(1) 20 ounce bag cheese tortellini
1 cup pesto
1 and 1/2 cups cherry tomatoes, sliced in half
(1) 12 ounce container marinated mozzarella balls, drained
1/4 cup red onion, diced

Steps:

  • Bring a large pot of salted water to boil. Add tortellini and cook for 1 and 1/2 minutes. Do not over cook!
  • Drain and rinse under cold water until cool.
  • Place tortellini in a large serving bowl. Add in pesto, tomatoes, cheese, and onion. Toss well to coat.
  • Serve at once, or cover and place in the fridge for up to 5 days.

2 cups halved grape tomatoes
6 to 8 ounces diced salami (or ham)
1 cup diced cucumber
1 cup coarsely chopped spinach
1/2 cup sliced red onion
1/2 cup black olives (or more, sliced or halved)
4 to 6 ounces mozzarella cheese (pearls, balls, shreds, or cubes)
1/4 teaspoon black pepper freshly ground or to taste
Dash kosher salt, or to taste
Optional: 2 to 3 tablespoons fresh chopped basil
Optional: 4 to 6 pepperoncini
For the Dressing:
1 1/2 cups Italian salad dressing
3 tablespoons Parmesan cheese
1/2 teaspoon garlic powder
1/4 teaspoon onion powder

Steps:

  • Gather the salad ingredients.
  • Cook the tortellini in salted water following the package directions. Transfer the pasta to a colander and rinse with cold water to stop any carryover cooking.
  • In a large bowl, combine the tortellini, grape tomatoes, salami or ham, cucumber, spinach, red onion, black olives, and mozzarella cheese. If desired, add pepperoncini and basil. Gently fold the ingredients together, then season to taste with salt and pepper. Refrigerate the salad until about an hour before you plan to serve it. Prepare the Dressing and Assemble the Salad

½ cup mayonnaise
½ cup Italian dressing
1 tablespoon grated Parmesan cheese (plus extra for serving)

½ red onion (finely chopped)
½ green bell pepper (finely chopped)
½ orange or red bell pepper (finely chopped)

Steps:

  • Boil and drain your tortellini and set aside.

3 tablespoons fresh rosemary leaves, chopped (I eyeball this and use 3 or 4 sprigs of Rosemary, you can also use dried Rosemary but it won't taste)
1/4 teaspoon salt
1 tablespoon sugar
1/4 teaspoon pepper
1/2 cup olive oil
2 (9 ounce) packages frozen cheese tortellini (can sub with one 20 oz package refrigerated tortellini)
1 pint grape tomatoes, cut in half
1/2 red onion, cut to 1/4-inch dice

Steps:

  • Cook tortellini according to package directions; rinse and drain.
  • While tortellini cooks, cut tomatoes, rosemary, and onion; set aside.
  • Combine balsamic vinegar, salt, sugar, pepper, and olive oil in small bowl; whisk to emulsify.
  • Toss pasta, tomato/rosemary/onion, and vinegar mixture in large bowl.

I get a lot of requests for this pretty and flavorful pasta salad. I like lighter dressing, so if you like more, you may want to increase the oil and vinegar. I haven't gotten any complaints about this though - only compliments! :) I use dry, tri-color tortellini, but you can use refrigerated tortellini or whatever pasta you like. I think fresh herbs and fresh parmesan cheese (not the powdered stuff in the can!) make a big difference in this recipe. I haven't tried it yet, but I think fresh broccoli would also be nice in this. This recipe makes a ton, so it is great for larger gatherings. The number of servings is a guess!

  • When making any pasta salad, I prefer to under cook it by a minute or two so that it is a bit more firm, but this is up to you.
  • Rinse with cold water and drain well.
  • Whisk together vinegar, olive oil, herbs, lemon juice, garlic, cayenne pepper, black pepper, and hot sauce in a medium bowl or large measuring cup.
  • Combine peppers, onion, and olives in a very large bowl.
  • Gently stir in tortellini.
  • Pour dressing over salad and lightly toss to coat pasta and vegetables.
  • Cover and refrigerate overnight or for at least four hours.
  • Just before serving, sprinkle the cheeses on top.

1 19oz. package frozen cheese tortellini, cooked and drained
1 6oz. can of medium size black olives, drained
1 7oz jar of manzanilla, green, olives, drained
1 14oz. bottle of Bernsteins Cheese Fantastico dressing OR any really good Italian Dressing and 1/4 cup of finely grated Parmesan Cheese. Either will work.
1/2 pound hard salami, thinly sliced and cut into bite size pieces OR about 4 slices cut into 1/4 inch thick slices and cubed.
Chopped parsley and grated Parmesan for garnish

Steps:

  • Follow directions on package of tortellini for cooking pasta al dente. Be sure NOT to over cook the pasta.
  • Cook Pasta and drain.
  • Drain both types of olives.
  • Place the tortellini and olives in a large bowl. Add the diced hard salami.
  • Add 3/4 the bottle, of well shaken, Cheese Fantastico dressing.
  • Stir until all ingredients are well combined. All to chill for 2-3 hours or overnight.
