6 cups cubed (1 inch) day-old French bread
1 cup fresh raspberries
2 tablespoons miniature semisweet chocolate chips
2 cups fat-free (skim) milk
1/2 cup fat-free egg product
1/4 cup packed brown sugar
1 teaspoon vanilla
1/2 cup granulated sugar
2 tablespoons cornstarch
3/4 cup water
1 bag (12 oz) frozen unsweetened raspberries, thawed, undrained

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 8-inch square (2-quart) glass baking dish with cooking spray. In large bowl, place bread, 1 cup raspberries and chocolate chips.
  • In medium bowl, mix milk, egg product, brown sugar and vanilla with wire whisk or fork until blended. Pour egg mixture over bread mixture; stir gently until bread is coated. Spread in baking dish.
  • Bake 40 to 50 minutes or until golden brown and set.
  • Meanwhile, in 2-quart saucepan, mix granulated sugar and cornstarch. Stir in water and thawed raspberries. Heat to boiling over medium heat, stirring constantly and pressing raspberries to release juice. Boil about 1 minute or until thick. Place small strainer over small bowl. Pour mixture through strainer to remove seeds; discard seeds. Serve sauce with warm bread pudding.

Whipped cream and shaved chocolate, for topping (optional)
3 tablespoons unsalted butter
4 1/2 ounces semisweet chocolate (no more than 62 percent cacao), finely chopped
1 ounce unsweetened chocolate, finely chopped
3 cups whole milk
1 cup sugar
1/4 cup Dutch-process cocoa powder
3 tablespoons cornstarch
1/8 teaspoon fine sea salt
3 large eggs plus 1 egg yolk
1/4 cup heavy cream
1 tablespoon dark rum
1 teaspoon pure vanilla extract

Steps:

  • Melt the butter in a heatproof bowl over a saucepan of hot (not simmering) water. Add the chocolates and stir until melted and smooth. Remove the bowl from the saucepan.
  • Heat the milk and 1/3 cup of the sugar in a saucepan over medium heat until it is steaming.
  • Whisk the remaining 2/3 cup sugar, the cocoa, cornstarch and salt in a medium bowl. Whisk in the eggs, egg yolk and cream. Gradually whisk in half of the hot milk mixture, then pour into the saucepan with the remaining milk mixture, whisking constantly. Bring to a boil, whisking oftenand scraping the side of the saucepan. Reduce the heat to low and let bubble for 30 seconds.
  • Remove the saucepan from the heat. Strain the pudding through a sieve into a medium bowl. Whisk in the melted chocolate mixture, rum and vanilla. Spoon the pudding into 6 jars or bowls. Cover each with plastic wrap, pressing it directly on the surface and piercing it a few times with the tip of a small knife. (If you like a skin on your pudding, do not cover.) Let the pudding cool at room temperature until tepid, about 1 hour, then refrigerate until chilled, at least 2 hours. (The pudding can be refrigerated for up to 3 days.) Remove the plastic wrap and top with whipped cream and shaved chocolate.

Growing up, my best friend's grandmother always had leftover challah and would make some sort of bread pudding. This is my modernized version on a very sentimental dessert.

3 cups heavy cream
4 ounces bittersweet chocolate, chopped
4 ounces milk chocolate, chopped
1 cup sugar
12 egg yolks
2 tablespoons vanilla extract
Pinch of salt
8 ounces white chocolate, chopped
1/2 loaf challah bread, large diced
1 cup cream
1 cup chopped bittersweet chocolate
4 tablespoons orange liqueur, such as Cointreau
Toasted Caramel Praline Sauce, recipe follows
2 cups walnuts
2 cups sugar
1 cup heavy cream
3 tablespoons unsalted butter

Steps:

