Easy Crock Pot Tortellini and Spinach Soup is a hearty soup filled with cheese tortellini, spinach, tomatoes, and lots of spices!!

20 oz cheese tortellini
1 10 oz. bag fresh spinach
2 14.5 oz cans Italian style diced tomatoes
6 cups chicken broth ((I use the less sodium version))
8 oz cream cheese
1 tsp cumin
1 tsp oregano
1 tsp garlic salt (with parsley flakes)
pepper to taste

Steps:

  • Place all ingredients in the crock pot, minus the tortellini. Make sure cream cheese is cut up in 1 inch cubes before placing in crock pot.
  • Cook on HIGH for 2-3 hours stirring occasionally.
  • Add tortellini and continue cooking on HIGH for an additional hour. Serve warm.

1 (20-ounce) or 2 (10-ounce) bags fresh cheese tortellini
1 (22- to 25-ounce) jar marinara sauce
1 cup water
5 ounces fresh baby spinach
1 cup shredded low-moisture mozzarella cheese

Steps:

  • Coat a 5-quart or larger slow cooker with cooking spray. Add the tortellini, marinara, water, and spinach, and stir well to combine. Sprinkle the mozzarella in an even layer over top.
  • Cover and cook until the pasta is cooked through and the cheese is melted on the HIGH setting, about 1 hour. Serve immediately.

This delicious Crock Pot Cheesy Spinach and Tomato Tortellini is a great weeknight meal the whole family will love!

4 cups chicken or vegetable broth
2 14 oz cans Italian-style diced tomatoes
1 8 oz block cream cheese, chunked into pieces
2 9 oz packages fresh cheese tortellini (or whatever flavor tortellini you like)
1 5 oz bag fresh spinach
salt and pepper to taste
parmesan cheese

Steps:

  • Place chicken or vegetable broth, diced tomatoes, and cream cheese chunks into slow cooker and mix together.
  • Cover and cook on low 2-3 hours.
  • Stir in the pasta.
  • Cover and cook on low for about two more hours, or until pasta is cooked.
  • Stir in spinach until wilted.
  • Salt and pepper to taste, and serve with parmesan cheese.

Since I'm out of the house by 7am, and not home until 5pm I learned to love crock pot meals. I saw this recipe on Facebook and we loved it, especially dipping the bread into the broth. Plus it's a recipe you can make your own by adding whatever you like, so I thought I would share with you !!

2 can(s) italian style diced tomatoes (i used roasted garlic & basil)
4 c vegetable broth
1 pkg cream cheese
1 bag(s) fresh spinich

Steps:

  • 1. Put all ingredients into crock pot, chunking up the cream cheese, and cook on low for 5 hours.
  • 2. I used the meat tortellini, added a side salad with crusty Italian bread and it was a hit.
  • 3. The next time I make it I'm going to try cheese tortellini and maybe add some chicken.

1 cup thinly sliced yellow onions
4 tablespoons butter, melted

2 cups Progresso™ Broth Vegetable(from 32-oz carton)
1 package (20 oz) refrigerated cheese-filled tortellini
1 package (8 oz) cream cheese, softened and cubed
3 cups baby spinach leaves, lightly packed
1/2 cup shredded Parmesan cheese (2 oz)
1/4 cup shredded fresh basil leaves

Steps:

  • Spray 4 1/2- to 5-quart slow cooker with cooking spray. Mix mushrooms, onions, melted butter, soy sauce, salt and pepper in cooker. Pour vegetable broth over vegetable mixture.
  • Cover; cook on Low heat setting 7 to 8 hours or until vegetables are very tender and browned.
  • Stir in tortellini and cream cheese. Cover; cook on Low heat setting 15 minutes. Cook and stir 14 to 16 minutes longer or until tortellini are tender. Stir in spinach. Let stand 5 minutes. Top with Parmesan cheese and basil.

cherry tomatoes, halved

Steps:

  • Cook tortellini according to package directions.

  • Gently mix in tortellini and cherry tomatoes with skillet contents; warm through, and serve.
