Number Of Ingredients 14

2 sticks cold unsalted butter, cut into small pieces
1/2 cup sugar
2 cups all-purpose flour, plus more for surface
Salt
1 1/2 cups whole milk
1 cup heavy cream
6 large egg yolks
1/2 cup sugar
2 tablespoons cornstarch
2 tablespoons all-purpose flour
Salt
1/2 teaspoon pure vanilla extract
4 cups mixed fresh berries, such as blackberries, blueberries, currants, and strawberries
1/2 cup apricot jam, warmed and strained (optional)

Steps:

  • Make the crusts: Beat butter and sugar with a mixer on low speed until just combined. Add flour and 1/8 teaspoon salt; beat on low speed until dough comes together, 3 to 5 minutes. Press dough into a disk, and wrap in plastic. Refrigerate for 20 minutes.
  • Preheat oven to 325 degrees. Roll out dough to a scant 1/4-inch thickness on a lightly floured surface. Cut out thirty-two 3-inch rounds or twenty-five 3 1/2-inch rounds, and fit each into a 2 1/2- or 3-inch tart pan. Trim excess dough flush with edges of pans using a knife. Refrigerate until firm, at least 1 hour or overnight. Bake, pressing down dough if puffing, until pale gold, about 25 minutes. Let cool completely.
  • Make the filling: Heat milk and 1/2 cup cream in a medium saucepan over medium-high heat until almost boiling. Whisk together yolks, sugar, cornstarch, flour, and a pinch of salt. Slowly pour some of the warm milk mixture into yolk mixture, and whisk to combine. Pour yolk mixture into saucepan with remaining milk mixture. Bring to a boil, whisking constantly, and cook for 1 minute, continuing to whisk.
  • Strain mixture through a fine sieve, and whisk in vanilla. Place plastic wrap directly on surface of pastry cream, and refrigerate at least 1 hour or overnight. When ready to use, whip remaining 1/2 cup heavy cream until soft peaks form. Fold into pastry cream.
  • Assemble the tarts: Fill each tart shell halfway with pastry cream. Top with berries; gently brush with jam.

For crust:
9 (5- by 2 1/4-inch) chocolate graham crackers (not chocolate-covered), finely ground (1 cup)
5 tablespoons unsalted butter, melted
1/4 cup sugar
For filling:
1 1/4 cups heavy cream
9 ounces bittersweet chocolate (not more than 65% cacao if marked), chopped
2 large eggs
1 teaspoon pure vanilla extract
1/4 teaspoon salt
For glaze:
2 tablespoon heavy cream
1 3/4 ounces bittersweet chocolate, finely chopped
1 teaspoon light corn syrup
1 tablespoon warm water
Equipment:
a 9-inch round fluted tart pan (1 inch deep)

Steps:

  • Make crust:
  • Preheat oven to 350°F with rack in middle.
  • Stir together all ingredients and press evenly onto bottom and 3/4 inch up side of tart pan. Bake until firm, about 10 minutes. Cool on a rack 15 to 20 minutes
  • Make filling:
  • Bring cream to a boil, then pour over chocolate in a bowl and let stand 5 minutes. Gently stir until smooth. Whisk together eggs, vanilla, and salt in another bowl, then stir into melted chocolate.
  • Pour filling into cooled crust. Bake until filling is set about 3 inches from edge but center is still wobbly, 20 to 25 minutes. (Center will continue to set as tart cools.) Cool completely in pan on rack, about 1 hour.
  • Make glaze:
  • Bring cream to a boil and remove from heat. Stir in chocolate until smooth. Stir in corn syrup, then warm water
  • Pour glaze onto tart, then tilt and rotate tart so glaze coats top evenly. Let stand until glaze is set, about 1 hour.

1/3 cup butter or margarine, melted
1 teaspoon ground cinnamon

1 package (8 oz) cream cheese, softened

1/2 pint (1 cup) fresh blackberries

Steps:

  • Heat oven to 350°F. Place animal crackers in food processor; cover and process about 1 minute or until crumbs are finely ground. In medium bowl, mix cracker crumbs, butter, cinnamon and 2 tablespoons sugar. Press mixture in bottom and up side of ungreased 9-inch tart pan with removable bottom. Bake 8 to 12 minutes or until golden brown. Cool completely, about 20 minutes.
  • In large bowl, beat cream cheese, 1/2 cup sugar and the lemon juice with electric mixer on low speed until blended. Add whipping cream; beat on high speed 3 to 5 minutes or until light and fluffy. Spread mixture in tart shell. Refrigerate at least 2 hours.
  • Arrange berries on chilled filling. In small microwavable bowl, microwave jam uncovered on High about 20 seconds or until warm. Stir in orange juice; mix well with fork. Brush strawberry glaze over berries.

