8 campari or other cocktail tomatoes, quartered
1 pint yellow and/or orange cherry tomatoes, halved
1 teaspoon aged balsamic vinegar, plus more for drizzling
Kosher salt and freshly ground black pepper
5 ounces baby arugula (about 8 cups)
1 teaspoon extra-virgin olive oil, plus more for drizzling
Shaved parmesan cheese, for topping

Steps:

  • Toss the tomatoes with the balsamic vinegar, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Set aside until juicy, about 5 minutes. Toss the arugula with the olive oil, a pinch of salt and a few grinds of pepper in a large bowl.
  • Spread the arugula on a platter. Spoon the tomatoes and their juices on top, then drizzle with more olive oil and vinegar. Top with parmesan.

4 ounces fresh mozzarella balls, sliced
3 baby yellow bell peppers, sliced
12 large arugula leaves, coarsely chopped
sea salt
fresh fresh coarse ground black pepper
1 teaspoon balsamic vinegar
2 tablespoons extra virgin olive oil
1/4 teaspoon dried basil

Steps:

  • Whisk balsamic vinegar, olive oil and dried basil together in small bowl.
  • Arrange alternating slices of tomato, cheese and bell pepper slices on platter.
  • Scatter chopped arugula over tomatoes.
  • Drizzle olive oil mixture over salad and season with salt and pepper.

3 cups fresh baby greens
3 tomatoes, sliced
2 tablespoons fresh basil, chpped

1/4 teaspoon salt (or to taste)
fresh ground pepper

Steps:

  • Mix Vinegar, mustard, salt and pepper together.
  • Add oil and whisk until well blended.
  • Spread greens on plate or in bowl.
  • Cover with tomato slices.
  • Arrange Cheese slices on top of tomatoes.
  • Drizzle dressing over salad.
  • Sprinkle with fresh basil.

Roasted Tomato, Arugula and Mozzarella Salad image

4 plum tomatoes, cut in 1/2 and seeded
3 tablespoons olive oil
Kosher salt and freshly ground black pepper
One 5-ounce box baby arugula
One 8-ounce package baby mozzarella balls, drained
1/4 cup chiffonade basil leaves
Balsamic vinegar

Steps:

  • Preheat the oven to 450 degrees F.
  • Add the tomatoes to a shallow 2-quart casserole dish in a single layer.
  • Toss the tomatoes with the oil, and salt and pepper, to taste. Make sure the tomatoes are cut side up after tossing. Roast until the tomatoes are extremely tender, about 35 to 40 minutes. Remove them from the oven and keep warm.
  • In a large salad bowl, toss the arugula, mozzarella balls, basil and the warm tomatoes along with any juices from the dish. Drizzle with some good balsamic and season with salt and pepper, to taste.

3 ounces baby arugula, about 4 cups
1 container Ciliegine mozzarella balls
1 handful fresh basil leaves, sliced
Extra-virgin olive oil
Aged balsamic vinegar
Kosher salt and freshly ground black pepper

Steps:

  • Place the arugula in a large salad bowl and drizzle with a teaspoon of olive oil. Season the arugula with fresh ground pepper and a sprinkle of salt.
  • Toss the tomatoes and mozzarella in a medium bowl with 1 teaspoon of balsamic vinegar and season with a sprinkle of salt and fresh ground pepper.
  • Spoon the tomatoes over the arugula and drizzle with more olive oil and balsamic vinegar as needed.

1 teaspoon sugar

12 ounces fresh arugula, washed and dried
2 ounces shaved Parmesan

Steps:

  • In a small stainless steel or glass bowl, whisk together the vinegar, mustard, sugar, salt, pepper, and garlic until the sugar and salt are dissolved. While continuing to whisk, add the olive oil in a thin, steady stream until emulsified. Taste and adjust the seasoning, if necessary.
