EZ BUT FANCY TUNA MOLD SPREAD APPETIZER
A tasty tuna spread made in a jello mold and perfect as a party appetizer. When I really want to dress it up, I chill spread in a fish mold then unmold and decorate with an olive slice for his eye, thinly-sliced radishes for the gills, and a cute green pepper smile! (I prefer using white albacore tuna in water, but any kind of drained canned tuna will do.)

Steps:
- In saucepan, bring soup to boil and add cubed cream cheese.
- Remove from heat and stir until smooth,.
- Dilute gelatin with water. Stir into soup mixture.
- Stir in remaining ingrediemts and pour into mold that has been sprayed with Pam.
- Chill until set, about 3 hours.
- Invert mold on serving platter. (If it does not come out right away, run knife around edge of mold to help loosen, or run warm water around bottom of mold a few seconds).
- Serve with crackers and enjoy. (Leftovers keep for quite awhile if refrigerated.).

- Drain tunafish well, break into bite sized pieces and refrigerate.
- Dissolve gelatin in water, refrigerate until slightly thickened, add tunafish, onion or chives,pimiento and celery and pour into 4 individual molds.
- Refrigerate until firm, using 1/4 of recipe per serving, about 1/2 cup.

TUNA MOLD OR SPREAD
handed down and delicious...never told exactly what was a click, smidgen or dash....but have yet to make a bad mold...so I don't worry about it. You can skip the gelatin and make it a spread....same delicious taste and easy to serve on sandwiches or with crackers!

Steps:
- 1. Mix soup, water and gelatin completely - then heat soup mix on stove with cream cheese on medium. Stirring continuously until melted and well mixed. Set aside to cool.
- 2. Combine all other ingredients and add soup to the mix.
- 3. Pour in mold or bowl and refrigerate until set. Usually overnight.
- 4. Serve with crackers or in sandwiches. Delicious!
TANGY TUNA COCKTAIL
Here is a way to serve that standby, tuna, as a refreshing first course. Presenting it in handsome shells adds a touch of elegance. You might also serve the salad as a luncheon main dish for 3-4 people, adding hot garlic bread and iced tea. Deliciossso!!!

- Lighly mix tuna, eggs, pickles and radishes.
- In a small bowl blend mustard, lemon juice, vinegar, salt, and cayenne. Gradually stir in salad oil with a fork until dressing is well blended. Mix dressing lightly with tuna mixture. If you wish, cover and chill 30 minute to 2 hours to blend flavors.
- Serve tuna mixture a top shredded lettuce in shells or seafood cocktail dishes. Sprinkle with parsley. Garnish each serving with a lemon wedge.
- Good served with thinly sliced pumpernickle bread and butter.

- Flake tuna well and add mayo, tomato paste, and salt and pepper.
- Best if you mix in the food processor.
- Mix gelatin and boiling water.
- Add to tuna mixture, mixing well.
- Place in pretty bowl or fits perfectly in Tupperware mini jello mold.
- Refrigerate overnight.
- Turn out of mold onto bed of lettuce.
- Goes great with crackers or bread.

TUNA COCKTAIL MOLD
Steps:
- Bring cream cheese to room temperature. Drain tuna well. Mix all ingredients together.
- Press into a mold lined with plastic wrap so it will be easy to remove from the mold.
- Chill at least 8 hours. Decorate with parsley, olives, and red bell pepper. Serve with your favorite crackers.

- Chop up your defrosted tuna steak into about 1 cm cubes. Do the same with your avocado. Some people marinade the tuna before compiling the ring mold, however I really wanted the taste of the raw tuna to shine through, so the only extra seasoning will be from the Soy Sauce and the Ponzu.
- Place the ring mold on the plate and put down the avocado. Use the plunger to press it down and make it nice and tight. Sprinkle a tsp of everything bagel seasoning (or just some sesame seeds).
- Add the tuna atop the avocado and press down the plunger to compress. Take off the plunger and spoon over the ponzu and soy sauce trying to get some on all the tuna. Most of it will run down to the avocado/onto the plate. This is okay. Add some more sesame seeds and press again.
- Spoon around some of the basil vinaigrette. Remove the ring mold by holding the plunger down and slowly lifting the ring mold upwards. When it is removed you can take the plunger off the top of the tuna tartare stack. Garnish with some chopped Nori.
