A hearty, savory slow cooker stew with potatoes, carrots, celery, broth, herbs and spices. You won't be slow to say 'yum'!

2 pounds beef stew meat, cut into 1-inch pieces
¼ cup all-purpose flour
½ teaspoon salt
½ teaspoon ground black pepper
1 clove garlic, minced
1 bay leaf
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 onion, chopped
1 ½ cups beef broth
3 potatoes, diced
4 carrots, sliced
1 stalk celery, chopped

Steps:

  • Place meat in slow cooker. In a small bowl mix together the flour, salt, and pepper; pour over meat, and stir to coat meat with flour mixture. Stir in the garlic, bay leaf, paprika, Worcestershire sauce, onion, beef broth, potatoes, carrots, and celery.
  • Cover, and cook on Low setting for 10 to 12 hours, or on High setting for 4 to 6 hours.

My friend Tracey made this dish for a church function and I fell right in love with it. I have made a few changes since I don't like liquidy stews but I will leave that option up to you. It is warming, filling, and good for raising your HDL levels...if you leave out the bacon. Kids will love it!

1 lb ground beef (low fat works well)
1 lb bacon (maple flavored is best)
1 medium onion (chopped)
1 (16 ounce) can baked beans (maple flavored is best)
1 (8 ounce) can dark red kidney beans
1 (8 ounce) can light kidney beans
1 (8 ounce) can butter beans
1 cup brown sugar (dark brown is best)
1/2 cup ketchup
1/3 cup yellow mustard (optional)
3 tablespoons vinegar
pepper (to taste) or garlic powder (to taste)
cooked rice

Steps:

  • Brown the hamburger in a skillet, drain it, and rinse it with water (i use paper towels over a noodle strainer).
  • Chop with the onion into the size you like.
  • Brown the bacon until crispy with the onion.
  • Drain bacon/onion mixture or pat with paper towels.
  • Combine the hamburger and bacon mixture into a large crock pot.
  • Add your beans (bean liquid optional depending on how liquidy you like your stews).
  • There is no exact science for the last few ingredients. Each condiment can ruin the beans if overused. So, grab a spoon and start tasting but the amounts listed work just fine if you don't like to brave cold bean stuff.
  • Stirring occasionally with the crock pot on a medium setting, let the bean mixture simmer in the crock pot for an hour or so until heated throughly. If you find it getting too thick, add some water.
  • I like to serve it over hot brown rice which stretches the amount of serving but it can be eaten as just a soup/stew with crackers.

Easy three beans and three steps (a,b,c). Good for open houses or where people drop in. Stays warm in crock pot. I kinda think this is from the 1950's. My great grandma, my grandma, my mom and now I cook it. One of my sisters cooks it and I'm working on my daughter to cook it too! (diabetes substitutions at bottom of recipe).

1 cup warm water
2 (15 ounce) cans baked beans, Bush name, undrained
2 (12 ounce) cans lima beans, drained
2 (12 ounce) cans kidney beans, drained
2 1/3 cups ketchup
1/4 cup picnic prepared mustard
1/3 cup brown sugar or 1/3 cup dark molasses
2/3 cup wrights liquid smoke
1/3 cup genuine apple cider vinegar
2 lbs lean hamburger
1/4-1/2 cup chopped onion
1 cup Spam (optional) or 1 cup ham, chopped (optional)

Steps:

  • (Diabetes substitutions at bottom of recipe).
  • Before Part take 1 cup warm water and put it into the crock pot and turn it on high. This is sort of to preheat the pot; without water it would crack see.
  • Part take the beans section and warm in microwave or on stove top until steaming. Stir and pour into the crock pot (nice to use maple or honey flavor beans).
  • Part ketchup, mustard, brown sugar, liquid smoke, vinegar. This is like a sauce. Simmer and stir on stove top or microwave until turns brown and smells less vinegary (20 minutes maybe). Dump into the crock pot and stir well.
  • Part meat and onion; brown on stove top or in microwave together then dump it in pot.
  • See how it goes a, b c all warm before going into the pot. Put on the lid and keep on high for on hour and 5-8 hours on low then serve with rice and cornbread, cheese shredded on top or glass of milk Complete meal for open houses or crowds of people. Stays warm in pot and is easy to self serve.
  • Diabetes substitutions: Can substitute tomato paste for ketchup and powdered mustard for regular. Add water a little and artificial sweetener comes in brown sugar flavor. The Bush baked beans can use navy beans plain and use brown rice instead of white rice. See these are all diabetes or trying to lose wight substitutions. You can also add wheat germ to the corn bread.

  • In 4- to 5-quart slow cooker, mix all ingredients except green beans.
  • Cover; cook on High heat setting 6 to 7 hours, stirring occasionally, adding green beans during last hour of cook time. Before serving, remove and discard bay leaves.

This is one of my favourite crock pot recipes. With the addition of cloves and brown sugar, it's a deliciously different way to prepare beef. Very reminiscent of the English Spiced Beef my husband's grandmother used to make. I serve this with hot buttered noodles or small roasted potatoes.

1 1/2 lbs beef stew meat, cut into 1 inch cubes
1 medium onion, peeled and quartered
4 whole cloves
1 1/2 tablespoons brown sugar
1/2 teaspoon salt
1/2 teaspoon bottled beef gravy, sauce
1 tablespoon red wine vinegar
1 bay leaf
1/8 teaspoon thyme
3/4 cup water
1/4 cup flour

Steps:

  • Place meat in crock pot.
  • Stick one clove into each quartered onion.
  • Place in crock pot with meat.
  • Sprinkle with sugar and salt, and toss to coat.
  • Combine gravy sauce, vinegar, bay leaf, thyme and water.
  • Pour over meat.
  • Cover and cook on low for 8 hours or until tender.
  • Turn control to high.
  • Mix flour with a small amount of water to form a thin paste.
  • Stir into meat juices.
  • Cook, covered, on high for 15 to 20 minutes until sauce has thickened.

1 1/2 lbs boneless pork, cut into 1 inch cubes
1 tablespoon oil
4 medium potatoes, peeled and cut into 1 inch pieces
4 medium carrots, peeled and cut into 1/2 inch pieces
1 1/4 cups onions, coarsely chopped
1/2 cup celery, sliced
1/2 cup green bell pepper, thinly sliced (optional)
10 ounces frozen lima beans, thawed (optional)
29 ounces diced tomatoes, undrained
1/2 cup dry white wine
3 tablespoons quick-cooking tapioca
1/2 teaspoon salt, to taste
1 teaspoon brown sugar
2 teaspoons basil
1 tablespoon garlic, minced
3/4 teaspoon pepper, to taste

Steps:

  • Brown pork in oil.
  • Put slow cooker liner in crock pot.
  • Put pork and vegetables in crock pot.
  • In medium sized bowl put diced tomatoes, wine, tapioca, salt, brown sugar, basil, garlic, and pepper; and pour over pork/veggie mixture.
  • Cover and cook on low for 6-7 hours.
