A SIMPLY PERFECT ROAST TURKEY

Simple, perfect roast turkey just like grandma used to make. Seasoned with salt and pepper, and basted with turkey stock, the flavors of the turkey really stand out. Stuff with your favorite dressing.

Provided by Syd

Categories     Meat and Poultry Recipes     Turkey     Whole Turkey Recipes

Time 4h30m

Yield 24

Number Of Ingredients 5

1 (18 pound) whole turkey
½ cup unsalted butter, softened
salt and freshly ground black pepper to taste
1 ½ quarts turkey stock
8 cups prepared stuffing

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place rack in the lowest position of the oven.
  • Remove the turkey neck and giblets, rinse the turkey, and pat dry with paper towels. Place the turkey, breast side up, on a rack in the roasting pan. Loosely fill the body cavity with stuffing. Rub the skin with the softened butter, and season with salt and pepper. Position an aluminum foil tent over the turkey.
  • Place turkey in the oven, and pour 2 cups turkey stock into the bottom of the roasting pan. Baste all over every 30 minutes with the juices on the bottom of the pan. Whenever the drippings evaporate, add stock to moisten them, about 1 to 2 cups at a time. Remove aluminum foil after 2 1/2 hours. Roast until a meat thermometer inserted in the meaty part of the thigh reads 165 degrees F (75 degrees C), about 4 hours.
  • Transfer the turkey to a large serving platter, and let it stand for at least 20 to 30 minutes before carving.

TRADITIONAL ROAST TURKEY

Traditional Roast Turkey image

Provided by Alton Brown

Categories     main-dish

Time 3h15m

Yield 10 to 12 servings

Number Of Ingredients 10

One 14 to 16-pound frozen natural, young turkey
1 gallon vegetable broth, homemade or canned
1 cup kosher salt
1/2 cup packed brown sugar, light or dark
1 tablespoon whole black peppercorns
1 1/2 teaspoons allspice berries
1 1/2 tablespoons candied ginger, chopped
1 gallon water, iced
Ice
Canola oil, for roasting

Steps:

  • Two to three days before roasting: Begin thawing the turkey in the refrigerator or in a cooler kept at 38 degrees F.
  • Combine the broth, salt, sugar, peppercorns, allspice and ginger in a large stockpot and bring to a boil over medium-high heat. Stir until the salt and sugar dissolve. Remove from the heat. Cool to room temperature and refrigerate the brine.
  • The night before you'd like to eat: Truss the legs of the turkey with kitchen twine if desired. Combine the brine, water and ice in a 5-gallon bucket. Place the thawed turkey, with innards removed, breast-side down in the brine. If necessary, weigh down the bird to ensure it is fully immersed, cover and refrigerate or place everything in a cooler. Turn the bird once halfway through brining.
  • Day of roasting: Heat the oven to 500 degrees F. Remove the bird from the brine and rinse inside and out with cold water. Discard the brine.
  • Place the bird on a roasting rack inside a half sheet pan and pat dry with paper towels. Rub the bird with canola oil. Roast the bird on the lowest rack of the oven for 30 minutes.
  • While the bird is cooking, fold and shape a double thickness of aluminum foil into a closely fitting breastplate.
  • After 30 minutes, decrease the oven temperature to 350 degrees F, insert a probe thermometer into the thickest part of the breast and cook until the temperature reaches 155 degrees F. Use the breastplate at any point during cooking should the bird become too brown.
  • Rest the bird, covered lightly with aluminum foil, for 15 to 30 minutes. Carve and serve.

CUSTER'S OLD FASHIONED TURKEY RUB

Custer's Old Fashioned Turkey Rub image

Source: SHADOWS. This rub combines everything you need for a delicious turkey. Remember when rubbing poultry you want to get it under the skin. Skin blocks flavor, and while you might get some tasty skin it won't help the meat any.

Time 3h45m

Yield 12 servings plus leftovers.

Number Of Ingredients 25

1 turkey (10 to 12 pounds)
1 tablespoon each salt, dried thyme and marjoram
2 teaspoons dried rosemary, crushed
1-1/2 teaspoons rubbed sage
3/4 teaspoon celery seed, crushed
3/4 teaspoon pepper
2 medium carrots, cut into pieces
1 medium onion, cut into wedges
1 celery rib with leaves, cut into pieces
ROASTED GARLIC GRAVY:
2 whole garlic bulbs
3 teaspoons olive oil, divided
2 celery ribs, cut into pieces
1 medium onion, cut into wedges
1 medium carrot, cut into pieces
6-1/4 cups water, divided
10 black peppercorns
2 whole cloves
3 sprigs fresh parsley
2 bay leaves
1 teaspoon dried thyme
1/2 teaspoon dried rosemary, crushed
1/4 cup cornstarch
1/4 teaspoon salt
Pepper to taste

Steps:

