1 package active yeast
1/2 teaspoon sugar
1 3/4 cup all-purpose flour
1 teaspoon coarse salt
1 tablespoon fresh thyme leaves
3/4 cup water (might need more)
1 teaspoon oil

Steps:

  • In the bowl of a food processor combine the yeast, sugar, flour, salt and thyme. Pulse to combine. Add the water in a steady stream until the dough begins to form a ball, turn it on to a board and knead with the heel of your hand until the dough is smooth and elastic.
  • Coat a bowl with oil. Place dough in bowl, and cover with a damp cloth. Put in a warm spot to rise until double in size, about 1 hour.
  • When the dough has doubled in size, punch the dough, scrape it onto the counter and knead it lightly into a smooth ball. Cut into 20 pieces and with a rolling pin roll out to form very flat 5 to 6-inch circles.
  • Preheat a stove top grill pan over medium high. Do not oil. Place bread on hot grill and cook without touching it until you see bubbles on the surface, about 1 to 2 minutes. Turn and continue to cook 1 to 2 minutes more or until bread has puffed up. Serve immediately.

1 1/2 cups whole wheat flour
1/2 cup sugar
1/2 cup butter, softened
1 cup boiling water
4 -4 1/2 cups flour
1 cup buttermilk
2 teaspoons baking powder
1 1/2 teaspoons salt
1 teaspoon baking soda

Steps:

  • Heat oven to 400º.
  • In large bowl combine whole wheat flour, sugar, butter and water. Let stand 5 minutes.
  • Stir in all remaining ingredients using enough flour to make dough easy to handle.
  • Turn dough onto lightly floured surface; knead until smooth (5 minutes).
  • Divide dough in half; shape each half into 12x2 1/2 inch roll.
  • Cut each roll into 12 portions.
  • On lightly floured surface roll each portion to 1/8 inch thickness (flat breads will be irregular in shape).
  • Place on cookie sheets.
  • Bake 10 to 13 minutes or until golden brown.

2 cups white flour
2 tablespoons lard, level
cold water

Steps:

  • Mix corn meal, flour, and lard together and add enough cold water to hold together like a pie crust.
  • Roll out very thin with grooven rolling pin and bake slowly on an ungreased electric griddle, or in a moderate oven, 325 to 350 degrees.
  • Watch closely. When it begins to get a light golden brown, turn and bake on other side.
  • Let dry out completely before putting into a container. Keep in a dry place.

Whip up these speedy flatbreads for an Indian-style feast. They're like a cheat's version of naan bread, and are great for mopping up a curry

300g self-raising flour, plus extra for dusting
½ tsp baking powder
150g natural yogurt
1 tbsp vegetable oil
melted ghee or butter, for brushing
cumin seeds, chopped garlic cloves, chopped coriander or chopped chillies (optional)

Steps:

  • Combine the flour, baking powder, yogurt and oil with 1 tsp salt and 2 tbsp water, and bring together into a rough dough. Tip onto a lightly floured surface and knead for a few minutes until slightly smooth, then divide into four to eight pieces, depending on the size of flatbread you want.
  • Heat a heavy-based frying pan over a high heat. To make basic flatbreads, roll the dough pieces out on a lightly floured surface into rough ovals, then fry for 1-2 mins on each side until golden and slightly charred in spots. Alternatively, roll the dough pieces out, brush with a little melted ghee or butter, and scatter over the cumin seeds, garlic, coriander or chillies, if you like. Fold each piece of dough over on itself, then roll out again into a rough oval and cook in the same way.
  • Brush the flatbreads with a little melted butter or ghee, then serve.

This came from "Cooking the Norwegian Way", I'm posting it as written except for the buttermilk bit, but I'm sure it's open for variations. The footnotes recommend trying it with only white, wheat, or rye flour. 2/3 cup cornmeal can be subbed for 2/3 cup flour. You can also use real milk or buttermilk, original recipe called for 3/4-1 cup buttermilk. This is fast and doesn't require 10 different rise/punch cycles or a bread machine! The description on the page says "Flatbread is the oldest form of bread in Norway. Traditionally, families baked enough flatbread at one time to last half a year." Baking time accounts for about 10 minutes per circle, you get about 9 circles as written.

1/2 teaspoon salt
3/4-1 cup plain unsweetened soymilk (or almond, rice, etc.)
1 tablespoon lemon juice

Steps:

  • First, make your vegan buttermilk by placing the lemon juice in the soymilk and letting it sit for 10 minutes.
  • Combine the whole wheat flour, all-purpose flour, oil, baking soda, and salt in a bowl. Mix well.
  • Slowly add just enough "buttermilk" to make a stiff dough.
  • Knead dough for 30 seconds on a well-floured surface, such as a board or tabletop.
  • Roll a medium-sized handful of dough (about 1/4 cup worth) into a ball and then pat it down into a flat circle. Be sure to cover the remaining dough so it doesn't become too dry.
  • With a floured rolling pin and on a well-floured surface, roll dough into a very thin 10-inch circle. (If dough is sticking to the surface on which you are working, dust it with more flour.).
  • Place flatbread on an ungreased cookie sheet. (I would recommend using a 10" pie pan instead.) To make all your flatbread pieces the same shape and size, score the dough circles with a knife, making triangles, X's, squares, or whatever shapes you prefer. (After baking, the flatbread will be broken into pieces along the scored lines.).
  • Bake at 350F for 8 to 10 minutes. Flatbread should be crisp and slightly brown around the edges. Cool on a wire rack and repeat with remaining dough.
  • Break flatbread into pieces and serve plain or with desired topping, such as cheese, dips, or lingonberry preserves.
