This is the BEST thing My Mother in law makes and I can't wait for the okra to grow in the summer so I can pair garden fresh okra with garden sweet tomatoes! Yum! A Texas 1015 onion is best here but any sweet onion will do. If you can't get your hands on a sweet onion, try adding just a pinch- LARGE pinch of granulated sugar to the dish. I love to douse this with black pepper but please salt and pepper to taste. Cooked this way you will not have the SLIME issue! Enjoy!

1 1/2 cups sweet onions, chopped
2 1/2 cups okra, sliced
3 medium tomatoes, chopped or 14 ounces diced tomatoes
salt & freshly ground black pepper
hot sauce (optional)

Steps:

  • Place all ingredients in a dutch oven and cook over over medium heat until onion and okra is just crisp tender or done to your liking. (Note: USE the juice from the tomatoes as well.).
  • Taste and add salt and pepper as desired.
  • NOTE: Do not salt before the okra and onion are done to your liking. The salt seems to add to the slime. Also, stir only as much as you need The more you stir the slimier it can get.
  • Serve with Hot Sauce if desired.
  • OAMC NOTE: This freezes well in any quantity desired. Simply reheat when needed.

1lb Okra
3-4 medium Tomatoes
1 medium Onion
¼ teaspoon Salt
¼ teaspoon Black Pepper
¼ teaspoon Sugar
1 Tablespoon Bacon Grease, optional
Oil for frying.

Steps:

  • Wash the tomatoes and okra under cool running water.
  • Dice the onions.
  • Place a skillet over Medium heat on your stove top.
  • Add just enough oil to lightly coat the pan.
  • Add bacon grease for seasoning if desired.
  • When pan is hot, add the onions. Stir to coat with oil.
  • Let the onions cook for several minutes while you prepare the tomatoes.
  • Dice the tomatoes into larger sized pieces.
  • Add the tomatoes to the skillet.
  • Remove the ends from the okra and discard the pieces.
  • Slice the okra pods into about ½ inch slices.
  • Add the okra to the skillet.
  • Add the black pepper, the salt and the sugar. Stir to combine.
  • Reduce the heat slightly, and continue to stir and cook uncovered.
  • Add a little warm water if needed to keep the vegetables moist.
  • Cook until the okra is as tender as desired.
  • Serve warm.
  • Enjoy!

1 pound fresh okra
1/4 cup bacon drippings
1 onion, chopped
1 green bell pepper, chopped
1 28-ounce can whole tomatoes
1 teaspoon sugar
1 teaspoon table salt
1/2 teaspoon ground black pepper
1 lemon, cut in wedges
1 tablespoon all-purpose flour
1 tablespoon water

Steps:

  • Cook the okra in boiling water to cover in a saucepan 10 minutes or until tender; drain, cool completely (about 30 minutes).
  • Cut the okra into ¼-inch-thick slices, discarding the stems.
  • Heat the bacon drippings in a saucepan over medium-high; add the onion and bell pepper, and sauté 6 minutes or until tender. Add the tomatoes, sugar, salt, pepper, lemon, and okra. Reduce heat to medium; cover and simmer 10 minutes.
  • Stir together the flour and 1 tablespoon water until smooth; add the okra mixture. Cook, stirring constantly, 2 or 3 minutes or until thickened.

1 small onion, chopped
½ green bell pepper, chopped
2 celery, chopped
1 (14.5 ounce) can stewed tomatoes

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble, and set aside.

1 pound okra, rinsed and trimmed
3 tablespoons olive oil
1 1/2 cups finely chopped red onion
1 1/2 teaspoons kosher salt
1 tablespoon minced garlic
2 cups peeled and chopped tomato
1 tablespoon minced fresh ginger
1 teaspoon freshly ground grains of paradise* or black pepper
1/2 teaspoon freshly ground cardamom

Steps:

  • Cut each okra pod in half lengthwise and set aside. If there are any pods longer than 4 inches, cut them in half crosswise and then lengthwise.
  • Heat the olive oil in a 4-quart saucepan over medium heat until shimmering. Add the onions along with the salt and cook until they begin to turn golden, approximately 4 minutes. Add the garlic and cook for 1 minute longer. Add the tomatoes and bring the mixture to a boil. Decrease the heat to low and add the ginger, pepper, cardamom and okra. Stir to combine. Cook, uncovered for 20 minutes. Remove from the heat, taste and adjust the seasoning as desired. Serve immediately.
  • *Cook's Note: Grains of Paradise are available online and in specialty spice markets. They have a zesty flavor reminiscent of pepper, coriander, and cardamom.

I love okra !! yummy. This Recipe has come from watching my aunt as I was a little girl making this delicious concoction, the smell of this cooking oh my!! This recipe comes from south Louisiana, If you have some okra lovers, I suggest doubling this recipe. Also this recipe can be used with squash instead of okra, it is just as delicious as the okra!!! Just don't use the tomatoes with the squash, not unless you would like it that way, but do try the squash once without the tomatoes.
