TUNA PASTA

Tuna Pasta image

This is an emergency 'quickie' meal in my home. When time is short and I want to get something nutritious and tasty on the table fast, this is the meal I inevitably turn to as it is made with store-cupboard staples and everyone loves it.

Provided by evelynathens

Categories     Tuna

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 (9 1/4 ounce) can tuna, drained
1 (1 lb) can chopped tomato with juice
2 tablespoons olive oil
1 small onion, chopped
2 garlic cloves, minced
2 tablespoons fresh basil, minced (1 1/2 tsps) or 2 tablespoons dried basil (1 1/2 tsps)
red pepper flakes
3/4 lb of your favourite pasta, cooked al dente and tossed with 1 tblsp butter (we like to eat this sauce with pasta 'curls' so the little bits of tuna can get caught in the curls)
grated parmesan cheese, for the table

Steps:

  • Heat the olive oil in a small saucepan and add the onion; saute onion until it is translucent, 2-3 minutes, then add tomatoes and garlic; season to taste with salt, pepper and red-pepper flakes and boil over medium heat for 10-12 minutes until thickened somewhat; add basil and simmer 2 more minutes; add tuna, turn off heat and allow to 'sit' (flavours will blend) for 5 minutes.
  • This makes a very thick, flavourful sauce (you can thin with a little boiling water or some of the pasta cooking water if it's too thick for your liking).
  • Distribute pasta amongst 4 plates and top with sauce; pass grated parmesan cheese at the table or, alternatively, toss pasta and sauce together, then serve, passing grated cheese.
  • Note: If you don't want your sauce to be as 'chunky', you can puree the tomatoes before using.

FUSILLI WITH TUNA AND TOMATO SAUCE

Fusilli with Tuna and Tomato Sauce image

Provided by Giada De Laurentiis

Categories     main-dish

Time 1h45m

Yield 6 servings

Number Of Ingredients 17

1 pound fusilli
1 (26-ounce) jar Simple Tomato Sauce, recipe follows or other purchased marinara sauce
2 (6-ounces each) cans albacore tuna packed in oil, drained
1 tablespoon drained capers
1 teaspoon grated lemon peel
Salt and freshly ground black pepper
1 tablespoon chopped fresh Italian parsley leaves
1/2 cup extra-virgin olive oil
1 small onion, chopped
2 cloves garlic, chopped
1 stalk celery, chopped
1 carrot, chopped
Sea salt and freshly ground black pepper
2 (32-ounce) cans crushed tomatoes
4 to 6 basil leaves
2 dried bay leaves
4 tablespoons unsalted butter, optional

Steps:

  • Cook the pasta in a large pot of boiling salted water until tender but still firm to the bite, about 8 minutes.
  • Meanwhile, combine the tomato sauce, tuna, capers, and lemon peel in a heavy large skillet. Using a fork, break the tuna into chunks. Simmer to blend the flavors, about 5 minutes. Season with salt and pepper, to taste.
  • Drain the pasta, reserving 1 cup of the cooking liquid. Add the pasta to the sauce and toss to coat. Toss the pasta with enough reserved cooking liquid to moisten. Stir in the parsley and serve.
  • In a large casserole pot, heat oil over medium high heat. Add onion and garlic and saute until soft and translucent, about 2 minutes. Add celery and carrots and season with salt and pepper. Saute until all the vegetables are soft, about 5 minutes. Add tomatoes, basil, and bay leaves and simmer covered on low heat for 1 hour or until thick. Remove bay leaves and check for seasoning. If sauce still tastes acidic, add unsalted butter, 1 tablespoon at a time to round out the flavors.
  • Add half the tomato sauce into the bowl of a food processor. Process until smooth. Continue with remaining tomato sauce.
  • If not using all the sauce, allow it to cool completely and pour 1 to 2 cup portions into freezer plastic bags. This will freeze up to 6 months.

EASY SICILIAN STYLE TUNA PASTA

Easy Sicilian Style Tuna Pasta image

Deliciously simple, this Easy Sicilian Style Tuna Pasta is my easy peasy take on the traditional Italian dish of Pasta Puttanesca.

Provided by Eb Gargano

Categories     Main Course

Time 20m

Number Of Ingredients 11

25 g tin anchovy fillets in oil ((freeze any leftovers for next time))
2 tablespoons capers
4 tablespoons black olives (halved)
½ teaspoon dried chilli flakes ((or more if you love chilli!))
2 cloves garlic (sliced or crushed)
400 g tin chopped tomatoes
Black pepper
300 g penne pasta ((or whatever shape you prefer))
160 g tin tuna chunks or steak (drained)
Juice of half a lemon
Small handful of basil (chopped)

Steps:

  • Put the anchovies and a little of the anchovy oil in the pan and heat over a very low heat, breaking up the anchovies with a spoon.
  • Next, add the capers, olives, garlic and chilli to the pan. Cook everything, stirring regularly, for about 2 minutes, until the anchovies have dissolved completely and the garlic is cooked but not burnt.
  • Add the tin of tomatoes and black pepper and bring to the boil, then turn down to a gentle simmer, stirring occasionally.
  • Next, put your pasta on to boil. Cook the pasta until it is just al dente - this should take about 10 minutes.
  • When your pasta is about a minute away from being ready, add the tuna to the tomato sauce along with the lemon juice and half the basil. Stir and break up the tuna a little, but not completely.
  • Drain the pasta and tip it into the sauce, along with a tablespoon or two of the cooking water.
  • Stir everything together and serve scattered with the rest of the basil and a couple of extra twists of black pepper.

  • Add the olive oil from the tinned anchovies into a large skillet pan along with the anchovy fillets - cook them in the oil for a couple of minutes - use a wooden spoon to press them down so they cook into the oil quicker.
  • Add the tomatoes, tuna, olives, capers, dried garlic, oregano and basil, mix everything together and then cook over a medium heat until it's heated through properly. Season to taste with salt and black pepper.
  • Drain the pasta and return to the pan - tip in the tuna bolognese sauce and mix everything together.