  • For the bread pudding base: Preheat the oven to 325 degrees F.
  • Bring the cream to a boil in a saucepan over medium-high heat. Put the milk chocolate and bittersweet chocolate in a bowl and pour the cream over it. Allow to sit for a couple minutes and stir until smooth.
  • Whisk together the sugar and egg yolks in a large mixing bowl. Slowly whisk the hot chocolate mixture by the ladleful into the egg yolk mixture until fully incorporated.
  • Add the vanilla and pinch of salt. Then strain through a fine-mesh strainer.
  • Place the chopped white chocolate in the bottom of the ramekins. Place the cubed bread on top. Pour the bread pudding base over the chopped white chocolate and bread and allow the bread to soak until absorbed, 30 to 45 minutes.
  • Bake in a water bath at 325 degrees F until the pudding is firm when lightly pressed in the center with a finger, about 1 hour 15 minutes (depending on your oven).
  • For the ganache: Bring the cream to a boil in a small saucepan. Add the chocolate and stir until completely melted. Stir in the orange liqueur.
  • Carefully remove the ramekins from the water bath using a large spatula and tongs. Cover each pudding with 3 tablespoons ganache and drizzle with the Toasted Caramel Praline Sauce.
  • Preheat the oven to 350 degrees F. Spread the walnuts on a rimmed baking sheet and toast until fragrant, 6 to 8 minutes. Let cool and then chop.
  • Combine 1 cup sugar and 3 tablespoons water in a saucepan over medium-high heat. Let cook without stirring until amber in color. Remove from the heat and add the toasted chopped walnuts.
  • Spread out on a parchment-lined baking sheet and let cool to set, 10 to 15 minutes. Break into small pieces for caramel sauce.
  • Combine the remaining 1 cup sugar and 4 tablespoons water in a saucepan over medium-high heat. Let cook without stirring until amber in color. Remove from the heat, add the cream and stir to combine. Add the butter and then the pieces of toasted walnut praline and stir until dissolved.

1/3 cup sugar
1/4 cup whole milk
6 ounces semi-sweet chocolate chips
2 large eggs, slightly beaten

6 ounces French bread, cut into 3/4 inch cubes (1 day old, not fresh)
1/4 cup semi-sweet chocolate chips
white chocolate sauce
4 -6 ounces white chocolate chips
1 cup heavy whipping cream

Steps:

  • In a sauce pan on medium heat, heat cream, sugar, and milk until sugar dissolves, stirring occasionally.
  • Add 6 oz. of chocolate, stirring with a wire whisk and remove from heat. Keep stirring until mixture is smooth and chocolate melts completely.
  • Gradually in eggs and vanilla until well combined.
  • Place bread in shallow 1 1/2 quart or 8 x 8 glass or ceramic baking dish. Pour chocolate mixture over bread and mix it together.
  • Cover and refrigerate 30 minutes stirring occasionally.
  • Sprinkle rest of chocolate chips on top of bread mixture.
  • Bake at 300, uncovered, 40 - 45 minutes until set.
  • Cool 10 minutes to serve warm, or cover and refrigerate to serve cold later.
  • FOR WHITE CHOCOLATE SAUCE.
  • In a small sauce pan, heat cream and white chocolate chips together. Stir over med-low heat constantly stirring until chips are all melted.
  • Serve over bread pudding.

1/2 teaspoon kosher salt
3 tablespoons Cognac, rum or bourbon, optional
1/2 cup granulated sugar
8 tablespoons unsweetened cocoa powder, sifted

Pinch salt
1 3/4 cups whole milk
3 cups heavy cream
2 large egg yolks
10 ounces bittersweet chocolate, finely chopped (2 cups)
2 tablespoons unsalted butter

1/4 cup confectioners' sugar for whipped cream
1 to 2 pints fresh raspberries

Steps:

