Old-fashioned, traditional Hungarian recipe

Number Of Ingredients 9

3,5 cup boiled, mashed potato
11/10 cups soft butter
4 1/10 cups + 3 teaspoons flour
3 teaspoons salt
1 egg yolk
¼ cup fresh yeast
3 teaspoons sugar
2/5 cup milk
(1 egg to brush the top of each scone)

Steps:

  • Preheat the oven to 180 C/365F.
  • Butter or oil two flat trays and set them aside.
  • Heat the milk until it is just lukewarm.
  • Put in the milk 3 teaspoons flour, the sugar and fresh yeast. Set aside.
  • Pure all the other ingredients in a food processor and last add to the mixture the milk and mix together until well combined.
  • Put the dough on a floured work surface and cover it, and allow it to prove for about an hour until doubled in size.
  • Knead the dough very lightly.
  • Pat out to a round 1cm/2/5in thick. Use a 4cm/1,5in cutter to stamp out rounds and place on the prepared flat trays. Lightly knead together the rest of the dough and stamp out more scones to use it all up.
  • Brush the tops of the scones with yolk.
  • Bake for 12-15 minutes until well risen and golden.
  • Cool on a wire rack.

1 pound cooked potatoes
4 ounces self-rising flour
2 ounces butter
½ pinch salt

Steps:

  • Heat a lightly greased griddle or cast iron skillet over medium-high heat.
  • Mash potatoes with flour, butter, and salt until a stiff dough forms.
  • Turn dough out onto a lightly floured work surface. Knead dough lightly and roll dough out to about 1/2-inch thick. Cut into six triangular wedges.
  • Working in batches, cook scones, turning once on hot griddle until golden brown, 4 to 5 minutes per side.

This recipe is an adoptee from the RecipeZaar account. It's a nice, simple potato casserole; very satisfying. Next time I make it, I will toss the potatoes with most of the butter, rather than leaving the butter in the bottom of the casserole. I will also drizzle the top with some butter (the breadcrumbs don't seem to brown, otherwise). I hope you like it!

6 medium potatoes, cooked and sliced
1/2 cup melted butter or 1/2 cup margarine
4 large hard-boiled eggs, chopped
2 cups sour cream, about 16 oz
1 1/2 teaspoons salt
1/4 teaspoon pepper
1 cup fine dry breadcrumb
1/2 cup green onion, chopped
paprika

Steps:

  • Pour melted butter in a casserole.
  • In a medium bowl, combine eggs, sour cream, salt and pepper and mix well.
  • Layer in casserole half of the potatoes, green onions, sour cream mixture and bread crumbs.
  • Repeat a second layer of each.
  • Sprinkle with paprika.
  • Bake in 350 F for 30 minutes.

Easy potato scones image

Topped with crisp bacon and grated mature cheddar, these simple pan-fried potato scones make a hearty brunch for friends

250g potatoes , cut into cubes
200g plain flour
1 tsp baking powder
50g butter , melted, plus extra for frying
3 tbsp milk
2 eggs , beaten
2 tsp oil , for frying

Steps:

  • Cook the potatoes in plenty of salted simmering water until tender. Drain well and mash. Sift the flour and baking powder into a bowl, add the butter, milk, eggs, mash and plenty of seasoning and mix to a sticky dough.
  • Heat some butter and a little oil in a large frying pan. Fry dollops of the mixture as you would Scotch pancakes for 3 mins on each side until browned. You may need to do this in 2 batches so keep the fried ones warm in the oven. Serve with crisp bacon and grated mature cheddar, or blue cheese and a drizzle of honey.
