Steps:
- Combine everything in a blender and mix until combined and nuts are crushed.
- Heat up waffle iron and grease lightly with nonstick spray.
- Cook according to manufacturers directions.
- Top with pure maple syrup, butter, fat free whipped cream, fruit or whatever else you want!

APPLE PECAN BAKED PANCAKE
While camping, we wanted a coffee cake, but only had pancake mix. I used Trader Joe's multigrain baking mix, but you can use any kind of pancake or baking mix you like.

Steps:
- 1. Heat oven to 350?.
- 2. Prepare pancake mix according to package directions; set aside.
- 3. Pour melted butter in a 9" pie plate or 8" cake pan.
- 4. Sprinkle diced apple, pecans, brown sugar, and cinnamon over butter in bottom of pan.
- 5. Carefully pour batter on top.
- 6. Bake 30-35 minutes or until top springs back when touched.
- 7. Loosen edges and invert onto a serving plate.
- 8. Cut in wedges and serve with warm maple syrup and/or apple butter.

- Preheat a large skillet or griddle; mist with cooking spray. Pour batter 1/4 cup at a time, spreading gently. Cook until bubbles form on tops of pancakes and bottoms are light golden, about 2 minutes. Flip pancakes and cook until light golden and cooked through, 1 minute longer. Keep pancakes warm on a plate in oven while cooking remaining flapjacks.
