Steps:
- Spray 9" square baking pan with non-stick spray.
- Combine flour, sugar, baking powder, baking soda, cinnamon and salt in large bowl.
- Combine yogurt, banana, oil, egg and vanilla in another bowl.
- Pour over dry ingredients and stir gently until just blended- do not overmix.
- Pour batter into pan.
- Bake about 20 minutes at 400 until top of cake is light brown and edges begin to pull away from sides of pan Loosen sides of cake, allow it to cool, and then remove from pan.
- Sprinkle with powdered sugar.

ITALIAN CHICKEN SALAD
This is an old favorite of mine from childhood... but nowadays goes great for tea-parties when served on toast wedges or just plain, served stuffed into a tomato for presentation... or my husbands favorite way: sandwich style topped with a few pieces of crisp bacon with a slice of avocado between two pieces of white bread! This is great for using up leftovers from Rotisserie Chicken...

Steps:
- I use my mini-food processor to chop all of the ingredients except the chicken -- I just give them a few "pulses" per ingredient so they are not pureed in the food processor.
- Mix mayonnaise, and cream cheese together in bowl until creamy. Stir in chicken & remaining ingredients. Chill until ready to serve.
- *Can add more or less of the mayonnaise & cream cheese mixture according to taste/texture desired.
- Note: you can buy the chicken pre-cooked or make it ahead of time. I recommend using all white meat.
- Also, you can substitute the pinoli nuts with chopped almond slivers if budget-conscious.

FUNFETTI COOKIE DOUGH BITES
These white chocolate dipped Funfetti Cookie Dough Bites are perfect anytime, but I especially love the idea of serving a platter of these at a birthday parting instead of traditional cake and ice cream.

Steps:
- Cream sugar, butter and vanilla.
- Add milk. Add flour while continuing stirring.
- Once well blended, stir in half of the sprinkles.
- Form into balls and place on parchment lined cookie sheet.
- Place in freezer for at least 1 hour.
- Melt candy chips by heating in microwave for 30 seconds then stirring and repeating until melted and smooth.
- Using a fork, dip balls into candy and flip to cover completely. Lift with fork and gently tap on edge of the bowl allowing excess chocolate to drip off.
- Place back on parchment paper.
- Sprinkle with candy sprinkles.
- Refrigerate 10 minutes until chocolate has set.
- If you'd like, you can print this recipe to save for another time.

- Place foil liners in 24 mini muffin pan cups. Stir boiling water and gelatin pkg contents in large bowl until gelatin mix is completely dissolved. Place 1 cake cube in each muffin cup; pour gelatin over cup to fill cup completely. Refrigerate 2 hours or until completely set.
- In a small bowl beat cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add sugar while mixing. Gently stir in whipped topping and lemon peel until well blended.
- Fill pastry bag fitted with star tip with cream cheese mixture. Pipe decorative dollop of cream cheese mixture on top of each trifle. Sprinkle with decorative sugar crystals if desired to finish the festive look.