  • To make brownies, preheat oven to 350 degrees. Grease a 9-by-13-inch baking pan.
  • In a large saucepan, melt butter. Remove pan from heat and stir in chopped chocolate until fully melted. Stir in cocoa and sugar until combined. Slowly add eggs, whisking chocolate mixture constantly, then whisk in vanilla. Fold in flour and salt.
  • Pour batter into prepared pan. Bake until just firm, about 25 minutes (do not overbake). Transfer pan to a rack to cool. If using spirits, prick holes in hot brownies and drizzle evenly over pan.
  • In a large bowl, mix together granulated sugar, 3 tablespoons cocoa powder, cornstarch and salt. Whisk in 3/4 cup milk. In a large saucepan, bring remaining 1 cup milk and 1/2 cup cream to a boil over medium heat. Whisk hot milk mixture slowly into cocoa mixture. Return to saucepan. Cook over medium heat, whisking gently, until slightly thickened, about 2 minutes. (A simmering bubble or two is O.K., but do not let it boil.)
  • In a medium heat-resistant bowl, whisk yolks. Whisking them constantly, very slowly dribble about half the cocoa-milk mixture into yolks until fully combined. Pour yolk mixture into saucepan with remaining cocoa-milk mixture, whisking constantly. Cook, whisking occasionally, over medium-low heat, until thickened, about 5 minutes. (Do not let mixture come to a simmer. If pan begins to steam thickly, remove from heat for a few moments and stir well before continuing.) Let cool slightly.
  • Melt 5 ounces chopped chocolate with butter. Stir until smooth. Stir in vanilla. Cool 5 minutes, then fold into thickened egg mixture. Place plastic wrap directly against pudding (to prevent a skin from forming), and chill until set, about 3 hours. (Pudding and brownies can be made up to 5 days ahead, and refrigerated.)
  • Just before assembling, in an electric mixer, beat remaining 2 1/2 cups cream with remaining 5 tablespoons cocoa powder and 1/4 cup confectioners' sugar until it forms soft peaks. Scrape down sides and fold in any excess cocoa or sugar.
  • Cut brownies into 1-inch squares. Fit a layer of brownie squares in bottom of a 4-quart trifle, glass, or other bowl. Top with half the pudding, a third of the whipped cream, a third of the remaining chopped chocolate and a third of the raspberries. Repeat layering until all ingredients have been used. Serve immediately, or cover with plastic wrap and chill for up to 24 hours before serving.

8 tablespoons melted butter
1 cup coarsley chopped walnuts
8 ounces semisweet chocolate, chopped into 1/2 inch chunks
4 eggs

2 cups chocolate milk
1/2 teaspoon vanilla extract

Steps:

  • Tear the bread into chunks approximately 1 inch square.
  • Toss them in a bowl with the melted butter, walnuts, and chocolate chunks.

2 eggs
3/4 cup skim milk
1/2 cup sugar
1 teaspoon vanilla extract

1/8 cup brandy
1 teaspoon lemon juice

Steps:

  • Preheat the oven to 375 degrees F.
  • In large bowl combine milk, sugar, egg and vanilla extract.
  • Add bread squares to the cream mixture. Mix until all of the bread cubes are well coated.
  • Let sit for 15 minutes so the bread can soak up the cream mixture. Stir every five minutes.
  • Mix in raspberries and chocolate chips.

So good my college friends actually request this for their birthday. I especially love this with challah. Note this originally had self saucing in the title, but that was a mistake. 3 cups milk
1/4 cup heavy cream

1 large loaf of stale, french or italian bread, cut into 1 inch cubes (if your bread is fresh, place cubes on a cookie sheet in a 250 degree oven for 10 to 15 minutes before use).
3 1/2 c any combination of...whole or reduced fat [do not use skim] milk, heavy or light cream, half and half, or even extra cream iced coffee, or buttermilk ( i used 2 1/4 cups of creamy iced coffee, 1 cup buttermilk, and 1/4 cup light cream)
1/2 c coffee liqueur or chambord raspberry liqueur
1 c sugar
1 c brown sugar, lightly packed
1/2 c cocoa powder, unsweetened
1 Tbsp vanilla
1 1/2 tsp cinnamon
6 large eggs, beaten
8 oz semi sweet morsels
2 c fresh raspberries
1/4 c shaved bittersweet chocolate for garnish
1/2 c walnut halves for garnish
1 c freshly whipped cream for serving

