SIMPLE MEAT LOAF
This is an easy blend that I came up with after looking at a few different recipes. It just happened to please my family; I'm posting it here so I won't lose it, lol. They tend to like foods fairly bland and boring. I didn't measure to see how many cups of bread crumbs I got, as I kept crumbling slices of toast until it looked right. And the beef broth was my own homemade, still gelled from being in the fridge; I don't know if canned would be different.

Steps:
- Preheat oven to 375°F.
- Spray baking sheet with nonstick spray. Set aside.
- Crumble beef into large mixing bowl.
- Add all other ingredients and mix well with hands.
- Shape into two oblong loaves.
- Place on baking sheet.
- Bake in preheated oven until at least 160F inside.
- We like ours well done; after 80 minutes it was 180F and perfect.
- Let rest 5 minutes before serving.

BACON AND TRIPLE TOMATO MEAT LOAF

Steps:
- In skillet, cook bacon over medium-high heat for about 5 minutes or until crisp. Drain on paper towels.
- Meanwhile, soak sun-dried tomatoes in boiling water for 5 minutes or until softened. Drain.
- In large bowl, beat egg lightly, add bacon, sun-dried tomatoes, green pepper, onion, bread crumbs, tomato juice, Worcestershire sauce, salt, basil, oregano and pepper. Mix in beef. Pack into 8- x 4-inch loaf pan. Lay slices of tomato on top, overlapping slightly, brush with oil.
- Bake in 350 degree F oven for about 1 hour or until no longer pink inside and tomato slices are roasted. Drain off fat. Serve with your favorite mashed potatoes and mushrooms and green beans.

LEMON YOGURT LOAF
Found this recipe in Paula Deen Magazine and it's decribed as a delicate tea bread perfect when you want a change from the usual heavy breads and rich desserts. As I love the taste of lemon and like a lighter dessert. Editor notes that as a substitute for each cup of self-rising flour, you can place 1 1/2 teaspoons baking poweder and 1/2 teaspoon salt in a measuring cup and add all-purpose flour to measure 1 cup, hmmm, neat trick.

Steps:
- In a blender, combine 3/4 cup yogurt and apricots; cover and process until smooth.
- In a bowl, cream butter and 3/4 cup confectionsrs' sugar.
- Beat in the eggs, lemon peel and yogurt mixture; mix well.
- Add flour just until combined.
- Spoon into a greased 8 inch x 4 inch x 2 inch loaf pan.
- Bake at 325 for 60-65 minutes or until a toothpick inserted near the center comes out clean.
- Cool for 10 minutes before removing from the pan to a wire rack to cool completely.
- Combine the remaining yogurt and confectioners' sugar; drizzle over loaf.

TRIPLE THREAT MEAT LOAF
This recipe came from a Paula Deen magazine. I have misplaced it several times now, much to my husband's disappointment. I am finally putting it on Zaar so I will be able to find it in the future. I typically double the recipe and freeze at least one. I have included OAMC directions for the recipe, although they were not in the original recipe.

Steps:
- If baking now, preheat oven to 425. Line a rimmed baking sheet with parchment paper; set aside.
- Heat oil in a large skillet over medium-high heat. Add bell pepper and onion, and cook for 5 minutes.
- Stir in garlic and shallots, and cook for 2 minutes. Set aside to cool.
- In a large bowl, whisk together eggs, parsley, and thyme.
- Add sirloin, turkey, pork, panko, 1/2 c ketchup, 2 tablespoons vinegar, and cooled vegetables; mix just until combined.
- Pack meat mixture into a 9 x 5 inch loaf pan. Invert loaf pan onto prepared pan.
- In a medium bowl, whisk together remaining 1 cup ketchup, remaining 2 tablespoons viegar, tomato sauce, honey, mustard, hot sauce, sale and pepper.
- Reserve one-quarter sauce for serving. Brush remaining sauce evently over meat loaf.
- Bke for 1 hour and 15 minutes.
- Remove from oven, and let stand for 10 minutes before slicing.
- If freezing, place meat mixture in sealed ziptop bag; place sauce in separate bag. Freeze both bags flat inside a larger bag.
- To serve, thaw and bake as directed above.
