TUNA PATTIES
These are yummy little morsels combining ingredients I had on hand with some red pepper we picked up at a farmer's market today. The binding was a bit of a challenge, but if you don't need an elegant dinner, who cares if they break apart? In the past, when I made these, they were mistaken for salmon patties. I think that's pretty cool...isn't salmon more expensive? You can experiment with your own blend of spices and herbs, but avoid tarragon. It makes the patties taste bitter. Kids like these, and they're attractive next to some buttered corn. Enjoy!

Steps:
- In a mixing bowl, combine chives, onion powder, garlic powder, sea salt, black pepper, paprika, parsley, thyme, dill, caraway seed and rosemary. Use a fork to crush the herbs and blend them together.
- Add in onion and pepper and stir again.
- Add tuna and egg and stir well.
- Add approximately 3/4 c breadcrumbs and stir. Add more if needed to bind the mixture well.
- Put remaining breadcrumbs in a shallow plate.
- Heat olive oil in a large pan over medium heat.
- Form tuna mixture into 4 patties. Coat both sides in breadcrumbs and add to pan.
- Cook until browned, about 3-4 minutes each side.

TASTY TUNA PATTIES
If you're ever pressed for time, start with a couple cans of tuna and you'll have a delicious patty in no time that you can serve a number of different ways. Add them to buns with your favorite toppings for sandwiches, serve them alongside a fresh salad, or make smaller versions of them and serve them as appetizers with tartar sauce on the side. There are a lot of great flavor elements in these easy and versatile patties, but the quantities are small so the flavor still comes out pretty mild. If you're looking for a stronger flavor, increase quantities as you like!

- Combine tuna, eggs, bread crumbs, Parmesan cheese, celery, lemon juice, seafood seasoning, mustard, pepper, and dill in a bowl; stir gently until fully and evenly combined. Shape mixture into 4 patties.
- Heat oil in a nonstick skillet over medium-high heat. When oil is hot, gently lay 2 tuna patties into the skillet. Don't over crowd - only add as many patties as comfortably fit with room to flip them.
- Cook tuna patties until golden brown, 3 to 5 minutes per side, adjusting the heat as needed if they're cooking too quickly. Repeat with remaining patties, adding remaining oil as needed.

TRACEY'S TASTY TUNA PATTIES
I got this recipe from my great grandmother and I have added to it throughout the years I have been making them. They are awesome for a meal and the family loves them. It's a definite comfort food that kids can eat with their fingers when cold - a great idea to get fish into a child's diet.

Steps:
- Take can of corn, flaked tuna, mashed potato, cooked rice, 1 egg, garlic, salt, pepper, herbs, onion and cheese and mix them together in a large bowl.
- Heat cooking oil in a frying pan on stove top.
- Take mixture and roll into golf ball sized balls.
- Put plain flour into a bowl, mix beaten egg, 1/4 cup of milk, 1/4 teaspoon of salt and 1/4 teaspoon of pepper together, then put into a bowl, put breadcrumbs into a bowl.
- Take balls of mixture and drop them into the bowl of plain flour, then put them into the bowl of egg mixture, then coat them in the the bowl of breadcrumbs.
- Do about 6-7 balls at a time. Put them in the heated oil pan, pressing them down to make into patties at the same time.
- Cook for about 10 - 12 minutes or until they are golden brown, then turn them over and cook the other side until they are golden brown.
- Take them out and place them on paper towels to drain the excess oil off of them.
- Repeat steps until all of the mixture is used up.
- You can serve them hot or cold with salad or with chips or even steamed vegetables.
- If you are not into really fried crispy patties, you could skip instructions 4-6 and just take the plain mixture and make them into balls.
- Spray your frying pan with cooking spray and then put mixture balls into the pan.
- Press them down to make them patties. cook until they are golden brown. (around 10-15 minutes each side)
- I have cooked these patties both ways and they are so delicious.

EASY TUNA PATTIES

THAI TUNA PATTIES
These patties are delicious on top of salad greens and drizzled with some Kewpie mayonnaise, or in a burger. I made them for the first time without measuring, so I've guessed the amounts. Feel free to adjust to taste!
