Nonstick cooking spray, for the foil
2 cups semisweet chocolate chips
One 14-ounce can sweetened condensed milk
1/2 cup peanut butter
1/2 cup kettle-cooked chips, lightly crushed
1/2 cup thin pretzel sticks, lightly crushed

Steps:

  • Line an 8-inch square baking pan with aluminum foil. Coat the foil with cooking spray.
  • In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk. Cook, stirring, until melted and smooth, 6 to 8 minutes. Pour the mixture into the prepared baking pan and spread to even out the surface. Top with spoonfuls of the peanut butter. Using a skewer or butter knife, swirl the peanut butter into the chocolate mixture. Sprinkle over the crushed chips and pretzels. Let the fudge cool for 30 minutes on the counter, then lightly cover and refrigerate for 1 hour.
  • Lift the foil out of the pan and peel it from the fudge. Cut into small squares to serve.

One quick batch requires only stove-top and chill time, and yields 8 to 10 dainty but decadent boxes of pure delight.

25 thick-cut pretzels, sourdough-style (each about 3 inches by 2 1/2 inches)
3 ounces bittersweet or semisweet chocolate, finely chopped
1/2 (4 tablespoons) stick unsalted butter
2 tablespoons sugar
1 large egg, beaten
Two 14-ounce cans sweetened condensed milk
4 cups peanut butter chips
Pinch fine salt
6 ounces bittersweet or semisweet chocolate, finely chopped
3 tablespoons heavy cream

Steps:

  • 1. For the crust: Line a 9-by-9-inch baking pan or casserole with aluminum foil, with long flaps hanging over each edge.
  • 2. Pulse 15 of the pretzels in a food processor until you have fine crumbs. (You should have 1 cup.) Crush the remaining 10 pretzels into large chunks by hand and set aside for topping the fudge.
  • 3. Put the chocolate and butter in a medium heatproof bowl. Bring a saucepan filled with an inch or so of water to a very slow simmer over medium to medium-low heat. Set the bowl over the saucepan but not touching the water. Stir occasionally until the chocolate and butter melt, about 3 minutes. Add the sugar and egg and cook, stirring constantly with a wooden spoon until warm to the touch and slightly thickened, 2 to 3 minutes. Remove from the heat and stir in the pretzel crumbs. Press firmly into the prepared pan. (Save the pan of water for melting the chocolate ganache.)
  • 4. For the fudge: Combine the condensed milk with the peanut butter chips and a pinch of salt in a large microwave-safe bowl. Cook until melted and smooth, stirring only occasionally, 3 to 5 minutes. Spoon the peanut butter fudge on top of the crust and spread into an even layer. Refrigerate for 15 minutes.
  • 5. For the ganache: While the fudge is chilling, combine the chocolate and cream in a heatproof bowl and set over the simmering water. Stir until melted, smooth, and shiny, about 3 minutes. Using an offset spatula, spread the glaze over the fudge and sprinkle with the large chunks of pretzel pieces. Refrigerate until firm, about 2 hours or up to overnight. Cut into 1 1/2-inch squares or into 1 1/2-by-3-inch candy bars.
  • Gift Note: Enjoy these at room temperature for up to a week, or refrigerate and serve cold like a candy bar straight from the ice box.

This recipe is a variation on a sandwich that my Dad used to make for me and my sisters when we were kids. My daughter Sheriden and I added the third piece of bread to make it a club sandwich, and then we toasted that third (middle) slice so that it would be crispy like the 2 outside pieces.

3 slices bread (white or cinnamon swirl)
1/4 cup creamy peanut butter (recommended: Jif)
1/2 banana, sliced into 4 slices
1/2 tablespoon honey
1 tablespoon semisweet mini chocolate morsels
1/2 tablespoon brown sugar
1 tablespoon butter, softened

Steps:

  • Preheat oven or toaster oven to broil or highest setting.
  • Toast 1 slice of bread in toaster until golden brown. Spread half of the peanut butter on 1 of the untoasted slices of bread. Place the banana slices on top of the peanut butter. Drizzle the honey evenly over the bananas. Place the toasted slice of bread on top. Spread the other half of the peanut butter on top of the toasted slice. Sprinkle the chocolate morsels evenly over the peanut butter. Sprinkle the brown sugar evenly over the chocolate chips. Top with the remaining untoasted slice of bread. Place the sandwich on a cookie sheet. Place under the broiler (or in the toaster oven) and toast until golden brown. Carefully flip the sandwich over with a spatula and toast the other side until golden brown. Remove from the oven and immediately spread the butter evenly over the top of the sandwich. Cut in half and serve immediately with a cold glass of milk.

Too much of a good thing is never a problem with this double decker peanut butter fudge that brings together two favourite flavours in a creamy, sweet treat. If you can pick a favourite, each layer is great on its own as well.

2 (300 ml) cans sweetened condensed milk
1 cup peanut butter, preferably smooth
1/2 teaspoon salt
2 teaspoons vanilla
10 ounces milk chocolate chips
10 ounces peanut butter chips
3 tablespoons peanuts, coarsely chopped

Steps:

  • Line an 8x8-inch (2L) square baking pan with aluminum foil so the edges overhang the sides. In a medium saucepan over medium heat, combine 1 can of condensed milk, 1/2 cup (125 mL) peanut butter, and 1/4 tsp (1 mL) salt. Stir continuously just until bubbly. Remove from heat and immediately stir in chocolate chips and 1 tsp (5 mL) vanilla. Scrape into prepared pan and spread evenly. Refrigerate while making peanut butter layer.
  • In a clean medium saucepan over medium heat, combine the remaining condensed milk, peanut butter, and salt, stirring continuously just until bubbly. Remove from heat and immediately stir in peanut butter chips and remaining vanilla. Scrape onto chocolate layer, spreading to cover. Sprinkle with peanuts, pressing gently into fudge.
  • Refrigerate for 3 hours or until firm. Lift the fudge out of the pan and cut into small squares.