Steps:

  • Make crust:
  • Preheat oven to 350°F with rack in middle.
  • Pulse almonds with cookies and sugar in a food processor until almonds and cookies are finely ground.
  • Add butter and pulse to combine, then press evenly onto bottom and up side of tart pan or 1-inch up side of springform pan (a dry measuring cup with a smooth bottom is very useful for pressing crumbs into an even layer).
  • Bake until set, 15 minutes. Cool on a rack 1 hour.
  • Make filling:
  • Whisk together milk, cream, stout, sugar, cornstarch, and cocoa in a medium saucepan and bring to a boil over medium heat, whisking constantly, then briskly simmer, whisking constantly, 2 minutes.

  • Pour chocolate custard into cooled tart shell and cover surface with plastic wrap or wax paper (to prevent a skin from forming) and chill until set, about 3 hours.

  • Mix wafer crumbs and butter until blended; press onto bottom and up side of 9-inch tart pan with removable bottom. Freeze while preparing filling.

1 recipe pâte sucrée (sweet tart dough)
2 cups whole milk (do not substitute low-fat or skim milk)
½ cup sugar
3 tablespoons cornstarch
1 large egg
2 large egg yolks
3 tablespoons unsalted butter, cut into pieces
2 teaspoons vanilla extract
About 4 cups fresh mixed berries of choice, plus other fruits, such as sliced kiwi or mango (see note)
¼ cup apricot jam

Steps:

  • Make the Crust: Complete the pâte sucrée through baking and cooling.
  • Make the Pastry Cream: In a medium pot, heat the milk until just boiling. Remove the pot from heat. While the milk is warming, in a heat-proof mixing bowl, whisk together the sugar, egg, egg yolks, and cornstarch. Whisk until the mixture is very smooth and has lightened in color, about 2 minutes. Whisking constantly, add about a quarter of the hot milk into the egg mixture. (This is called tempering. Tempering the eggs helps raise their temperature without cooking them, and helps emulsify them into the milk.) Pour the milk-tempered egg mixture into the pot of the remaining milk. Whisk to combine. Return the pot to the heat and cook over medium heat, whisking constantly to prevent "scrambled eggs," especially on the sides and bottom, until the magic happens and the pastry cream thickens, about 2 minutes. Stir in the butter and vanilla and cook one minute more, whisking constantly. The pastry cream should make thick, lazy bubbles. (See note below if you see any coagulated bits of egg in your custard.) Pour the thickened pastry cream into a clean, shallow bowl. Cover it with plastic wrap and push it down in the bowl so it sits directly on the surface of the pastry cream. This prevents a skin from forming on top. Chill until cold, a few hours (or up to 2 days before serving).
  • Assemble the Tart: Remove the tart ring and transfer the tart shell to a serving platter. Whisk the chilled pastry cream until smooth, then spread it evenly into the tart shell using an offset spatula. Arrange a generous amount of fruit over the pastry cream in your desired design. In a small saucepan, heat the apricot jam with 1 tablespoon of water over medium heat, whisking, until thin. (Alternatively, heat it in a heat-proof bowl in the microwave for about 30 seconds.) If the jam is especially chunky, strain it through a sieve. Use a pastry brush to gently dab the fruit with a thin layer of apricot glaze. Chill until ready to serve.
  • Note: Avoid melon and other fruit with high moisture content, like sliced citrus. These will wilt quickly and seep moisture into the pastry cream. Also avoid oxidizing fruit like apples and bananas; these fruits will turn brown. Berries should be fully dried after rinsing (raspberries should not be washed) and strawberries should be sliced.
  • Note: If you see any coagulated egg bits in your finished custard, strain the hot pastry cream through a fine mesh strainer.
  • Make-Ahead Instructions: The pastry cream can be made up to 2 days before serving. The tart can be assembled and refrigerated up to one day before serving.

