Tortilla cups baked in a muffin tin are filled with a healthy and delicious mix of mushrooms, spinach, avocado and cheese.

1 tablespoon olive oil
1/2 medium yellow onion, diced small
1 pound button mushrooms, trimmed and sliced
5 ounces baby spinach (5 cups)
1 1/2 cups shredded pepper Jack (6 ounces), divided
Salt and pepper
Cooking spray
6 flour tortillas (8-inch), warmed
1 avocado, sliced

Steps:

  • Preheat oven to 450 degrees. In a large skillet, heat oil over medium. Add onion and cook 3 minutes. Increase heat to medium-high, add mushrooms, and saute until golden, 5 to 8 minutes. Transfer to a large bowl, toss with spinach and 1 cup pepper Jack, and season with salt and pepper.
  • Lightly coat 6 jumbo muffin cups with cooking spray and press tortillas into cups. Divide vegetable mixture among cups and top with remaining 1/2 cup pepper Jack. Bake until cheese is melted and tortillas are light golden and crisp, about 7 minutes. Serve tortilla cups topped with avocado.

2 tablespoons extra virgin olive oil
8 ounces large portobello mushrooms, gills discarded, finely chopped
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon salt
1 package (8 ounces) cream cheese, softened
4 ounces whole-milk ricotta cheese
10 flour tortillas (8 inches)
Oil for deep-fat frying
Major Grey's chutney

Steps:

  • In a cast-iron or other heavy skillet, heat olive oil to 350°. Add mushrooms; saute 4 minutes. Add oregano, thyme, pepper flakes and salt; saute until mushrooms are browned, 4-6 minutes. Cool. Wipe out skillet., Combine cheeses; fold in mushrooms, mixing well. Spread 3 tablespoons of mushroom mixture on bottom half of each tortilla. Roll up tightly, making sure filling isn't seeping from either end. Secure rolls with toothpicks., In same skillet, heat oil to 375°. Fry taquitos, a few at a time, until golden brown, 2-4 minutes. Drain on paper towels. When taquitos are cool enough to handle, discard toothpicks. Serve with chutney.

This is so simple to make and it only takes minutes. Use any tortilla you wish and any type of mushroom, or for that matter any cheese. This is just a basic recipe. They are lovely crisp wedges. Serve with olives on the side or pickled onions

2 10-inch whole wheat tortillas, baked til almost crisp
6 tablespoons dried shiitake mushrooms
3 tablespoons grated aged cheddar cheese
3 tablespoons grated monterey jack cheese
1 teaspoon chili powder (optional)

Steps:

  • Pour boiling water over the dried mushrooms and soak for 5 minutes, drain& chop the mushrooms.
  • When the tortillas are almost crisp, (3-5min 350 oven), remove from oven, sprinkle with the chili if using sprinkle the cheese evenly over the two tortillas, add the mushrooms.
  • Broil until the cheese bubbles apprx 6 minutes.
  • Slice each tortilla into 6 wedges& serve.

MUSHROOM QUESADILLAS

3 tablespoons butter, plus more as needed
10 ounces white mushrooms, sliced
1/2 to 1 teaspoon chili powder
1/2 teaspoon kosher salt
1/4 cup coarsely chopped fresh cilantro leaves
Four 10-inch flour tortillas
8 ounces shredded Monterey jack cheese (about 2 1/2 cups)
2 ounces crumbled feta cheese (about 1/2 cup)
Optional garnishes: Sour cream, cilantro sprigs, salsa

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil.
  • Melt 2 tablespoons of the butter in a medium skillet over medium-high heat. Add the mushrooms, shake the pan to distribute them evenly in the pan, and then cook without disturbing until the mushrooms begin to brown, about 5 minutes. Do not add salt. Add the remaining 1 tablespoon butter along the side of the skillet if the skillet seems very dry. Toss the mushrooms, and continue to cook until nicely browned, about 2 to 3 minutes more. Season mushrooms with the chili powder and salt and cook for 1 minute. Stir in the chopped cilantro and set aside.
  • Toast the tortillas directly on a medium gas burner, turning occasionally until slightly blistered on each side. (If you have an electric burner, do this in a dry cast-iron skillet.) Place the tortillas on the prepared baking sheet. Spread the jack cheese on one half of each tortilla, top with some of the mushrooms, and then sprinkle with the feta. Fold the other half of the tortilla over the filling, to make a half-moon shape. Lay another sheet of foil over the quesadillas. Bake until the cheese melts, about 12 minutes. Serve whole or sliced into wedges, with optional garnishes.

1 cup shredded cheddar cheese
1 cup sour cream

1/2 cup chopped green onions
Garlic powder to taste
Seasoned salt to taste
5 flour tortillas (10 inches)
Salsa, optional

Steps:

  • Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

4 slices bacon
1 small onion, finely chopped
1 (10 ounce) can mushrooms, drained and finely chopped
4 ounces cream cheese
14 slices bread
1/4 cup butter, melted

Steps:

  • In a skillet, cook bacon, onions and mushrooms until tender.
  • Add cheese,combine and set aside.
  • Trim crusts from bread and flatten slices slightly with rolling pin.
  • Spread each slice with approximately 2 Tbsp of mixture.
  • Roll up jelly roll fashion and secure with toothpicks.
  • Place seam side down on parchment lined baking sheet.
  • Cover and chill for at least 1 hour or freeze in a single layer.
  • Place frozen roll-ups in a sealed bag and return to freezer.
  • Let frozen roll-ups stand at room temperature for 30 minutes before baking. Brush rolls with melted butter.
  • Bake in a 375*oven for 10-15 minutes or until lightly brown.
  • Remove toothpicks and slice in half. Serve warm.
  • Tip: Use fresh sautéed chopped mushrooms.-.

3/4 pound cremini or button mushrooms, trimmed and quartered
1 garlic clove, minced
1/4 teaspoon cayenne pepper
Coarse salt and ground pepper
1 1/2 cups reserved cooked black beans from Spicy Black Bean Soup, or 1 can (15.5 ounces) black beans, rinsed and drained
8 corn tortillas, warmed and halved
2 cups salsa
1 1/4 cups shredded Monterey Jack cheese (4 ounces)

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat oil over medium-high. Add mushrooms and cook, stirring often, until browned, 7 minutes. Add garlic and cayenne; season with salt and pepper. Add black beans and stir to combine. Cook until beans are warmed through, 2 minutes. Remove from heat.
  • Arrange 5 tortilla halves in a 2-quart baking dish. Top with half the bean mixture and 1/2 cup salsa, then sprinkle with one-third the cheese. Repeat with another layer of tortilla halves, bean mixture, salsa, and cheese. Top with remaining tortilla halves, salsa, and cheese.
  • Cover with foil and bake until center is hot and cheese melts, 10 minutes. Uncover and bake until cheese is bubbling, 5 minutes.
