomatoes, peeled, seeded, and finely chopped
1/2 cup shredded sharp cheddar cheese
3 cups hot water

Steps:

  • Cut a wide circle around the stems of the peppers; lift off the lids and discard.
  • Scoop out and discard seeds and membranes; trim the bottoms of the peppers so they will stand up straight and not tilt over; arrange peppers in a 2 quart casserole dish.
  • In a mixing bowl, mix together the rice, tuna, onion, corn, mushrooms, salt, pepper, and paprika to taste.
  • Stuff equal amounts of the tuna mixture into the peppers; spoon equal amounts of chopped tomato over the mixture and sprinkle with cheese.
  • Pour hot waer around the peppers;.
  • Bake in a 350 degree oven for 30-35 minutes or until the tops are golden.
  • Carefully lift peppers out of the casserole using a slotted spoon and place on individual plates.

Bright red piquillo peppers from Spain come packed in a tin or jar. The little peppers are roasted and peeled, ready to be used. They can have any number of fillings, but tuna (high-quality tinned tuna) is a clear favorite. Tapas bars often have them stuffed with garlicky salt cod or slices of sheep's milk cheese.

1 (6- to 7-ounce) jar high-quality Spanish or Italian tuna
1 tablespoon small capers or roughly chopped large capers
2 tablespoons chopped parsley
1 teaspoon chopped mint
1/4 cup celery, tender center stalks and leaves
1/2 cup finely diced red onion or chopped scallions
Salt and pepper
1/2 teaspoon red-pepper flakes, or to taste
1 teaspoon lemon zest, plus 2 tablespoons lemon juice (from 1 lemon)
3 tablespoons extra-virgin olive oil
12 piquillo peppers, from a jar
Lettuce leaves, for garnish (optional)
Hard-boiled eggs, cooked for 8 minutes, for garnish (optional)

Steps:

  • Drain the tuna and put it in a medium mixing bowl. Use a fork to break tuna into large flakes and push to one side of the bowl.
  • Put capers, parsley, mint, celery and onions on the other side of the bowl and season to taste with salt and pepper. Add red-pepper flakes, lemon zest, lemon juice and olive oil, then stir the mixture to coat tuna well.
  • Use a teaspoon to fill each pepper with some of the tuna mixture.
  • Arrange stuffed peppers on lettuce leaves on a platter. Garnish with quartered or halved hard-cooked eggs sprinkled with salt. Serve at cool room temperature.

2 Tbsp. KRAFT Zesty Italian Dressing
2 large tomatoes, seeded, chopped
1/2 cup chopped onions
1 cup chopped fresh parsley, divided
3 cans (5 oz. each) white tuna in water, drained
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Place peppers in medium bowl. Add enough boiling water to cover peppers; let stand 10 min. or until peppers are tender. Drain peppers; cool.
  • Meanwhile, heat dressing in medium skillet. Add tomatoes, onions and 3/4 cup parsley; cook 5 min. Stir in tuna; cook 15 min. or until liquid is absorbed, stirring occasionally. Stir in remaining parsley.
  • Make lengthwise cut in side of each of 6 peppers; remove and discard seeds. Fill peppers with tuna mixture. Remove stems and seeds from remaining peppers; place in blender. Add sour cream; blend until smooth. Spoon over stuffed peppers.
