PASTA WITH MEAT SAUCE

Number Of Ingredients 11

2 tablespoons oil (I'm using olive oil)
2 pounds ground meat of your choice, such as beef, pork, turkey, chicken, lamb (I'm using beef)
1 onion, diced (I'm using yellow onion)
2 cloves garlic, minced
1/4 cup tomato paste
3/4 cup liquid of your choice, such as beef stock, chicken stock, water or wine (I'm using red wine)
One 28-ounce can tomato product (I'm using crushed tomatoes)
2 tablespoons oregano (if you have it)
Salt and pepper
1 pound dry pasta (I'm using rigatoni)
3 tablespoons grated hard cheese (I'm using Parmesan)

Steps:

  • Heat a large saucepan over medium heat and add the oil. When hot, add the meat and cook, without stirring, until browned, 3 to 5 minutes. Break it up with a wooden spoon, then add the onion and garlic and cook, stirring, until starting to soften, about 2 minutes. Add the tomato paste and cook for 2 to 3 minutes. Add the wine and bring to a simmer. Add the crushed tomatoes and oregano and season with salt and pepper. Simmer until thickened and the flavors come together, about 1 hour.
  • About 20 minutes before the sauce is done, bring a large pot of water to a boil and salt liberally. Drop in the pasta, give it a stir and cook until al dente according to the package instructions. Drain the pasta and add it to the sauce. Remove from the heat, toss in the cheese and serve.

My husband can't eat tomatoes so I came up with this so we could have Italian once in a while! Serve over cooked pasta or use instead of canned tomatoes or sauce in any recipe - just change the spices! I now use this as a base for chili, goulash and pizza too!

2 (15 ounce) cans sliced carrots, drained
1 (15 ounce) can sliced beets, drained
1 tablespoon olive oil
4 cloves garlic, minced
1 onion, chopped
1 bay leaf
2 tablespoons Italian seasoning
¼ cup red wine vinegar

Steps:

  • Place carrots and beets, one can at a time, into a blender and blend until smooth. Heat olive oil in a skillet over medium heat. Cook and stir garlic and onions until onions are translucent. Stir in pureed carrots and beets then add the bay leaf, Italian seasoning, and red wine vinegar. Cover and cook until the sauce begins to boil. Remove lid and reduce heat to low. Simmer for up to 4 hours, or at least 30 minutes.

I'm allergic to tomatoes and I'm always craving spaghetti so I found this recipe and it is really good. My husband likes it better than regular spaghetti sauce. I'm anxious to try it in lasagna. I also add a can of black olives and a can of mushrooms for texture.

5 red peppers, seeded and chopped
1 large sweet onion, chopped
10 garlic cloves, peeled but left whole
2 tablespoons olive oil
1/4 cup water
1 (14 ounce) can chicken broth
1 teaspoon lemon juice
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon cumin
1 teaspoon thyme
salt
pepper

Steps:

  • Preheat oven to 350.
  • Place peppers, onion and garlic cloves into a 9" x 13" pan.
  • Drizzle with olive oil and toss well.
  • Put in oven and roast for about 45 minutes.
  • Pour vegetables, all the black bits and the juices into a saucepan.
  • Add water and seasonings and puree in a food processor.
  • Stir in chicken broth and heat as for regular sauce.

RIGATONI WITH WHITE BOLOGNESE



Rigatoni With White Bolognese image

White Bolognese, a meat sauce made without tomato, is a variation you rarely see in America.

Extra virgin olive oil
1/2 sweet onion, peeled and finely chopped
2 medium carrots, peeled and finely chopped
1 stalk celery, finely chopped
Sea salt
Freshly ground black pepper
1 pound mild Italian pork sausage meat, removed from casings
1 pound ground beef (not lean)
1 1/2 cups dry Italian white wine
1 cube beef bouillon dissolved in 2 cups simmering water
1 1/2 ounces dried porcini mushrooms rehydrated in 3 cups lukewarm water
1/3 cup heavy cream
1 pound rigatoni
3/4 cup freshly grated Parmigiano-Reggiano cheese

Steps:

  • Add enough oil to a large, deep sauté pan to coat the base and place over medium-high heat. When the oil shimmers, add the onion, carrots and celery and sauté until glassy and just tender, about 5 minutes. Season lightly with salt and pepper. Add the sausage and beef to the pan, breaking it into walnut-size pieces, and brown well.
  • Pour in the wine and keep at a rapid simmer until the pan is almost dry. Then pour in 1 1/2 cups beef bouillon and lower the heat to medium. Simmer gently, uncovered, until the bouillon is nearly gone, stirring now and then. Meanwhile, chop the rehydrated porcini into small pieces, reserving the liquid.
  • Bring a large pot of salted water to a boil. Add mushroom liquid to the sauce to cover the meat halfway (about 1 cup) along with the porcini and continue simmering until the sauce is loose but not soupy, about 10 minutes. Taste and adjust salt and pepper; it should be highly seasoned. When the consistency is right, fold the cream in. Remove from the heat and cover.
  • When the pasta water is at a full boil, add the rigatoni and cook until still firm, but not hard, in the center. When the pasta is almost done, scoop out 1 cup of pasta water and reserve. Drain the pasta and then return it to the pot. Pour the pasta sauce on top and fold in with a wooden spoon. The pasta should not be dry. Add a little pasta water or mushroom liquid to loosen it. (It will continue to soak up sauce on the way to the table.) Serve in one large bowl or in individual bowls, passing the cheese at the table.

2 cup(s) carrots, peeled and diced
2 cup(s) beets, peeled and diced

3 slice(s) bacon, chopped
1/4 teaspoon(s) black pepper
3/4 cup(s) dry red wine
1 cup(s) chicken broth, low-fat, low salt
2 sprig(s) bay leaves
1 tablespoon(s) fresh or dried basil, chopped
11/2 teaspoon(s) dried oregano
1/2 teaspoon(s) dried thyme
1 tablespoon(s) apple cider vinegar
1 pound(s) ground beef, pork, or veal if you want a meat sauce

Steps:

  • Melt butter and olice oil in sauce pan over medium heat. Saute the onions and garlic for 3-4 minutes. Add bacon and cook for another 2-3 minutes u til the onions are translucent.
  • Add carrots, beets, and celery and bring to a boil. Reduce heat to medium-low and cook u til vegetables have softened slighty, about 5-6 minutes.
  • Pour in the wine and stock and bring to a boil. Reduce heat to medium-low and simmer for 10 minutes
  • Carefully pour the sauce I to a blender and blend on low for 15 seconds, then increase the speed to high and continue to blend untl you have a smooth sauce.
  • Return the sauce to the pan. Add the bay leaves, basil, oregano, thyme , and vinegar. Bring to a simmer, then crumble the meat with your hands and add it to the sauce. Cook over medium heat for 30 minutes, until the meat is fully cooked.
  • *The thickness of the sauce will depent on what the fat content of the meat is. If it is too thick, add more stock towards the end of the cooking process

BASIC NOMATO SAUCE (TOMATO FREE TOMATO SAUCE)

This recipe comes from the Interstitial Cystitis Network site at www.ic-network.com/bev/april00. We enjoy it just as much in spaghetti and enchiladas as tomato sauce. One batch makes the equivalent of 2 larges cans of tomato sauce (4 cups) so I use half the batch and freeze the other half in a freezer bag for next time. I find that I have to add about 25 percent more spice than I did when I used tomatoes.

1 1/2 lbs 95% lean ground beef
16 ounces tomato sauce
8 ounces crushed tomatoes
1 white onion
3 carrots
4 celery ribs
1 tablespoon extra virgin olive oil (EVOO)
1 teaspoon red pepper flakes
1 tablespoon dried oregano
1 tablespoon basil
1/2 cup fresh parsley
1/2 teaspoon salt

Steps:

  • Crumbled ground beef, and pre-cook in dutch oven (DO NOT brown, just render the fat/water).
  • Drain pre-cooked beef (I do this in a strainer lined with paper towels). Wipe extra grease/water from bottom of pan with a paper towel.
  • Chop onion and celery; finely dice carrot.
  • Sauté onion and EVOO in dutch oven on low heat, until onion is translucent (be careful not to let onion get brown; this makes it bitter, which makes the sauce bitter. If it gets brown, throw it out & start again!).
  • Add carrot, celery, and salt, continuing to sauté until all veggies soften, stirring often.
  • Add beef, tomato, herb/spice. Stir. Cover and raise heat until sauce is simmering.
  • Turn heat down to lowest possible. Continue to simmer, covered, for at least an hour, stirring every 15 minutes.
  • If heat is too high, or pot not well-insulated, water may need to be added.
  • Add chopped parsley when you turn off the heat -- FINISHED!
  • Note: Flat-edged wooden spatulas are best for lifting sugar-laden ingredients (i.e. veggies & tomato sauce) from the bottom of a pot.
  • Alt: If you're not picky about fat, skip the 'pre-cook beef' step, and add beef directly to cooked veggies.

1 pound bulk Italian sausage
1 can (28 ounces) crushed tomatoes, undrained

  • In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker.