  • Remove giblets from turkey; set aside. Loosen skin around turkey breast, leg and thigh. Combine seasonings; rub under skin, in body and neck cavities and over skin if desired. Place vegetables in the cavities. Skewer openings; tie drumsticks together. Place breast side up on a rack in a roasting pan. Lightly coat with cooking spray. Roast, uncovered, at 325° for 3 to 3-1/2 hours or until a thermometer reads 180° (cover loosely with foil if browning too quickly). Baste with pan drippings if desired., Remove papery skin from garlic bulbs (do not peel or separate cloves). Brush with 1 teaspoon oil. Wrap in heavy-duty foil. Roast at 325° for 1 hour or until garlic is soft. Cool for 10-15 minutes. Cut top off heads, leaving root end intact. Squeeze garlic into a bowl. Mash to a smooth paste; set aside., To make broth, cut reserved gizzard and heart into several pieces. (Save liver for another use or discard.) In a Dutch oven, saute neck, gizzard and heart in remaining oil over medium-high heat until no longer pink. Add the vegetables; cook until browned. Gradually add 6 cups of water, stirring to loosen browned bits. Tie peppercorns, cloves and herbs in a cheesecloth bag; add to pan. Bring to a boil. Reduce heat; simmer, uncovered, for 2 hours or until broth is reduced by half. Discard giblets and spice bag. Cool broth; strain, discard vegetables., When turkey is done, cover and let stand for 20 minutes. Pour drippings and any loosen browned bits into a measuring cup; skim fat. Add enough broth to measure 3 cups. In a saucepan, combine the cornstarch and remaining water until smooth. Add broth, salt, pepper and 2 tablespoons roasted garlic. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove and discard turkey skin and vegetables in cavities before carving. Serve with gravy.

THE BEST TURKEY RUB RECIPES - THE SPRUCE EATS
the-best-turkey-rub-recipes-the-spruce-eats image

From thespruceeats.com
  • Herb Turkey Rub. This is a great rub for turkey any way you plan to cook it. It is a wet rub, including olive oil, Worcestershire sauce, white wine, and balsamic vinegar, all of which add rich flavor to the meat.
  • Deep-Fried Turkey Rub. Even though deep-frying a turkey creates delicious flavor on its own, adding a rub the day before will create a bird that your guests won't be able to get enough of.
  • Spicy Poultry Rub. Although perfect for turkey, this spicy rub is also a great all-purpose poultry rub (try it on chicken wings!). The recipe calls for paprika—use Hungarian if you can find it because its flavor is deeper and sweeter than regular paprika.
  • Cajun Turkey Seasoning. This basic poultry rub's heat can be adjusted to your liking—the recipe calls for 2 teaspoons cayenne pepper (which is just enough to get your attention but not to bring tears to your eyes), but feel free to add or subtract to taste.
  • Magic Dust Seasoning. This recipe for dry rub comes from barbecue legend Mike Mills. The combination of paprika, sugar, dry mustard, chili powder, cumin, garlic powder, and cayenne turns any turkey from bland to bam!

9 BEST TURKEY RUB RECIPES: EASY AND DELICIOUS

From smokedbbqsource.com
  • Easy smoked turkey rub. Here’s your new go-to, classic bbq turkey rub. It’s perfectly balanced and suitable for kids who don’t like a lot of heat. It’s perfect on smoked turkey breast, wings, or even deep-fried whole turkey.
  • The Simon and Garfunkel Spice Rub. In case you were wondering, this spice rub contains no ground up Simon and Garfunkel. This rub, created by Meathead Goldwyn, takes its name from the inclusion of parsley, sage, rosemary, and thyme.
  • Herby Smoked Turkey Rub. This rub comes with all the ingredients you would expect in a standard BBQ rub (brown sugar, smoked paprika, salt, pepper, etc), and then gives it a herby twist with rosemary, thyme, sage, and celery salt.
  • The garlic butter rub (get the best from your dry brining) This rub recipe comes in two parts, the dry brine to season the meat and the garlic butter rub to give it a deep garlicky flavor.
  • The citrus and herb butter rub. Citrus and herb rubs go together with turkey like hotdogs and cold beer. This traditional butter rub has all the tastes of the festive season, and, while it’s not going to win any awards for originality, there is something fantastic about a holiday classic done just right.
  • The Best Fried Turkey Rub. The inventor of this rub and injection combo calls it the way to make “best fried turkey IN THE WORLD,” and while that is quite a claim, the flavor combos do look amazing.
  • The Cajun Turkey Rub (for the deep Louisiana flavor) Turkey meat has a somewhat unfair reputation for being dry and bland, and if that is something you are afraid of, you need to use this rub.
  • Jerk Smoked Turkey Rub (the spicy one) Have you ever wished thanksgiving involved more eye-watering chili pepper heat? If you have, this Jamaican-style jerk rub is the answer to your prayers, as it’s full of Scotch bonnet pepper spice.
  • The Smoked Turkey Rub (the one that frees up the oven) Oven space is always at a premium when you are cooking a big meal, and there is rarely room for the vegetables once you’ve squeezed in a 15-pound turkey.
