1 (16 ounce) package cavatappi (corkscrew macaroni)
1 cup mayonnaise
3 tablespoons lemon juice
2 tablespoons honey
½ tablespoon garlic powder
salt and ground black pepper to taste
2 (8 ounce) cans tuna, drained
3 stalks celery, sliced
1 red onion, diced
1 cup peas
¼ cup chopped fresh parsley
½ cup chopped green olives
1 teaspoon lemon juice, or to taste
4 hard-boiled eggs, halved

Steps:

  • Bring a large pot of lightly salted water to a boil; cook cavatappi at a boil until tender yet firm to the bite, 9 to 10 minutes. Drain and transfer to a large bowl.
  • Whisk mayonnaise, 3 tablespoons lemon juice, honey, garlic powder, salt, and pepper for dressing together in a medium bowl. Set aside.
  • Stir tuna, celery, onion, peas, parsley, olives, and 1 teaspoon lemon juice into pasta. Pour dressing over salad, toss until coated, and add hard-boiled eggs on top. Serve.

2 tuna steaks (8 ounces each), cut into 1/2-inch cubes
4 tablespoons olive oil, divided
2 tablespoons lemon juice
1/4 teaspoon dried oregano
1/4 teaspoon minced garlic
1/8 teaspoon salt
1/8 teaspoon pepper
1 medium cucumber, peeled and chopped
1 small red onion, thinly sliced and separated into rings
1/3 cup halved pitted Greek olives
1 large tomato, cut into wedges
1 cup (4 ounces) crumbled feta cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large skillet, saute tuna in 1 tablespoon oil until fish flakes easily with a fork; cool. , In a jar with a tight-fitting lid, combine the lemon juice, oregano, garlic, salt, pepper and remaining oil; shake well. , Drain pasta and rinse in cold water. , In a large salad bowl, combine the pasta, tuna, cucumber, onion, olives, tomato and feta cheese. Hands-down this is The Best Tuna Pasta Salad I've ever had! It's a cold pasta salad with Mediterranean flavors and features whole chunk light tuna (packed in water), peas, celery, green onions, tomatoes, kalamata olives, pepperoncini and parsley.

2-1/2 tablespoons red wine vinegar
1-1/2 tablespoons dried oregano
1 teaspoon dried basil
1 tablespoon fresh lemon juice, plus more to taste
2 garlic cloves, minced
2 tablespoons Parmesan cheese (optional)
1/4 teaspoon freshly ground black pepper, plus more to taste
1-1/2 cups good extra-virgin olive oil
4 cups gluten-free rigatoni noodles (cooked al dente)
2 (5 ounce) cans whole chunk tuna (packed in water )
3/4 cup frozen peas
1/2 cup celery, chopped
4 green onions, finely sliced (white and light green parts only)
2 medium tomatoes, chopped
1 cup kalamata olives, sliced
1/4 cup pepperoncini, sliced
1/4 cup fresh flat leaf parsley, coarsely chopped
3/4 cup Best Foods Mayonnaise (add more as needed)
5 tablespoons Italian Vinaigrette (use your favorite bottled brand or try my recipe for Italian Vinaigrette)

Steps:

  • In a large pot of salted boiling water, cook pasta according to the package directions or until al dente, rinse under cold water and drain.
  • Place the peas in a colander and pour boiling water over them. Drain and set aside to cool.
  • In a small bowl whisk the mayonnaise and Italian Vinaigrette until well blended. (If you don't have bottled Italian dressing and don't want to make a large batch of fresh dressing, you can whisk the mayonnaise with 3 tablespoons extra-virgin olive oil, 2 tablespoons lemon juice, 1 teaspoon dried oregano and 1/4 teaspoon dried basil)
  • Place the tuna in a large bowl. With a fork, break up the tuna.
  • Add the pasta, celery, green onion, and peas. Pour the mayonnaise dressing over the ingredients and gently toss to coat the ingredients well. Mound on a platter and top with the chopped tomatoes, kalamata olives, parsley and pepperoncini.
  • Toss all ingredients together just before serving so the tomatoes won't get soggy.
  • Combine the vinegar, oregano, lemon juice, garlic, Parmesan cheese, and pepper in a medium bowl and whisk to combine the ingredients.
  • Set aside for 5 minutes to marinate the oregano and basil.
  • Add the olive oil in a slow thin stream, whisking constantly to combine.
  • If you're in a hurry, just add all of the ingredients to a glass jar with a lid and shake to combine.

3 tablespoons freshly squeezed lemon juice
1/4 cup olive oil
2 tablespoons plain yogurt
1/2 teaspoon Dijon mustard
1/4 teaspoon garlic powder

1 tablespoon chopped parsley

Steps:

  • Whisk together the vinaigrette ingredients.

