TORTILLA SOUP MIX IN A JAR

Steps:

• Combine the first 8 ingredients in a plastic zipping bag; set aside. Layer rice in a wide mouth one quart jar; pack seasoning bag on top. Fill remaining jar with crushed tortilla chips, packing gently; secure lid. Tape can of chicken to the top of the jar, if desired. Tie jar of mix to the can of diced tomatoes; attach instructions. Instructions: "Place tortilla chips in a small bowl; set aside. Remove seasoning packet; set aside. Add rice to a stockpot; stir in 10 cups water. Mix in tomatoes with chiles and seasoning packet; bring to a boil. Reduce heat; simmer for 20 minutes. Add tortilla chips and chicken, cover and simmer 5 additional minutes. Spoon into bowls while hot."

CHICKEN TORTILLA SOUP MIX

Steps:

• In a quart wide mouth-sized mason jar, place rice, pressing down carefully.
• Next, add seasonings on top of rice. Put about 2 -2 1/2 cups crushed tortilla chips in a plastic zip-lock bag. Place tortilla chips inside the jar on top of rice. Close with lid. Wrap up with a can of chicken if you like.
• Include a tag with the following directions:
• Remove tortilla chips from the jar and set them aside. Pour remaining jar contents into a large pot. Add 10 cups of water and one 10-13 oz can of chicken and a can of diced tomatoes and green chilies. Bring to a boil, then lower heat, cover, and simmer for 20 minutes or until rice is tender. Add tortilla chips, and cover and simmer for five more minutes. Tortilla chips can also be added on top of the soup. Make 12 Cups.

CHICKEN TORTILLA SOUP MIX JAR GIFT

Steps:

• In a quart sized jar, place rice, pressing down carefully.
• Then add seasoning packet, making sure it can be seen from the edges.
• Then fill the rest of the jar with crushed tortilla chips.
• Close with lid.
• Tape a can of chicken to the top of jar (or if you wish, include instructions for adding a can of chicken to the instructions below).
• For 12 cups of delicious Tortilla Soup:.
• Carefully empty tortilla chips from jar and set aside in a bowl.
• Remove seasoning packet and also set aside.
• Pour remaining jar contents into a large pot for cooking rice.
• Add 10 cups of water, seasoning packet and one can (10oz) of diced tomatoes and green chilies.
• Bring to a boil, then lower heat, cover and simmer for 20 minutes.
• Add tortilla chips, and cover and simmer for five more minutes.
• Serve immediately.

CLASSIC TORTILLA SOUP

Steps:

• For the soup: Heat a heavy saute pan over medium-high heat. Cook the garlic, tomatoes, onion and New Mexico chile in the pan. Using tongs, turn the vegetables occasionally during cooking to ensure charring on all sides. Remove the vegetables once slightly blackened on all sides, about 10 minutes. Remove the peel from the garlic. Add the charred vegetables to the blender with the tortilla pieces and 2 cups chicken broth. Blend until smooth. Pour the mixture into a large saucepan and add the remaining 4 cups chicken broth. Bring the mixture to a boil; reduce the heat and simmer, about 20 minutes. Sprinkle with salt and pepper.
• For the tortilla strips: In a medium, heavy skillet, pour enough oil to reach a depth of 1/2 inch. Heat over medium-high heat until very hot but not smoking. Add the tortilla strips in batches and fry until golden and crisp, about 2 minutes. Remove with a slotted spoon and drain on paper towels. Set aside.
• To serve: Ladle the soup into 6 individual serving bowls. Serve with sour cream, avocados, cheese, tortilla strips, cilantro and lime wedges on the side.

TORTELLINI SOUP IN A JAR

Steps:

• Layer lentils, leeks, peppers, and carrots in Mason jar.
• Place bay leaf standing up on one side of the jar.
• Pour tortellini into jar, being careful not to overfill.
• Add the bouillon, onion powder, pepper, salt, fennel, parsley and paprika to a small zip-top bag.
• Seal the bag and place on top of the soup mixture.
• Add the following directions: Add all ingredients to a large saucepan with 5 cups of water and 1 (14oz) can of diced tomatoes. Bring to a boil. Reduce heat and simmer for 15-20 minutes or until lentils and tortellini are tender. Serve topped with grated cheese or pesto. Optional additions: Add 2 cups of chopped chicken or turkey and ½ cup frozen peas.

TEXAS TWO STEP SOUP MIX IN A JAR

Steps:

• Pour gravy mix into wide-mouth jar.
• In small bowl, stir together chili powder, oregano, cumin, onion and garlic salt.
• Pour into jar to make second layer.
• Add layers to tortilla chips and pasta to fill the jar.
• Attach a gift tag with the following instructions:.
• TEXAS TWO STEP SOUP.
• Brown 1/2 lb ground beef in large saucepan. Add contents of jar and 7 cups of water; heat to boiling, stir in 1 (15 oz) can corn with red and green bell peppers and ` (16 oz) can chopped tomatoes.
• Reduce heat, cover and simmer for 20-25 minutes or until pasta is tender, stirring occasionally.
• Serve with crushed tortilla chips and shredded Monterey Jack cheese, & sour cream if desired.
• Makes 8 servings.
