2 pounds very fresh tuna steak, cut 1-inch thick
4 tablespoons olive oil, plus extra for brushing
2 1/2 teaspoons kosher salt, plus extra for sprinkling
1/2 teaspoon coarsely ground black, plus extra for sprinkling
2 limes, zest grated
1 teaspoon wasabi powder
6 tablespoons freshly squeezed lime juice (3 limes)
2 teaspoons soy sauce
10 dashes hot sauce (recommended: Tabasco)
1 to 2 ripe Hass avocados, medium diced
1/4 cup minced scallions, white and green parts (2 scallions)
1/4 cup red onion, small diced

Steps:

  • Brush the tuna steaks with olive oil, and sprinkle with salt and pepper. Place the tuna steaks in a very hot saute pan and cook for only 1 minute on each side. Set aside on a platter.
  • Meanwhile, in a small bowl, combine the olive oil, salt, pepper, lime zest, wasabi, lime juice, soy sauce and hot sauce. Add the avocados to the vinaigrette.
  • Cut the tuna in chunks and place it in a large bowl. Add the scallions and red onion and mix well. Pour the vinaigrette mixture over the tuna and carefully mix.

A delicious pasta salad that tastes great with all the veggies in it. I substitute canned shrimp in place of canned tuna if I want to change it up a bit.

2 cups uncooked elbow macaroni
1 (6 ounce) can water-packed tuna, drained and flaked
⅔ cup chopped yellow bell pepper
⅔ cup chopped celery
½ cup shredded carrot
¼ cup sliced radishes
2 green onions, chopped
2 tablespoons minced fresh parsley
¾ cup mayonnaise
½ cup ranch dressing
¼ cup grated Parmesan cheese
1 ½ teaspoons ground black pepper
½ teaspoon salt

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • Meanwhile, combine tuna, bell pepper, celery, carrot, radishes, green onions, and parsley in a large bowl.
  • Drain macaroni and rinse in cold water. Drain again and add to the bowl with the tuna mixture.
  • Combine mayonnaise, ranch dressing, Parmesan cheese, black pepper, and salt in a small bowl. Pour dressing over salad and toss to coat. Refrigerate at least 2 hours before serving.

5 1/2 ounces elbow macaroni, uncooked
1/4 cup Italian dressing (prepared)
1 cup cucumber, thinly sliced
3/4 cup tomatoes, diced
2 tablespoons green peppers, chopped
2 tablespoons celery, diagonally sliced
6 1/8 ounces tuna, drained and flaked
1/2 cup mayonnaise
1 1/2 teaspoons prepared mustard
3/4 teaspoon dried dill weed
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook macaroni to desired doneness as directed on package.
  • Drain and rise with hot water.
  • In large bowl, combined hot macaroni and dressing and toss gently.
  • Add cucumbers, tomatoes, onions, green pepper, celery, and tuna. Mix gently.
  • In medium bowl, combine mayonnaise, mustard, dill, salt, and pepper and mix well.
  • Add to macaroni mixture and mix gently.
  • Cover and refrigerate at least 4 hours before serving.

From my MIL's recipe file on a hand-written card. My MIL didn't recognize the writing! It sounds good. The recipe says that it makes 18 sandwiches but may also be served as as a salad on a bed of lettuce. Note: cooking time is chilling time.

1 (13 ounce) can albacore tuna in water
8 ounces cottage cheese
2 ounces cheddar cheese, grated
1/3 cup celery, chopped
2 scallions, chopped
1/3 cup mayonnaise
1 large tomatoes, seeded and chopped
1 teaspoon lemon rind, grated

Steps:

  • Drain tuna and flake into a bowl.
  • Add all other ingredients and mix well.
  • Chill for at least 2 hours before serving.
  • Serve on bread of choice for a sandwich or on a bed of lettuce as a salad.

1/4 red onion, chopped
1/2 teaspoon freshly grated lemon zest
Juice of 1/2 lemon
1 teaspoon kosher salt
Freshly ground black pepper
3 tablespoons extra-virgin olive oil
4 medium radishes, thinly sliced
1 rib celery, chopped
1/2 kirby cucumber with skin, chopped
1 medium ripe tomato, diced
1/4 cup chopped fresh herbs, such as fresh flat-leaf parsley, dill, and/or basil
3 cups mesclun salad greens
1 (6-ounce) can water-packed tuna, drained

Steps:

  • Mellow the harsh taste of the raw onion by soaking it in cold water for about 10 minutes.
  • Meanwhile, put the lemon zest, juice, salt, and pepper in a large bowl. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick vinaigrette. Add the radishes, celery, cucumber, tomato, herbs and greens. Drain the onion and add to the salad. Add the tuna and toss again, keeping the tuna in nice even pieces.
  • Divide between two plates and serve.

1 (6 ounce) can tuna, drained (water packed)
1 medium carrot, chopped
1 celery rib, chopped
1/2 cup reduced-fat monterey jack cheese, cubed
1/4 cup frozen peas, thawed and drained
1/4 teaspoon dried parsley
1/3 cup reduced-fat Italian salad dressing
2 pita bread rounds, halved
lettuce
tomatoes, slices

Steps:

  • Place tuna in a large bowl; break into chunks.
  • Add carrot, celery, cheese, peas and parsley; toss to blend.
  • Pour dressing over mixture; toss lightly to coat.
  • Place on piece lettuce and one tomatoe slice in each pita half.
  • Fill pita halves with tuna mixture.

1 6-ounce can water-packed tuna, drained, flaked
1 large tomato, chopped
1 medium cucumber, peeled, seeded, chopped
1 small red bell pepper, chopped
1/2 cup chopped green onions
2 celery stalks, chopped
4 ounces (about 1 cup) small shell pasta, freshly cooked
6 tablespoons (or more) prepared ranch-style salad dressing
3 tablespoons chopped fresh dill or 1 tablespoon dried dillweed

Steps:

  • Combine first 6 ingredients in large bowl. Mix in pasta. Add dressing and dill and blend well. Season salad to taste with salt and pepper. (Salad can be prepared 2 hours ahead. Cover and refrigerate.) Adjust salad with more dressing if desired and serve.

6 tablespoons lime juice or 6 tablespoons lemon juice
2 teaspoons soy sauce, go with less if using Nama Shoyu
10 dashes Tabasco sauce
1 -2 ripe avocado, medium diced
1/4 cup red onion, small diced
1/4 cup minced scallion

Steps:

  • Brush the tuna steaks with olive oil, and sprinkle with salt and pepper. Place the tuna steaks in a very hot saute pan and cook for only 1 minute on each side. Set aside on a platter.