Steps:

  • 1. Preheat oven to 325 degrees. Grease bottom and sides of a 13x9, or comparably sized oven-safe casserole dish.
  • 2. Place half the bread cubes in the greased pan. Sprinkle with half the raspberries and half the chocolate morsels. Top with remaining bread cubes, raspberries, and morsels, and set aside.
  • 3. In a large bowl, beat the eggs then whisk in the milk/iced coffee/cream combination (or just milk), vanilla, and liqueur.
  • 4. In a separate bowl, whisk together the sugar, brown sugar, cocoa, and cinnamon. Add to the milk/egg mixture and whisk until sugars are dissolved.
  • 5. Gently, pour the egg mixture over the cubed bread, raspberries, and morsels in the baking dish. Press down gently on the top, with back of a spatula so all bread is covered. Let sit 20 minutes WITHOUT STIRRING, until most of the bread is moist and liquid absorbed. Top with walnut halves.
  • 6. Bake for 1 hour or until a knife inserted comes out mostly clean (melted chocolate and raspberry may stick to the knife and the center should still be a little moist, but not soupy.) . Mainly the egg mixture should be set around outside of dish and only slight movement in the center. The pudding will continue to cook once removed from the oven.
  • 7. Serve warm, or cold with whipped cream (optional.)

4 cups heavy whipping cream
2 cups milk (I prefer whole!)
1 cup sugar
3 1/2 cups white chocolate chips
6 large eggs, plus
12 large egg yolks
1 teaspoon vanilla extract
1 loaf day old French baguette, 24-inch cut into 1/2-inch inch slices (artisan bread works well too!)
1/2 cup water
1/2 cup sugar
2 teaspoons orange zest
2 cups fresh raspberries (thawed) or 2 cups frozen raspberries (thawed)
1/2 cup heavy whipping cream
1 cup white chocolate chips
5 tablespoons unsalted butter (I prefer sweet cream butter!)

Steps:

  • Bread pudding:.
  • Preheat oven to 325 degrees F. Butter a 9"X12"X2" baking pan including the sides. Line bottom of pan with parchment paper.
  • Combine cream, sugar, milk in saucepan over medium heat. Stir until hot. Add chocolate morsels and stir until chocolate is melted. Set aside so it can cool slightly.
  • Whisk eggs, egg yolks, and vanilla. Gradually pour the cream mixture into the egg mixture and whisk until smooth. Be careful that the cream mixture isn't too hot or the eggs will curdle. Tempering the eggs is very useful in this step.
  • Lay about half of the bread slices in the baking pan and pour about half of the cream mixture, allowing it to soak up the liquid. Next, layer the remaining bread slices on top and pour more mixture over it. You might need to press down the bread on top to let it soak up some of that liquid. Be careful that you don't layer too much, since it does rise quite a bit in the oven. I usually stop layering once it hits right at the top of the pan.
  • Cover the pan with foil and bake for 1 hour. While it's baking, this is a good time to get started on those sauces!
  • After that 1st hour, remove the foil and bake uncovered until it's no longer liquid in the center and the top should be golden brown.
  • Raspberry Sauce:.
  • Combine water, sugar, and orange zest in a sauce pan over medium heat. Stir until syrupy.
  • Add raspberries and cook on low heat stirring occasionally until the fruit falls apart. Strain out the seeds.
  • White Chocolate Sauce:.
  • Heat heavy cream in saucepan over medium heat until hot.
  • Stir in white chocolate morsels until melted. Set aside to cool slightly.
  • Prepping the Bread Pudding:.
  • By individual slices, place a slice(s) on a cookie sheet and brush each piece with the melted sweet cream butter, including the sides (don't worry about the bottom of the slice).
  • Bake in oven for about 12-15 minutes. This will create a crisp "seared" outside which is very delicious.
  • Once the bread pudding is ready, by individual slices, place on a serving plate and drizzle with the white chocolate sauce and droplets of raspberry sauce. Enjoy!
