CREAMY TUNA PIE
This is from a magazine promo advertising Sirena Tuna - there are lots of things you can alter to your own taste eg. change the herbs or use lite cream or 1/2 milk and 1/2 cream like I did .

TUNA PIE
This is a change from the traditional tuna casserole. The cheese-flavored crust is similar in texture to a graham cracker crust, perhaps a bit firmer, with a slightly crunchy crumb topping, and the tuna filling is somewhat like a quiche flavored with sour cream and dill. I got the recipe from an old Penzey's catalogue. See the bottom of the recipe for a suggestion on making a smaller pie for less servings.

Steps:
- Preheat oven to 400.
- Butter a 10" deep dish pie pan (or spray well with non-stick spray).
- In a medium bowl, combine flour, 1 cup cheese, salt and paprika.
- Cut the butter into chunks and mix or rub with your fingers into the flour mixture until coarse crumbs are formed.
- Reserve 1 cup of the mixture and press the rest into the bottom and up the sides of the prepared pie pan.
- Arrange the drained tuna on the crust.
- Beat the eggs with a mixture until light and fluffy.
- Stir in the sour cream, the remaining 1/2 cup cheese, the mayonnaise, bell pepper, onion, and dill weed.
- Pour the mixture over the tuna and sprinkle with the reserved crumb mixture.
- Bake for 35 to 40 minutes.
- Let stand 15 minutes before cutting and serving.
- Note: I have made this recipe in a 8" pie pan using 2/3 of the recipe ingredients for fewer servings, with excellent results.

Steps:
- 1. Preheat the oven to 450 degrees. In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook, stirring often, until softened, about 5 minutes. Add the mushrooms and cook, stirring occasionally, until they've released and absorbed most of their juices, about 5 minutes.
- 2. In a large bowl, combine the tuna and mayo, breaking up the tuna. Stir in the onion-mushroom mixture, then stir in two-thirds of the cheese.
- 3. In a small bowl, whisk together the milk, eggs, flour and butter; stir in the tuna mixture. Transfer to a 10" deep-dish pie pan and bake until browned, about 35 minutes. Top with remaining cheese and broil until the cheese has melted.
- *One thing I would add is a thinly sliced layer of tomatoes on top, then top that with the remaining cheddar cheese. It just doesn't seem like a tuna melt without the tomatoes!

TUNA SHEPHERD'S PIE
This was my mother's version of tuna casserole. The flavors blend as it bakes, and it's very different, and very delicious. Everyone I've ever served it to has loved it. I usually serve it with hot rolls and carrot and celery sticks (I even like it with whole berry cranberry sauce, but that could be what I'm used to from my childhood). Anyway, I really love this stuff.

Steps:
- Preheat the oven to 350 and spray an 8x8" or 2 quart baking dish well with non-stick spray.
- Using a colander, run the peas and carrots under hot water until separated and somewhat thawed; set aside.
- In a bowl, flake the tuna well.
- Add the mushrooms (if using) and the peas& carrots and toss together.
- Add the mayonnaise and mix gently, but well; you don't want this too mayonnaisy; just enough to be able to bind the ingredients together.
- Add salt and pepper to taste (you may not need too much salt as the tuna is salty to begin with).
- Pat the tuna mixture into pan firmly and top evenly with the mashed potatoes.
- With the back of a soup spoon, make little waves over the top of the potatoes by pressing the back of the spoon into the potatoes to make an indentation and then twisting up to make a little rising swirl; by doing this you get little peaks all over the top which brown nicely as it bakes and makes a great looking topping-- if the potatoes are hard to spread, warm them up a bit.
- Sprinkle the top with paprika and bake for about 35 minutes, or until heated through, filling is bubbly around the edges, and the top is nicely golden brown.
- Slice into squares and serve.
- Note: The potatoes should be made with some butter or margarine as it makes for a better texture and helps it brown better.
