2 cups fresh strawberries (quartered)
2 cups fresh blueberries
1 1/2 cups fresh blackberries
2-4 tablespoons kahlua (depending on your taste)
1 teaspoon vanilla extract
1/4 cup brown sugar
1/2 a lemon (zested)
2 cups old fashioned rolled oats (use gluten free if needed)
6 tablespoons flour (use gluten free if needed)
1/2 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 1/2 sticks unsalted butter (softened)
vanilla bean ice cream (for serving)

Steps:

  • Preheat the oven to 375 degrees F.
  • In a 12 inch cast iron skillet or 9x13 inch baking dish toss together the strawberries, blueberries and blackberries. Add the Kahlua, vanilla extract, brown sugar (1/4 cup) and lemon zest. Toss well to combine.
  • In a medium size bowl add the oats, flour, brown sugar (1/2 cup), baking soda, cinnamon and salt. Add the softened butter and use your fingers to crumble it into the oats mixture until everything is moist and the butter is evenly distributed. Sprinkle the crisp over the berries. Bake for 25-30 minutes, until crisp is golden brown and the fruit is bubbling up and smells amazing.
  • Serve immediately with a large scoop of ice cream and a drizzle of the sauce that settles in the skillet. DEVOUR!

This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

4 cups water
1 cup instant coffee crystals (such as Folgers® Classic Roast)
2 cups light brown sugar
2 cups lightly packed dark brown sugar
1 (750 milliliter) bottle 190 proof grain alcohol (such as Everclear®)
2 teaspoons vanilla extract
1 vanilla bean, split lengthwise and halved

Steps:

  • Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
  • Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.