Shortening or butter, for the pan
Nonstick cooking spray, for the pan
17 chocolate sandwich cookies, such as Oreos
1 tablespoon confectioners' sugar
3 tablespoons unsalted butter, melted
Pinch of fine salt
3/4 cup cold heavy cream
3 tablespoons cold water
2 teaspoons powdered gelatin
12 ounces full-fat cream cheese, at room temperature
1/2 cup plus 2 tablespoons confectioners' sugar
3 tablespoons Irish cream liqueur, such as Bailey's
2 teaspoons vanilla extract
Pinch of fine salt
1 teaspoon mini gold sugar pearls
2 tablespoons cream cheese, at room temperature
1 tablespoon confectioners' sugar
Green gel food coloring
1 cup cold heavy cream
1 teaspoon Irish cream liqueur, such as Bailey's
Splash vanilla extract
2 tablespoons mini chocolate chips

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Rub the bottom of a 9-inch tart pan with a removeable bottom with shortening or butter and place a circle of parchment paper to cover the bottom. Lightly spray the tart pan with nonstick cooking spray.
  • Pulse the sandwich cookies in a food processor until fine crumbs form. You should have about 1 3/4 cups. Combine the cookie crumbs with the confectioners' sugar, melted butter and salt in a medium bowl (or pulse in the food processor) until combined. Transfer to the tart pan. Press the crumb mixture evenly up the sides of the pan to make about a 1/4-inch-thick crust, then press the remaining crumbs into the bottom. (Use a flat-bottomed glass to press the crust tightly along the bottom and sides.) Place on a sheet tray and bake for 12 minutes until the crust looks dry. (It may puff a bit-that is OK.) Set aside to cool completely.
  • For the filling: Whip the cream in the bowl of a stand mixer fitted with the whisk attachment to medium peaks. Transfer the whipped cream to a medium bowl and refrigerate.
  • Add the water to a small microwave-safe bowl and sprinkle the gelatin evenly over the top. Set aside to allow the gelatin to bloom and absorb the water.
  • In the same bowl used for the whipped cream, whip the cream cheese on medium speed until smooth, about 1 minute. Add the confectioners' sugar, Irish cream, vanilla and salt. Whip on low to combine. Scrape the bowl with a rubber spatula, then whip on medium speed until smooth, about 1 minute. Scrape the bowl and mix again if needed to smooth out the mixture.
  • Melt the gelatin in the microwave in 10 second intervals, swirling the bowl after each. It should take about 20 seconds until it is melted and clear. Spoon about 2 tablespoons of the cream cheese mixture into the hot gelatin and stir until smooth. Working quickly, pour the gelatin into the cream cheese mixture and blend on low to combine, then raise the speed to medium and mix until the mixture is slightly thickened, about 10 seconds.
  • Remove the whipped cream from the refrigerator and use a spatula to fold it into the cream cheese mixture in thirds. Pour the filling into the cooled tart shell, smooth the top and sprinkle the gold sugar pearls over the tart. Place in the refrigerator to chill for at least 8 hours and up to overnight. You can cover the tart by inverting a large bowl over top or by placing the tart pan in a 10-inch or larger cake pan and covering the cake pan with foil.
  • For the topping: Once the tart is completely chilled, put the softened cream cheese and confectioners' sugar in the bowl of a stand mixer and use a rubber spatula to mix until smooth. Add a couple drops of green gel food coloring and a splash of the heavy cream and mix with the spatula to loosen the mixture. Add the remaining heavy cream, Irish cream and vanilla. Secure the bowl to the stand mixer fitted with the whisk attachment. Whip on medium speed until medium-stiff peaks form, 1 to 2 minutes. Adjust the green color as desired.
  • Finish the tart. Unmold the tart by pushing the bottom of the tart pan up and out of the ring. Slide an offset spatula under the tart to loosen it from the removable bottom and parchment and transfer it to a serving platter. Put the whipped cream in a piping bag fitted with a large star tip (or simply cut a 1/2-inch opening at the base of the bag) and pipe swirls of whip cream along the edge of the tart. Sprinkle mini chocolate chips over the whipped cream. Serve immediately or store in the refrigerator up to 1 day.
