Not the pudding that we know, this is a yummy combination of fruit. This is a recipe from a Guyana website. Enjoy!

Steps:
- Preheat oven to 400°F
- Peel the bananas and cut lengthwise in half.
- Arrange in a greased or nonstick pie dish.
- Add sugar to the orange juice and stir until dissolved. Pour over bananas.
- Sprinkle with coconut and bake until the fruit is soft and coconut is brown, about 15 to 20 minutes (the recipe didn't state baking time, so I'm not sure of the exact time).

Steps:
- Place Twinkie halves in a 13" x 9" dish. Layer with vanilla pudding, banana slices, crushed pineapple, coconut, and whipped topping. Garnish as desired (toasted coconut and cherries works well). Serve chilled.

LIGHT TROPICAL BANANA PUDDING
Cornstarch-thickened pudding, also known as cheater's pudding, creates the same thick, luscious texture as homemade custard with almost none of the fat. A coconut-milk beverage subbed in for regular milk lends a subtle tropical flavor in this classic Southern dessert.

Steps:
- Put the coconut milk and butter in a medium saucepan over medium-low heat, stirring gently to melt the butter and heat the milk.
- Whisk together the sugar, cornstarch and 2 tablespoons water in a separate bowl to create a thick paste. Gently whisk into the milk and increase the heat to medium. Cook, stirring often, until thick and bubbly, 10 to 12 minutes.
- Remove from the heat and stir in the vanilla extract. Let cool to room temperature, then transfer to a bowl and cover with plastic wrap, pressing the wrap directly against the surface. Refrigerate until set, 3 to 4 hours.
- Beat the whipping cream with an electric mixer until stiff peaks form.
- Arrange a layer of half of the banana slices on the bottom of a 9-inch pie dish. Add a layer of half the pineapple followed by half of the coconut pudding and a layer of half of the wafers. Top with some whipped cream and repeat to make a second layer.
- Top with the remaining whipped cream and the toasted coconut flakes. Cover and refrigerate for at least 8 hours or up to overnight before serving.
TROPICAL FRUIT CAKE
I was out of vanilla pudding to make the shaving cream cake(pineapple delight cake) today so i use banana cream pudding and it was really good. This is what i did...

Steps:
- Preheat oven to 350 degrees.
- Mix cake mix, oranges with juice and eggs.
- Beat till well mix around 2 minutes.
- Pour into prepared pan 13 by 9 and spread.
- Bake 30 minutes or until toothpick inserted into center comes out clean.
- Let cool completely.
- Mix cool whip, pudding and pineapple.
- Spread on cooled cake and refridgerate till ready to serve and any leftovers.
- Can use sugar free coolwhip and sugar free pudding. You might try to mix a ripe banana in with the oranges in the cake and about 1/2 cup coconut in with the frosting. Sounds yummy to me.

TROPICAL TWINKIE DELIGHT
Just a little different from the other gourmet Twinkie desserts already posted. Chill time is cook time. If you can't find coconut cream pudding mix, use vanilla. Top with sliced bananas, strawberries, sliced peaches or maraschino cherries if you like.

Steps:
- Line the bottom of a 13 x 9 pan with Twinkies.
- In a medium bowl mix the pudding mix with the milk.
- Let stand to thicken.
- Spread the crushed pinepple, undrained, over the Twinkies.
- Spread the pudding over the pineapple layer.
- Spread the Cool Whip on top.
- Chill for 4 hours.
