PARSLIED BROWN RICE PILAF
This simple side plays up the brightness of fresh parsley. This unassuming herb is pleasantly verdant and pairs wonderfully with zippy lemon zest and nutty brown rice. Compared with unenriched white rice, brown rice is higher in fiber, protein, B vitamins, iron, and magnesium. New research shows that eating whole grains like brown rice daily reduces colorectal cancer risk, and the more you eat the lower your risk.

Steps:
- Cook rice according to package directions, omitting salt and fat.
- While rice cooks, heat oil in a large nonstick skillet over medium. Add onion and carrot; cook, stirring occasionally, until tender, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Remove from heat; stir in parsley, rind, salt, and pepper.
- Place cooked rice in a large bowl, and fluff with a fork. Add onion mixture, and stir to combine.

LEMON PARSLEY RICE
Steps:
- Heat 2 cups of water to a boil and stir in rice. Return to a boil, cover and reduce heat to low. Cook for 20 minutes. Remove lid and fluff rice with a fork. Toss in parsley, lemon and butter. Season and serve.
TRACY'S PARSLIED RICE
This is what I serve with Crockpot Chicken and Gravy. I also cook up some mixed vegies ... hollow out a spot in the center of the rice and serve the vegies in it.

- 1. Cook rice till done and rinse.
- 2. add butter, onion and parsley (lots of it)to a large casserole dish. Salt well.

- Heat the oven to 350°F or 180°C.
- Put the rice, stock, cream, garlic and parmesan into an ovenproof casserole dish.
- Cover with foil and put in the oven to cook for 40-45 minutes.
- Check on the rice at 35 minutes- stir it gently and lay knobs of butter over the top. Re-cover and put back in the oven to finish cooking.
- When the rice is done- stir, serve immediately and enjoy!

- Combine broth and salt in heavy large pot. Bring to boil. Add rice. Return to boil. Reduce heat to low. Cover; cook until broth is absorbed, about 25 minutes. Remove from heat. Steps:
- Place frozen chicken in crock pot and season how you like it. Cook on High setting 2 hours (ish) ..till chicken is cooked through but not falling apart.
- Remove chicken. Add cream of chicken soup with the sour cream to broth in crock pot.
- Return chicken to crockpot and bury in the gravy.
- Finish cooking...at least another hour. Gravy should be hot and chicken cooked through.
- Serve with Tracy's Parslied Rice
