This easy peppermint tea mocktail is perfect for one or a large crowd. It's healthy and delicious.

Steps:
- Place the teabags, boiling water and honey (if using) in a jug and brew according to packet instructions. Remove the teabags and chill the tea in the fridge.
- Zest and juice the lemon.
- Place chilled tea, lemon zest and lemon juice in a jug. Stir well.
- Divide between 2 ice filled glasses and top with soda water.
- Garnish with extra lemon slices and serve.

- Cut lemongrass stalks in half lengthwise, then smash with the back of a knife. Place in a large saucepan, add 6 cups water, and bring to a boil. Reduce heat and simmer 5 minutes. Remove from heat, add tea bags and honey, and let steep 5 minutes. Strain into a pitcher. Stir in 2 cups cold water. Serve over ice with mint.
