2 medium celery stalks, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)

2 cartons (32 oz each) Progresso™ reduced-sodium chicken broth (8 cups)
1 package (9 oz) refrigerated cheese-filled tortellini
1 cup chopped cooked chicken
2 cups lightly packed fresh baby spinach leaves
2 tablespoons chopped fresh Italian (flat-leaf) parsley
1/4 teaspoon pepper
Freshly grated Parmesan cheese

Steps:

  • In 4-quart saucepan, melt butter over medium-high heat. Add carrots, celery and onion; cook 6 to 8 minutes, stirring occasionally, until beginning to brown on edges. Stir in garlic; cook 30 seconds.
  • Stir in broth. Heat to boiling; reduce heat. Stir in tortellini and chicken. Simmer 7 to 9 minutes, stirring occasionally, until tortellini are tender.
  • Stir in spinach, parsley and pepper. Top each serving with cheese.

1 pound Italian sausage
1 cup chopped onion
2 cloves garlic, minced
5 cups beef broth
½ cup water
½ cup dry red wine
8 ounces fresh tortellini pasta
1 cup sliced carrots
2 cups stewed tomatoes
½ teaspoon dried basil
½ teaspoon dried oregano
8 ounces tomato sauce
1 ½ cups sliced zucchini
2 green bell peppers, seeded and cubed
3 tablespoons chopped fresh parsley

Steps:

  • Remove casings from sausage. Brown sausage and cook until crumbly. Remove meat from pot. Reserve 1 tablespoon drippings.
  • Cook onion and garlic in the drippings until tender. Add broth, water, wine, carrots, tomatoes, basil, oregano, tomato sauce, and the cooked sausage. Bring to a boil; reduce heat and simmer uncovered 30 minutes.
  • Add zucchini, green peppers, parsley, and tortellini. Simmer another 25 minutes, covered, for fresh tortellini, or 45 minutes, covered, for frozen tortellini. Serve with fresh parmesan cheese sprinkled over the top.

3/4 pound Italian turkey sausage links, casings removed
1 medium onion, chopped
6 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth
1-3/4 cups water
1 can (14-1/2 ounces) diced tomatoes, undrained
1 package (9 ounces) refrigerated cheese tortellini
1 package (6 ounces) fresh baby spinach, coarsely chopped
2-1/4 teaspoons minced fresh basil or 3/4 teaspoon dried basil
1/4 teaspoon pepper
Dash crushed red pepper flakes
Shredded Parmesan cheese, optional

Steps:

  • Crumble sausage into a Dutch oven; add onion. Cook and stir over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Stir in the broth, water and tomatoes. Bring to a boil., Add tortellini; return to a boil. Cook for 5-8 minutes or until almost tender, stirring occasionally. Reduce heat; add the spinach, basil, pepper and pepper flakes. 1 medium onion, chopped
1 teaspoon minced garlic
4 carrots, peeled and sliced into 1/4-inch coins
8 cups chicken stock
1 cup frozen green peas
One 12-ounce container tricolor cheese tortellini
2 ears corn, kernels removed
2 cups fresh baby spinach, torn into smaller pieces
Grated Parmesan cheese, for garnish

Steps:

  • In a large stockpot over medium heat, heat the oil until it shimmers, about 2 minutes, then add the onion, garlic, and carrots, and saute for 5 minutes or until the vegetables are slightly soft. Pour in the chicken stock, increase the heat to high, and bring to a boil. Add the peas, tortellini, and corn and cook for 12 minutes, or according to the package directions for the tortellini.
  • Remove the stockpot from the heat and add the spinach, stirring until it wilts. To serve, spoon the soup into bowls and top with grated Parmesan cheese.

1 1/2 lbs Italian sausages
1 cup chopped onion
1 teaspoon garlic, minced
1/4 teaspoon ground black pepper
4 cups beef broth

1 (16 ounce) can whole tomatoes
1 (15 ounce) can kidney beans, drained and rinsed (can use butter beans)
1 (6 ounce) can pitted sliced ripe olives, drained
2 cups diced zucchini
16 ounces tri-color cheese tortellini, cooked al dente and drained
garnish with grated parmesan cheese
serve with garlic or regular French bread

Steps:

  • Preheat oven to400 degrees.
  • In roasting pan, combine sausage, onion, garlic and pepper. Add olive oil and toss to coat.
  • Roast, uncovered, stirring occasionally, 20-30 minutes until sausage is browned.
