CREAMY HERB TORTELLINI
Easy, fast, creamy cheese tortellini! With butter and creme fraiche, it's gotta be good! Throw in some fresh herbs and garlic and it's done. Serve this as a side dish to any meat entree, or if you don't want to share, make it your meal and eat it all yourself! You can use frozen tortellini, but the fresh pasta is so good

Steps:
- Cook tortellini according to package directions.
- While the tortellini is boiling, heat the butter in a small skillet over medium low heat. When butter is almost fully melted, add the herbs, onion and garlic.
- Continue to cook, stirring occasionally, for 2 minutes. You don't want it to sizzle, you are just warming them in the butter, so the low heat is important.
- Put the creme fraiche in a serving bowl large enough to hold the tortellini. Add the warm butter herb mixture and stir to combine - it doesn't have to be stirred to a smooth consistency, the hot pasta will take care of that.
- Drain the pasta and add to the serving bowl, mixing well to coat pasta. Season with salt and pepper to taste and serve.

- Bring a large saucepan of water to a boil. (If desired, add a little salt to the boiling water to season it.).
- Add the pasta and cook till just tender. Drain well.
- Heat butter in another saucepot and add cooked pasta, parsley, oregano, pepper and half the cheese.
- Stir gently until heated through and combined well.
- Transfer to a serving dish and sprinkle with the remaining cheese.

TORTELLINI SALAD WITH FRESH HERB AND TOMATO VINAIGRETTE

- Bring a large pot of salted water to a boil over high heat. Cook the tortellini according to the package instructions. When fully cooked, drain and toss with 2 tablespoons of the olive oil and allow to cool to room temperature.
- Meanwhile, in a nonreactive mixing bowl, combine the diced tomatoes, herbs, shallots, lemon juice, and remaining 1 1/4 cups olive oil. Mix to combine and season with gray salt and pepper to combine. When the tortellini have cooled to room temperature toss with the vinaigrette.
- To serve, line the perimeter of a large serving platter with overlapping slices of the mozzarella. Spoon the tortellini salad in the center and scatter the arugula leaves over the top.

- Drain tomatoes, reserving 2/3 cup juice. Drain artichoke hearts, reserving 3/4 cup marinade; chop artichokes. , In a Dutch oven, heat oil over medium-high heat. Add onions, herbs, garlic and pepper flakes; cook and stir until onion is tender, 4-5 minutes. Stir in tomatoes and reserved tomato juice and artichoke marinade; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 10-12 minutes. Meanwhile, cook tortellini according to package directions., Drain tortellini; add to tomato mixture. Gently stir in olives, salt and artichoke hearts; heat through. Sprinkle with cheese.
