SLOW-ROASTED HEIRLOOM TOMATOES WITH FRESH THYME

Slow-Roasted Heirloom Tomatoes With Fresh Thyme image

Like any other tomato recipe, this dish lives or dies with the perfectly ripened tomato. Commercial growers breed for size, shape and hardiness of shipping, but you should put your emphasis on taste rather than appearance. I'm a willing taker for tomatoes that are not so stunning-looking because I know how good they taste.''

Provided by William Norwich

Categories     project, appetizer, side dish

Time 2h45m

Yield 6 servings

Number Of Ingredients 6

6 medium heirloom perfectly ripened tomatoes, preferably a mix of red, yellow and green
2 cloves garlic, finely chopped
6 sprigs of thyme, leaves removed and finely chopped
Salt and freshly ground pepper
1/2 cup extra-virgin olive oil
1 tablespoon sherry vinegar

Steps:

  • Preheat your oven to 250 degrees. In a large saucepan of boiling water, blanch the tomatoes for 30 seconds. Remove with a slotted spoon or strainer and immediately chill in a bowl of ice water or rinse under cold running water to stop the cooking. The skins will slip right off. Cut the tomatoes in half, crosswise. Gently squeeze each half to remove seeds.
  • Oil a 12-by-8-inch or 14-inch oval baking dish and sprinkle with half of the garlic and thyme. Season liberally with salt and pepper. Now arrange the tomato halves, cut sides up, in the dish and baste with the remaining oil. Season generously with salt and pepper and sprinkle with the remaining garlic, thyme and vinegar.
  • Bake the tomatoes for 2 1/2 to 3 hours. When done, they will be soft and just starting to caramelize but still hold their shape. Spoon the pan juices up over the tomatoes and serve from the baking dish.

  • Homemade Chili or Salsa. If you like spicy food, try adding some dried thyme flakes in place of regular salt when making homemade chili or salsa. You’ll be surprised at how much more flavorful these dishes become!
  • Hummus. If you’re hosting guests but don’t have much time before they arrive, try making a quick batch of hummus with fresh thyme added into the mix—it will taste delicious!
  • Thyme-Roasted Chicken Thighs. For an easy dinner idea, try adding fresh thyme sprigs to your chicken marinade before grilling up some boneless chicken thighs (or breasts).
  • Breads & Pastries. Thyme is an excellent addition to breads and pastries because it pairs well with sweet flavors like honey and maple syrup. Try adding a sprig of freshly chopped thyme to your next loaf of bread or batch of cookies for added flavor without overpowering other ingredients.
  • In a Salad Dressing. If you love salad dressings but want something new and exciting, try adding fresh thyme to your next batch. It’s an incredibly simple way to give your salad a huge boost of flavor without adding too many calories or carbs!
  • Asparagus Pesto Pasta Salad. Asparagus is another vegetable that pairs well with thyme’s woodsy flavor. For an easy weeknight dinner, make a quick pasta salad using asparagus, cherry tomatoes, and basil pesto (or another flavor).
  • Roasted Potatoes with Thyme. Potatoes are one of those foods that go well with almost anything! They taste great plain or with just about any seasoning—and they’re even better when paired with thyme.
  • On Eggs. Fresh thyme goes great with eggs because it adds a little bit of spice without overpowering the dish. You can sprinkle it on top of scrambled eggs or use it in an omelet mixture for breakfast or brunch—the possibilities are endless!
  • In Meat Marinades. Thyme pairs perfectly with meat marinades because it adds just enough moisture without making the meat taste too salty or overpowering other ingredients like garlic and onion powder would do.
  • In a Soup or Stew. Thyme has a very subtle flavor, so it pairs nicely with many other ingredients. If you’re making a soup or stew, consider adding thyme to the mix—you won’t regret it!
