Some people will have a big slice of sweet molasses homemade bread and a cup of steeped black tea. This is just a quick recipe for making fish and Brewis. - 1 - Soak over night in separate bowls your salt cod fish and hard bread, drain water from both before adding to saucepan. 2 - In a medium saucepan add water and start the boil on your potatoes about 15 minutes or fork tender, in a frying pan start frying your pieces of fat pork, butter or fatty bacon. When your fat pork starts to fry add your chopped onions continue frying until golden brown. 3 - In another saucepan add water and start your salt cod fish boiling for 10 to 15 minutes, then when your potatoes have boiled remove them from the pot and scoop into a bowl keeping the water for hard bread. 4 - Before adding soaked hard bread to the potato water, drain water from the soaked hard bread, then add hard bread to potato hot water and turn off the heat keep soaked hard bread in HOT water for 5 to 15 minutes or until ready to use. 5- Only use boneless salt cod, when salt cod fish have cooked remove from saucepan and flake apart, now this is when you start to add everything together, potatoes, fish, hard bread, fried onions and fat pork or bacon, salt and pepper to taste, fold everything together then serve. This is just a quick recipe for making fish and Brewis. In Newfoundland and Labrador on Christmas Eve, most everyone made this on Christmas Eve. This was a old tradition that have been forgotten over our generations, hopefully we can keep it alive by making this dish our house old favourite.

Traditional Newfoundland Moose and Brewis This dish is a old Newfoundland favourite, a reward for the hunters after a long day in the woods. Anyone that have cooked moose before would know that moose is a tough meat to work with, you need to build your flavours. Slow cooking it will be your best results, even though it's hard to wait. Moose Steak Raw moose meat cut in small pieces. Fried moose meat with some olive oil. Hard bread soaking in cold water. Hard bread is also used for fish and Brewis, if you are a Newfoundland or from the east coast you know what hard bread is but if you are not from Newfoundland I will give you a little back ground on this lovely bread we call hard bread. Traditional Newfoundland Fish & Brewis Hard bread can be purchased in a east coast store and sometimes in different provinces they have a east coast store available to purchase products. If not you can go online and google hard bread and they will direct you to sites that you can order from, or maybe you know a friend from the east coast that can send you a bag of hard bread. But it's just a dried bread made off simple ingredients " flour, water and sea salt for the purpose of longer shelve life and replace regular bread, years ago it was store in your pantry for many meals and for big family's and fishermen will take them on there boats when they go out to sea for long periods of time. - 1. Cut your moose steak in small pieces, toss them is 1 tbsp of flour until all coated. 2. Preheat your frying pan to medium heat and add butter, olive oil and fat pork, fry until your fat pork is part crispy. 3. After add your moose pieces and start to fry, then add all your spices continue frying until it starts to golden brown, stirring occasionally. Lower heat if fat port starts to smoke. 4. Then add your chopped onion let fry until transparent. Cooking time on this step is about 20 minutes. 5. Then add your sauces and beef broth, transfer your meat mixture over to a roaster with cover, then place in a preheated oven of 350° for 1 1/2 to 2 hours depending on your oven it may be tender enough to remove from oven at this time, checking half way through add more beef broth if it starts to dry. 6. In a small saucepan add your soaked hard bread with two cups of warm water, place on a low heat let warm for about ten minutes, then remove from heat drain water off, keep covered until you are ready to serve. 7. When moose have cooked remove from heat, start plating in a medium plate put a scoop of cooked hard bread then a big helping of your cooked moose with the juice and onions etc, over the top of your hard bread. "You also can cook potatoes to have on the side if you like this will be optional "

This is my Favorite Traditional Newfoundland meal. The ingredients may be hard to find unless you have a "Newfie Shop" close by but if you can find them, this is a treat. In the past, the hard bread and salt cod were meant to last the long winters that are present in Newfoundland and also the long time at sea for most fisherman (Newfoundland was once a prosperous fishing province and many people today still rely on the ocean for their livelyhood). You can either mash the potatoes, fish and hard bread together with the scrunchins or you can just serve each seperate either with the Scrunchins or Drawn Butter. Enjoy!!!

Steps:
- Soak hard bread overnight in cold water Soak cod overnight in large pot of water as well.
- In the morning, change water on cod again.
- When ready to eat, place potatoes in the same pot as the cod and simmer gently until cooked (about 20-30 minutes) Remove from heat and drain.
- Heat hard bread slowly until it comes to a boil and drain.
- There are two toppings with Fish and Brewis, Drawn butter and Scrunchins Drawn Butter Melt butter Add onions and fry until soft Add Water, bring to a boil and then add either flour or cornstarch to thicken.
- Scrunchins Place salt pork in frying pan.
- Heat over medium heat until grease is drawn from the salt pork.
- Add onions and then cook until tender.