1 (8 ounce) package rotini pasta (rotini pasta preferred, tri-color fun for summer) or 1 (8 ounce) package elbow macaroni noodles (rotini pasta preferred, tri-color fun for summer)
1 cup mayonnaise
1/2 cup Italian dressing (I think Good Seasons is superior to Wish Bone)
1 tablespoon prepared yellow mustard
2 tablespoons fresh dill weed, chopped fine or 1 tablespoon dried dill weed
2 cups cucumbers, peeled, halved lengthwise, seeded, then each half cut in two lengthwise again and then sliced thinly
1/2 cup green pepper, diced
1/4 cup scallion, chopped
2 celery ribs, chopped
1 teaspoon salt
1/4 teaspoon ground black pepper
2 (7 ounce) cans albacore tuna in water, well drained by pressing lid hard on tuna while holding can upside down over sink (Costco Solid White Albacore tuna is wonderful! Bumblebee albacore in water second)

Steps:

  • Prepare macaroni or pasta as directed on package. Combine mayonnaise, Italian dressing, mustard, and dill. Add pasta to dressing and mix well. Place vegetables and tuna in salad bowl. Sprinkle with salt and pepper. Add pasta and dressing mixture and toss all ingredients gently. Refrigerate, covered, at least 4 hours before serving.
  • NOTES: Good Seasons Italian salad dressing makes an easy, wonderful marinade for chicken on the grill. Place chicken pieces in Ziploc bag with ½ cup salad dressing for at least one hour. Be careful, remembering that the dressing is made with salad oil and will flare up at first as the oil ignites. It can also be used dry as a rub.
  • Good Seasons salad dressing is becoming harder to find as Kraft Foods moves toward higher end premium dressings.

1 cucumber, peeled seeded and diced
1/2 teaspoon salt
2 cups elbow macaroni, uncooked
1 cup grape tomatoes, each cut in half
1/2 cup chopped red onion
1 (6 ounce) can albacore tuna, drained and flaked
3/4 teaspoon dill weed
1/4 teaspoon pepper
1/4 cup light sour cream
3/4-1 cup mayonnaise, use any amount to taste
1 tablespoon low-fat milk
salt, if needed to taste

Steps:

  • Sprinkle the diced cucumber with the 1/2 tsp of salt and let sit in a collander over a bowl for about 20 minutes to draw out the liquid. Shake off any extra liquid.
  • Meanwhile, cook the macaroni according to the package. Drain and rinse with icy cold water. Drain well.
  • Place the cooked, cooled macaroni in a large bowl.
  • Add the halved tomatoes, onion, tuna, dill, pepper and then the cucumbers that have been sitting in the salt.
  • Gently mix together.
  • Stir in the sour cream, mayonnaise, and milk. Mix everything well.
  • Chill for at least 2 hours.
  • Taste and add more salt if needed.

3 cup dried fusilli pasta (sub with farfalle bowtie pasta, penne pasta, macaroni is a great option.)
14 ounces canned tuna drained (sub with tuna packed in brine or spring water.)
½ cup light mayonnaise (sub with full-fat mayonnaise)
½ cup Greek yogurt
1 ½ cup cucumber chopped
1 tbsp rice wine vinegar
1 tbsp capers optional (substitute with kalamata olives, while they are exactly the same thing, it would do the job in this instance.)
1 cup red bell peppers chopped
¼ cup red onion chopped (substitute with chives green onions or shallots as it is milder in taste.)
1 tbsp fresh dillweed (substitute with dried dill but make sure to use half of the amount specified in the recipe card.)
Garlic salt to taste
Black pepper to taste
Red pepper flakes to taste

Steps:

  • Cook the pasta in salted boiling water according to the packet instructions, drain and rinse under cold water to stop it from cooking and set aside.
  • Prep the ingredients: while the pasta is boiling, chop the cucumber, red bell peppers, onions and set aside. Drain the tuna and measure out the rest of the ingredients.
  • To a large bowl, combine cooled cooked pasta, rice wine vinegar, garlic salt, red pepper flakes, black pepper, and mix to combine
  • Add chopped red bell pepper, cucumbers, onions, caper, drained tuna, and mix to combine.
  • To a small bowl, combine Greek yogurt, mayonnaise, dill, and whisk until combine. pour it over the salad and mix all to combine. Taste test and adjust seasoning accordingly.Serve immediately or store in the fridge for up to 30 minutes for the flavors to develop before serving. Enjoy!

  • Place your eggs in a medium saucepan. Add water into the saucepan until the eggs are covered by about 1/2 inch. Add in the 1/4 tsp of salt. Place a lid on the saucepan and turn up heat and bring to a boil.

  • Make the vinaigrette first, so the flavors have a little time to blend. In a bowl or jar, combine the olive oil, red wine vinegar, lemon juice, oregano, salt, and pepper. Whisk the ingredients together, or close the jar and shake until combined. Set the vinaigrette aside.
  • If you want to soften the flavor of the red onion a bit, slice it then soak the slices in ice water for about five minutes before dicing. Otherwise, finely dice the red onion, cut the cucumber into quarter rounds, slice the tomatoes in half, and roughly chop the parsley.
  • Combine the cucumber, tomato, onion, and parsley in a bowl. Pour the vinaigrette over top, then stir until the vegetables are coated.
  • Rinse and drain the beans, and drain the tuna. Add the beans, tuna, and feta to the salad, then gently stir to combine. These three are added last and only gently stirred to make sure the tuna remains in larger flakes instead of falling apart into tiny pieces.
