- Preheat oven to 350°F.
- Combine 1/4 cup butter with parsley and mix well.
- Divide into 4 pieces.
- Place 1 piece inside the cavity of each fish.
- Rub fish with salt and pepper.
- Place in a single layer in an oven-proof casserole.
- Pour wine over the fish.
- Cover and cook for 20 minutes.
- Cut remaining butter into small pieces.
- Add butter and lemon juice to fish.
- Cover and cook for another 10 minutes.
- Serve hot or cold.

SPECKLED TROUT IN CAPERS AND WHITE WINE
Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
- Place trout in the middle of the aluminum foil; top with butter, lemon pepper, capers, and paprika. Pour cooking wine over trout. Close foil around the trout.
- Bake in the preheated oven until fish flakes easily with a fork, about 30 minutes. Garnish trout with parsley.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Arrange trout fillets in the baking dish. Mix white wine, Dijon mustard, garlic, lemon juice, dill, and lemon-pepper seasoning in a bowl; spread over the fillets, letting some run underneath the fish.
- Bake in the preheated oven until the fish is opaque and flakes easily, 10 to 15 minutes.

TROUT BAKED IN MILK
This recipe is from "Dolly's Favorite Recipes", a souvenir recipe pamphlet I bought while on an Alaskan cruise/land tour in May 1990 with my husband and father-in-law. This is from Dolly's House in Ketchikan, Alaska. Now a museum, in its heyday it was a colorful brothel and this was one of the favorite dishes served. This recipe had no quantities listed, so I've proposed some to pass the food.com recipe edits. So please, go with the quantities that make the most sense to you! It also called for a whole "carefully dressed" fish from which you remove the "head, fins and tail"; to make it simple for our modern markets, I've substituted a pound of trout fillets. Placed skin-side down in the baking pan, the skin will slide off easily after baking. I will try this next time with 2 tablespoons of capers baked in with the milk sauce.

- Prepare baking pan by buttering with 2 tablespoons of the butter.
- Combine salt, pepper, and flour in shallow dish. Dredge fish in flour mixture on both sides. Dot fish with remaining 2 tablespoons butter. Pour milk over and bake until tender, about 20 to 25 minutes.

- Place fish in a greased shallow 3-qt. baking dish. In a small bowl, combine the sour cream, cheese, lemon juice, onion and salt; spread over fish. Sprinkle with paprika. , Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork.

BAKED TROUT FILLETS
Steps:
- Preheat oven to 325 degrees F (165 degrees C). Arrange trout fillets in a large baking dish.
- Melt butter in a large skillet over medium heat; cook and stir green onion, parsley, and garlic until fragrant, 1 to 2 minutes. Stir in mushrooms and continue to cook until just softened, 1 to 2 minutes more. Add white wine, lemon juice, salt, and cayenne pepper. Remove from heat and gently stir in artichoke hearts; pour mixture over trout.
- Bake in preheated oven until fish flakes easily with a fork, about 20 minutes. Remove baking dish from oven and scatter tomatoes over fish.
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
- Return baking dish to oven and broil until fish is browned, 1 to 2 minutes more.

- Heat oven to 220C/200C fan/gas 7. Lay the trout over a lightly oiled baking tray and stuff the fish cavity with slices of lemon and herbs. Season generously all over and drizzle with the remaining oil.
- Bake in the oven for 20 mins until the fish is cooked through - the eyes will have turned white and the flesh will be soft to touch. The trout can be served as they are with your favourite seasonal vegetables, but for an added extra touch, peel away the top layer of skin and grate over fresh horseradish before serving.
