TUNA MACARONI CASSEROLE

Tuna Macaroni Casserole image

This is the only tuna mac recipe I have made for over 20+ years. If you like a tuna casserole then just make it! You'll be glad you did. I promise.

Provided by Pot Scrubber

Categories     One Dish Meal

Time 50m

Yield 8 serving(s)

Number Of Ingredients 12

8 ounces elbow macaroni (can also use 1/2 a package of spaghetti noodles broken into thirds)
1/2 cup chopped celery (optional but nice)
1 (10 ounce) can cream of celery soup
1/2 cup whole milk
4 tablespoons mayonnaise
1 teaspoon dry mustard
1 cup shredded cheese (plus a handful more to sprinkle on top if you want)
10 ounces tuna, well drained and squeezed dry (two five ounce cans of tuna)
4 tablespoons of minced jarred roasted red peppers or 4 tablespoons of jarred pimientos
1/2 cup breadcrumbs (or 1 cup of panko crumbs are REALLY nice if you have them on hand)
4 tablespoons margarine
1 teaspoon paprika

Steps:

  • Cook and drain macaroni. If using the optional chopped celery, boil it with the pasta.
  • In a bowl blend together the soup, milk, mayo, and dry mustard.
  • Stir in cheese, tuna, and pimiento.
  • Gently fold in macaroni/spaghetti and transfer into a 2 quart 8X8 inch casserole dish.
  • Combine crumbs, butter, and paprika and sprinkle evenly on top.
  • Bake uncovered at 350 for 30-35 minutes or so. When the crumbs are a pretty color and the juices are bubbling around the edges your casserole is done.

TUNA CASSEROLE

Tuna Casserole image

Break out a family favorite: tuna casserole. The traditional comfort food is great for serving large groups. In our tuna casserole recipe, we cut the sauce with chicken broth, but there's enough milk to make this casserole feel indulgent.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes

Time 1h

Number Of Ingredients 11

Coarse salt and ground pepper
3/4 pound tubetti or elbow macaroni
1 cup panko (Japanese breadcrumbs)
1/2 ounce Parmesan, grated (2 tablespoons)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 yellow onion, diced small
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1 1/2 cups whole milk
2 cans (6 ounces each) solid light tuna packed in water, drained and flaked
1 cup frozen peas, thawed

Steps:

  • Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
  • In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
  • Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
  • Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

  • Preheat oven to 350 degrees. Cook macaroni al dente and set aside. Meanwhile, melt butter in a large skillet over medium heat, add onions and peppers and cook until soft. This should take about 2-3 minutes. Whisk in flour, salt and pepper. Stir until smooth. Add milk and soup and cook over low heat until the sauce begins to thicken. Stir in the cooked macaroni, tuna, peas, and 1/2 of the cheese. Stir until everything is thoroughly coated. Turn off the heat. Pour the mixture into a 2 qt. buttered casserole. Top with the remaining cheese and bread crumbs. Bake until the casserole is hot and bubbly and the top is golden brown, about 35 minutes.
  • To freeze: Prepare the casserole until the baking stage. Place in a freezer friendly casserole dish (I love the foil ones from Dollar Tree). Cover with multiple pieces of foil, seal tightly and store in the freezer for up to 3 months. To cook, defrost in your fridge overnight. Bake at 350 for 35-45 minutes, adding time as needed. To bake from frozen, you will need to bake for approximately 1 hour 15 minutes, checking every 10 minutes or so towards the end. Please note that you should not put a frozen glass casserole dish into a hot oven as it could crack.
