LIME JELLO SALAD
A favorite summertime (or anytime) jello salad of ours. Very refreshing. Great served as an accompaniment to a barbecue or a brunch.

Steps:
- Combine jello and hot water; stir until jello is dissolved.
- Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
- In another bowl, beat the cream cheese. Add pineapple, beating briefly.
- Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.
LIME JELLO SALAD
You will love this refreshing Lime Jello Salad. With only 5 ingredients (and water) it is so easy to make to serve a crowd.

Steps:
- Bring water to a boil and add Jello packet - while in pot. Mix well.
- In a separate bowl, blend cream cheese.
- Add dissolved Jello mixture to cream cheese in 3 batches, blending with a hand mixer between each addition. This is to help prevent lumps.
- Add 7 UP and mix by hand.
- Chill until mixture resembles egg whites or slime, about 30 - 60 minutes - this will vary depending on the temperature of the fridge, so check every 15 minutes or so.
- When the mixture is thick but soupy, add cool whip and mix well by hand.
- Add crushed pineapple and mix well.
- Pour mixture into a 9x13 serving dish or Jello mold.
- Chill till fully set.

- Drain fruit salad, reserving 3/4 cup juice.
- Combine dry gelatin mix and lime zest in medium bowl. Add boiling water; stir 2 min. until gelatin is completely dissolved. Stir in lime juice and reserved fruit salad juice.
- Pour 1-1/4 cups gelatin mixture into 8x4-inch loaf pan sprayed with cooking spray. Refrigerate 1 hour or until gelatin is set but not firm.
- Whisk sour cream into remaining gelatin mixture until blended; stir in fruit salad. Spoon over gelatin layer in pan.
- Refrigerate 4 hours or until firm. Unmold before serving.

- For the crumb: Combine the graham cracker crumbs, sugar, butter, coconut chips and lime zest in a bowl. Mix to combine.
- For the filling: Using an electric mixer, beat the cream cheese, heavy cream, powdered sugar, coconut extract and lime zest and juice in a large bowl until light and fluffy.
- Begin by layering 1/4 cup of the crumb in the bottom of each of 4 parfait glasses. Top each with 1/3 cup of the filling. Repeat the layers once more, then garnish with extra toasted coconut and lime zest.
TROPICAL FRUITY JELLO
To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe. Cook time is chilling time.

- In a heatproof jug, mix the jello powder with the boiling water until dissolved.
- Add the cold water and pineapple juice. Put in the fridge for about an hour, until starting to set but not set yet.
- Add the fruit, evenly scattered through the jello (if it immediately falls to the bottom, put it back in the fridge to set a little more).
- Put back in the fridge until completely set.

LIME JELLO SALAD
Congealed salads have long been a part of our family's holidays. This one was served first at my husband's parents' holiday table. It was such a hit with everyone, that it became the standard for our gatherings and continues today. So simple, my husband's aunt had given it to them and yet I found a way to simplify it more by using the blender. This is good even using the sugarfree Jello and lite cream cheese, etc. We love it and have even been known to have it for dessert or....breakfast!!!

Steps:
- Dissolve Jello in 1 Cup hot water.
- Break up cheese in hot Jello.
- Pour the cheese and Jello mixture into blender, blending until smooth.
- Add 1 1/2 Cups cold water, blend til smooth.
- Pour into 8" square Pyrex dish.
- Then add un-drained crushed pineapple.
- Add pecans.
- Cover with plastic wrap while chilling in the refrigerator.

LINDA'S LIME JELLO SALAD
This is an old recipe of my mothers, though I am not sure where it originated. I am not a fan of lime or even marshmallows really, but this stuff is dee-lish! I always serve it with Thanksgiving, Christmas and Easter dinner. When I cook birthday dinners for family, it is requested then as well.

- Pour lime jello in a 9x13 pyrex dish.
- Add 3 cups boiling water and stir until dissolved.
- While jello is still hot, stir in marshmallows and cream cheese pieces.
- CHILL FOR ONE HOUR.
- Whip cream until stiff.
- Drain pineapple.
- Remove jello from fridge, fold in pineapple, walnuts and whipped cream until well blended.
- Chill for 3-6 hours or overnight.
