Pancakes for one image

Treat yourself to fluffy American-style pancakes with this simple recipe for one person. Drizzle over maple syrup and serve with berries, if you like

1 large egg
40g plain flour
½ tsp baking powder
45ml milk (dairy, nut or oat based)
1 tsp butter
½ tbsp oil
maple syrup or honey and berries, to serve (optional)

Steps:

  • Separate the egg, putting the white and yolk in seperate bowls. Mix the egg yolk with the flour, baking powder and milk to make a smooth paste.
  • Beat the egg white and a pinch of salt with an electric whisk (or by hand) until fluffy and holding its shape. Gently fold the egg white into the yolk mixture. Be extra careful not to knock any of the air out.
  • Heat the butter and oil in a non-stick frying pan. Dollop a third of the mixture into the pan and cook on each side for 1-2 mins or until golden brown. Repeat with the remaining mixture to make three pancakes. Drizzle over some maple syrup or honey and serve with berries, if you like.

I love pancakes. But making a whole batch isn't always convenient. Sure, I can make them all and freeze them for later, but sometimes, you just don't have time to stand over the stove for that long, when all you want is 2 or 3 pancakes for right now. Well, here's the answer! This recipe makes a total of 3 terrific buttermilk pancakes if you use a 1/3 cup measure.

1/2 cup flour, all purpose
2 teaspoons wheat germ
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1 1/2 teaspoons vegetable oil

Steps:

  • Combine dry ingredients in a mixing bowl.
  • In separate bowl, mix egg, buttermilk, and oil, then add to dry ingredients, stirring only until just blended.
  • Using a 1/3 cup measure, pour batter onto lightly greased griddle or skillet.
  • Turn when bubbles form on top of batter, and continue to cook until second side is golden brown.
  • Serve with warm honey or with butter and maple syrup.

I am Torgo. Whenever The Master returns, he desires these healthy and fluffy pancakes smothered in my blueberry-maple topping (see my other recipes). This recipe makes 2-3 pancakes. Quintuple the dry ingredients and store until you need it. Use a rounded 3/4 cup of mix (more exactly: 3/4 cups + 1.5 Tablespoons) per 3 pancakes. NOTE - The Master also likes the vegan version of this recipe in which you substitute for the egg the following: 1/2 a banana (very ripe) mashed together with 1/4 tsp of baking powder. Mix the mash in with the liquids and make a homogeneous solution before adding to dries.(updated 9/18/09)

3/4 cup whole wheat flour
1 tablespoon sugar
1/2 teaspoon salt
3/4 teaspoon baking powder
1/8 teaspoon baking soda
1 egg
1 tablespoon extra virgin olive oil
1/2 cup soymilk (or milk a la animal)
1 teaspoon vanilla extract

Steps:

  • Mix dry ingredients into a bowl (sift together if you can). Mix wet ingredients in a separate container.
  • Pour wets into drys and fold together until just combined (even if there's still some lumps, don't give it more than approximately 8-10 stirs of the spatula so pancakes remain fluffy). Let sit 7-10 minutes while you preheat your cooking surface to medium-high heat.
  • Cook. Eat.

1 cup macaroni
1 egg
1/3 cup milk
1/4 teaspoon hot sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 teaspoon dry mustard
1/2 teaspoon garlic powder (optional)
1 tablespoon butter
1 cup shredded cheese (cheddar or what you will)
1 tablespoon onion flakes, rehydrated (optional)
1/2 tablespoon wheat germ (optional)

Steps:

  • Cook pasta as usual.
  • Meanwhile, whisk together the egg, milk, hot sauce, salt-n-pepa, and the dry mustard. If using garlic powder, whisk it in, too.
  • Drain pasta, return to pot, return pot to stove. Add butter and (once melted) add the liquid mixture, rehydrated onion flakes and cheese. Stir constantly over low heat until cheese melts. For extra nutrition (and texture), sprinkle some wheat germ on top of your steaming bowl of chow. Eat.

1/2 cup all-purpose flour
2 teaspoons toasted wheat germ
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1/2 cup buttermilk
1-1/2 teaspoons vegetable oil
Butter and maple syrup

Steps:

  • In a bowl, combine flour, wheat germ, baking soda, baking powder and salt. In another bowl, beat egg; add buttermilk an oil. Stir into dry ingredients just until blended. , Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until the second side is golden brown. Serve with butter and syrup.
