COCONUT-LIME MARINATED AND GRILLED SHRIMP

Coconut-Lime Marinated and Grilled Shrimp image

The quick and easy marinade in this recipe is a great way to use up that leftover coconut milk you have in your refrigerator. It adds a touch of sweetness to grilled shrimp and only takes 30 minutes to infuse tremendous flavor into your next dinner. Serve with steamed white rice or cold rice noodles for a light but delicious meal.

Provided by Food Network Kitchen

Time 45m

Yield Serves 4

Number Of Ingredients 9

3 large limes (about 10 ounces)
One 1/2-inch piece fresh ginger
2 large cloves garlic
1/4 to 1/2 teaspoon crushed red pepper flakes, to taste
2 tablespoons canola oil
1/3 cup canned coconut milk
Kosher salt
1 pound jumbo shrimp (16/20), peeled and deveined
1 small scallion, thinly sliced

Steps:

  • Zest and juice 2 of the limes (you should have about 1 tablespoon zest and 1/4 cup juice) and add to a medium glass bowl. Peel and grate the ginger and garlic and add to the bowl along with the red pepper flakes, canola oil, coconut milk and 1 1/2 teaspoons salt. Stir to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lime into wedges. Reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels; don't worry if the coconut milk has hardened while it was in the refrigerator. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Top with the sliced scallion and serve with the reserved lime wedges.

TROPICAL SHRIMP SPINACH SALAD

Tropical Shrimp Spinach Salad image

This salad is so light and refreshing. Perfect for a warm summer's day, and hearty enough for a dinner meal as well. You will feel yourself transported to a tropical setting as you indulge in this yummy salad!

Provided by MISSYLYNMITZ

Categories     Salad     Seafood Salad Recipes     Shrimp Salad Recipes

Time 25m

Yield 4

Number Of Ingredients 13

3 fluid ounces pineapple juice
3 tablespoons orange juice
¼ cup extra-virgin olive oil
salt and pepper to taste
1 pound large peeled and deveined cooked shrimp
1 tablespoon extra-virgin olive oil
salt and pepper to taste
1 (10 ounce) bag baby spinach leaves
1 mango - peeled, seeded and diced
½ cup chopped macadamia nuts
½ cup dried banana chips
4 ounces crumbled goat cheese
¾ cup sweetened flaked coconut, toasted

Steps:

  • Prepare the salad dressing by whisking together the pineapple juice, orange juice, and 1/4 cup olive oil. Season to taste with salt and pepper; set aside. Brush the shrimp with 1 tablespoon of olive oil, and season to taste with salt and pepper; set aside. Place the spinach leaves, mango, macadamia nuts, and banana chips into a large mixing bowl.
  • Heat a large skillet over medium-high heat. Heat the shrimp in the skillet on both sides until just warm in the center, about 1 minute per side.
  • To assemble the salads, drizzle the spinach mixture with the salad dressing, and toss until evenly combined. Divide onto four plates. Divide the warm shrimp among the plates, and top with goat cheese. This way the goat cheese will melt down a little from the warmth of the grilled shrimp. Sprinkle with toasted coconut flakes to serve.

TROPICAL RICE

Tropical Rice image

This rice has such sweet and comforting aroma. Coconut, pineapple...you'll love it. I was looking for a rice dish to go with my Recipe #382313 and this is what I found on the net. To add an extra layer of flavor you could substitute some of the chicken broth with lime juice or orange juice and to make it spicy add a minced scotch bonnet pepper.

Provided by Bellinda

Categories     Rice

Time 30m

COCONUT BANANA CORNBREAD

Coconut Banana Cornbread image

You know that great cornbread in Jamaican restaurants? This is pretty much it. With Jamaican rice and peas or coconut shrimp or fish salad, this is very exotic, and is another good way to use up overripe bananas. The recipe is from Caribbean Cooking by John DeMers (HP Books, 1997)

Provided by fluffernutter

Categories     Quick Breads

Time 35m

Yield 16 serving(s)

Number Of Ingredients 11

1 cup yellow cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 tablespoon baking powder
1 1/4 teaspoons ground allspice
1/4 teaspoon salt
1 egg, beaten
1 cup mashed banana
1/4 cup milk
1/4 cup vegetable oil
1/2 cup sweetened flaked coconut

Steps:

  • Combine cornmeal, flour, sugar, bakling powder, allspice and salt in a medium bow and mix well; combine the wet ingredients in another bowl.
  • Mix the dry ingredients and the wet ingredients in just a few swift, confident strokes so you don't overmix; stir in coconut.
  • Pour the mixture into a greased 8-inch square or 9-inch round pan and bake at 375 degrees for 25 minutes or until a cake tester inserted in the center comes out clean.
  • Cut into 2-inch squares.

BANANA COCONUT SHRIMP KABOBS

Banana Coconut Shrimp Kabobs image

Enjoyed these at a winter dinner-party where the hosts grilled the shrimp at the dining table. Wonderful! I look forward to trying this on the barbeque come summer.

Provided by Gerry sans Sanddunes

Categories     Coconut

Time 1h6m

Yield 4 serving(s)

Number Of Ingredients 10

1/4 large banana
2 tablespoons lime juice
1 tablespoon olive oil
1/2 teaspoon ground turmeric
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
500 g large shrimp, shelled and deveined, you'll probably have between 26 to 30
1/3 cup cracker crumb
1/3 cup grated coconut, toasted
lime wedge

Steps:

  • Puree (or mash) the banana with lime juice, olive oil, turmeric, salt and hot-pepper sauce.
  • Toss marinade with the shrimp and marinate for 1 hour in the refrigerator.
  • In a bowl, combine the cracker-crumbs and the toasted coconut.
  • Preheat the grill or broiler.
  • Dip shrimp in the crumb/coconut mixture and thread onto bamboo or wooden skewers which have been soaked in water for 30 minutes to stop them from catching fire.
  • (Each skewer will take 6 to 8 shrimps).
  • Grill over a medium-hot fire (or broil) until shrimp are opaque- about 4 to 6 minutes- turning the kabobs over halfway throught the cooking time.
  • Serve with lime wedges.
  • NOTE: TO PREVENT SHRIMP- OR ANY KABOB ITEMS- FROM SLIPPING,USE 2 SKEWERS FOR EACH KABOB.
  • BY HOLDING A PAIR OF SKEWERS 1/4" APART,THREAD THE SHRIMP ONTO BOTH SKEWERS AT THE SAME TIME.
  • THIS WAY THE FOOD WILL TURN OVER WHEN YOU TURN THE SKEWERS RATHER THAT SPIN AROUND,AS THEY TEND TO DO,WHEN ON A SINGLE STICK.
